      • 대학생의 인식도 분석을 통한 가정학의 발전 방향 연구

        The purposes of this study are to find out the current problems of Home Economics and to suggest the alternatives so as to solve these problems for the future development of it. In order to achieve these purposes, review of literatures and survey about college students' recognitions of Home Economics are carried out. The data were obtained through 160 major and 115 nonmajor students and analyzed by frequency, mean, and ANOVA. The results show that college students positively recognize the value of Home Economics, but have negative recognition about the status of it. Especially nonmajor male students have conventional thoughts and more major students want to change the name of Home Economics. It is also showed that the most important impediment factors of Home Economics are recognition fallacies, and the most urgent tasks are establishment of accreditation or professions. Therefore Home Economists must endeavor to improve the scientific status through social services, development of certification system, professionalization, theory construction, and approaches to problems of changing families.

      • 감자의 수침조건에 따른 전분의 이화학적 특성

        Physicochemical properties of potato starches which were prepared by steeping at 10 ±1℃ and 25 ±1℃ for 11days were investigated. The pH of steeped water were increased during steeping. Shapes of all starch granules were round and polygonal, but size was decreased and some part of starch granule had porous surface by steeping. X-ray diffraction pattern was all B-type. Relative crystallinity was increased until 9 days at 10, 7 days at 25℃ of steeping and decreased thereafter. Protein, lipid and phosphorus in starch were decreased, but ash was increased by increasing steeping time. Amylose content and density were decreased, but water binding capacity was increased by steeping. Swelling power and solubility were decreased with increasing steeping. The intrinsic viscosity of potato starch was decreased by steeping.

        Amylase is an enzyme that catalyzes the starch hydrolysis. A lot of amylases have been purified and/or cloned from plants, animals, and microorganisms. In this review, classification and distribution of amylases have been described. Three dimensional structure of amylase is shown by illustrating α-amylase of Bacillus licheniformis. Three amylase isozymes from an alkalophilic Pseudomonas are described about their cloning, primary structure, and biochemical characteristics.

      • 취업주부의 시간갈등과 해소방안

        This study aims 1) to figure out the level of time conflict being experienced by employed wives. ;2) to find out factors influencing the time conflict.;3) to suggest the devices by which time conflict be solved. The results are as follows :1) the employed wives(75%) are mostly experienced time conflict. The wives' perceptions of time conflict are significantly different in the psychological involvement, flextime, and employed time. Their time conflict is increased in the case of unflexible work time, the employment by economic needs, wives attitudes involved in the family, and more time for employed work. Finally, Discussions were suggested to solve time conflict; 1) Lessen housework time and make various life content. 2) Divide housework and lower housework standard. 3) Put time management strategies to practical use.4) Apply flexible work time and expand a day nursery or public leisure facilities in the case of the children are infant and the inferior jobs.

      • 김치 및 유산균 음료 중 비피더스균의 신속한 정량

        Phosphoketolase assay was used for the quantification of bifidobacteria in kimchi or fermented milk. The viable bifidobacterial change during fermentation in kimchi with of Bifidobacterium longum was measured by phosphoketolase assay and plate count method. Phosphoketolase activity was influenced by treatment of sonication or Triton X-100 to the microorganims to disrupt the cells. The result of phosphoketolase assay was similar to that of plate count method and showed different enzyme activities among different strains. This assay method took about one hour for the quantification of Bifidobacterium longum in food.

        The purposes of the research were to analyse the activists' appraisals and demands about undertakings of nongovernmental organizations especially in Gwangju and to propose the developmental alternatives. The levels of citizens' recognition about NGO are low, but their contribution appraisals are relatively high. Activists want more concerns and participations of citizens. Also they need systematic training and educations for competency enrichment. The organizations' mechanisms must be changed to more effective systems and support community sufficiently for welfare empowerment. Also community members, organizations and activists endeavor collaborately for welfare development.

      • 열처리 및 트립신 첨가로 야기된 유청 단백질의 전기영동적 변화

        In order to study the reaction behavior of the mixtures of bovine (β-Lg) with holo-α-lactalbumin (α-La) and apo-α-locatalbumin during heat treatment, samples were heated at 85℃ for 10 min, added trypsin and trypsin inhibitor, and then they were analyzed using sodium dodecylsulfate-polyacrylamide gel electrophoresis. In the other trial, the β-Lg was pre-heated at 85℃ for 10 min, mixed with α-La, heated at 85℃ for 10 min, and treated the same as above described. The electrophoretic pattern showed that the intensity of loss of β-Lg was higher than the a α-La with increasing reaction time. Loss rate of apo-α-La-β-Lg mixture was higher than that of holo-α-La-β-Lg mixture. When the mixture was heated and added trypsin, appeared some bands of about 26.3 kDa, and 14.0 kDa which is smaller than the α-La(14.2 kDa). When the β-Lg was pre-heated 85℃ for 10min, mixed with α-La, and treated the same as other samples, appeared some bands of about 26.3 kDa, 21.5 kDa, and 14.0 kDa which is smaller than that of the α-La. The loss rate of the apo-α-La-β-Lg mixture was higher than that of holo-α-La-β-La mixture. It is assumed that the β-La was already denatured by pre-heating and influenced little on the apo-α-La, and there for the apo-α-La-β-La mixture was more easily attacked by the enzyme.

      • 광주시 중학생의 TV 시청과 성적 내용물의 인식과 반응

        This study was to investigate the cognition and response to the middle school students who was being grown up and being matured psychologically when they watch sexual stuff of TV. The study also analyzed the differences of these variables. The participants were 477 girls and boys who are the second and the third grade in the middle school students in Gwang-ju. They were asked to complete a questionnaire which was composed of each questions the general specifics, the general trend of watching TV and the reaction when they watch sexualities on TV. The data were analyzed with frequency, percentage, mean, StD and Chi-square using SAS program. The findings of this study were as follows. In general they watched TV for about 2∼3 hours during the weekdays and 4∼5 hours during the weekends. They spent most of their free time watching TV. They liked to watch Korean popular song programs, show programs, comedies and animation in order. They wanted to watch them only for fun. Their parents' attitude about watching TV showed significant difference according scholarly attainment. The students only wanted to imitate the entertainer's appearance. Most female students answered that they are getting learn sex education through TV. While most male students answered that they are getting to recognize what they don't know. Many students thought sexual TV programs to be interested and useful but sometimes harmful. They felt sexual impulse after watching the TV program's sexual stuff especially for male students. It was evident that sexual scene on TV greatly effects on young student. Middle school students spent time watching TV while they didn't talk with their parents very much. Some students didn't have a good relationship with their family. They didn't feel well, so they were not stable in mind.

      • 광주지역 국교 3학년의 체격 및 식습관에 관한 조사 연구

        The purpose of this study was to determine physical characteristics and food habit of pri-mary school student in Kwangju. The study was carried out 256 3th grade student (boys : 134 and girls : 122) in June and July of 1995. There were no significant differences in the heights, weights, physical circumferences mearsurements between boys and girls, but for the skinfold thickness mearsurements, the difference was significant. Also, the meal volume, meal speed, palatate, sour taste were significantly different between them. With regard to frequency of skipping breakfast, 20.9% of the subject has been "1-2 per week" and 16.5% of them has been skipping every morning. The study also was found that 67.6% of the subjects has been on irregular meal time and 77.4% of them on unbalanced diet. With regard to taste preference, 48.2% of the subjects liked hot taste and 73.7% of them liked sweet taste. These results suggest that student are in need correcting their food habits. This reasserts the importance of nutrition education to children through teachers, parents and dietitians. The findings of this study should be applied to nutrition education to ensure better physical fitness of children.

      • 시선을 끄는 여성의 의복에 대한 남성들의 성적자극 인지도와 수용도

        The purpose of this study was to investigate the attitudes of males on females' sensuous clothing including (1) the awareness of sexual allusion, (2) the degree of agreement on wearing, (3) the inferred reason of wearing (4) the appraisal of situational appropriateness of females' sensuous clothing. In addition, the effects that males considered important to females' clothing selection were also examined. The questionnaire was distributed to 350 males in Kwangju. Data from 279 respondents were analyzed using Frequency, Percentage, χ²-test, Anova, and Duncan test. The results were as follows: 1) The awareness of sexual allusion on females' sensuous clothing was fairy high, and there was partially significant difference as to age, academic background, and occupation at more than the level of P<.05. 2) The degree of agreement of males on females' wearing sensuous clothing was low, especilly when the female were their wives or sweethearts, and there was significant difference according to age, academic background, and occupation at more than the level of P<.05. 3) The reasons of females' wearing the sensuous clothing that males inferred were found to be as displaying the sexual attractiveness to opposite sex, drawing the attention of others, and displaying of figure attractiveness, in oders. 4) The appropriateness of the sensuous clothing to the situations were highly limited excluding shopping situation, meeting with female or male friend, or date situation. 5) The effects that males considered important on females clothing selection were found as aesthetic sensibility, cultivation, modesty, social norm, expression of mood, and sexual attractiveness in order.
