In this study, angiotensin-I-converting enzyme inhibitory (ACEI) activity was evaluated in fermented goat milk fermented by lactic acid bacteria (LAB) from fermented foods and breast milk. Furthermore, the potential for ACEI peptides was identified in fermented goat milk with the highest ACEI activity. The proteolytic specificity of LAB was also evaluated. The 2% isolate was inoculated into reconstituted goat milk (11%, w/v), then incubated at 37℃ until pH 4.6 was reached. The supernatant produced by centrifugation was analyzed for ACEI activity and total peptide. Viable cell counts of LAB and titratable acidity were also evaluated after fermentation. Peptide identification was carried out using nano liquid chromatography mass spectrometry (LC-MS/MS), and potential as an ACEI peptide was carried out based on a literature review. The result revealed that ACEI activity was produced in all samples (20.44%–60.33%). Fermented goat milk of Lc. lactis ssp. lactis BD17 produced the highest ACEI activity (60.33%; IC50 0.297±0.10 mg/mL) after 48 h incubation, viable cell counts >8 Log CFU/mL, and peptide content of 4.037±0.27/mL. A total of 261 peptides were released, predominantly derived from casein (93%). The proteolytic specificity of Lc. lactis ssp. lactis BD17 through cleavage on the amino acid tyrosine, leucine, glutamic acid, and proline. A total of 21 peptides were identified as ACEI peptides. This study showed that one of the isolates from fermented food, namely Lc. lactis ssp. lactis BD17, has the potential as a starter culture for the production of fermented goat milk which has functional properties as a source of antihypertensive peptides.

GC–MS metabolomics was used to discriminatethe phytochemicals profile of Indonesian white, red, andblack rice brans, and Japanese white rice brans. Thistechnique was used for the first time to identify compoundsin rice brans having cytotoxic activity against WiDr coloncancer cells. Orthogonal Projection to the Latent Structure(OPLS) analysis showed that protocatechuic acid (PA) wasa discriminating factor found in black rice brans whichstrongly correlated with its cytotoxicity (IC508.53 ± 0.26 lM). Real time-PCR data demonstrated thatPA cytotoxicity at different concentrations (1, 5, 10, 25 and50 lg/mL) was mediated through different pathways. Bcl-2 expression was downregulated at all tested concentrationsindicating apoptosis stimulation. At 1–10 ppm concentration,PA activated both intrinsic and extrinsicapoptosis pathways since the expression of p53, Bax,caspase-8, and caspase-9 were upregulated. At a higherdose (25 and 50 lg/mL), PA possibly involved in pyroptosis-mediated pro-inflammatory cell death by upregulatingthe expression of caspase-1 and caspase-7.

The harvesting season of lompa fish, Thryssa baelama, through sasi, indigenous knowledge in resources management, in Haruku Village has become a socio-cultural event that attracts many people. The sasi of lompa fish has been conducted for hundreds of years. Information on the bioecology aspect of lompa fish is limited, while this information is crucial for lompa fish sustainability through the sasi approach. This study aimed to investigate some population parameters of lompa fish, its sustainability status, and proposed a sustainable management strategy for the lompa fishery of Haruku Village. Fish population parameter covers length-weight relationship, growth pattern, size distribution, sex ratio, and the body condition index. The sustainability status was assessed following the Rapfish approach. Fisheries management strategy was performed using a conceptual model framework based on Driver Pressure State Impact Response. The research shows that the total length varies between 9.2–14.3 cm. A high relationship was found between total length and weight, and the growth pattern was an allometric negative. There was a difference in sex ratio between males and females, with females dominant. The body condition index varies over time, probably due to reproductive status. The overall sustainability status was at fair condition (61.60%), with the ecological domain having the highest sustainable status (71.07%) and considered sustain. In comparison, the technological domain had the lowest sustainability status (52.58%) and was considered fair sustain. There were seven management strategies proposed for sustainable management for the lompa fishery.

Study on the Development and Functional Characteristics of Salted Egg with Liquid Smoke

In this study, the duck eggs were salted with none or 2.5% and 5.0% (v/v) of liquid smoke (LS), respectively. As a control, samples salted without LS were used. The 2-thiobarbituric acid (TBA) values, 1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging ability, and reducing power of the three groups were tested at 0, 7, 14, and 21 and 28 days to determine the effects of LS on the antioxidant activity of treated eggs. In addition, gas chromatography-mass spectrometry (GC-MS) and electronic nose (E-Nose) were used to analyze the volatile flavor components of fresh duck eggs, LS, control, and salted duck eggs enriched with 2.5% (v/v) LS after 28 days of salting. The TBA value considerably increased with an increase in salting period, and the treated egg’s TBA value significantly associated with LS concentration. The TBA value decreased as the LS concentration increased. The amount of LS present was highly associated with their capacity to scavenge DPPH radicals. The reducing power of the samples was substantially correlated with the LS concentration, and the reducing power increased with increasing LS concentration. The GC-MS data revealed that phenols and ketones were the predominant chemicals present in the LS, and they were also found in the eggs added to the LS even though they were absent in the fresh eggs and control. The flavor of the control group and treated eggs with LS differed significantly, according to the principal component analysis and radar map of the E-nose. The texture study results revealed that the LS significantly impacted the hardness, cohesiveness, and chewiness of eggs.

The relevance of the topic is determined by the existence of inconsistencies between economic and environmental aspects of innovative development of urban logistics infrastructure, as well as the conflict of public, state and private commercial interests in this issue. The purpose of the article is to determine the principles and effective tools for innovative development of urban logistics infrastructure, taking into account pandemic constraints. The influence of the environmental aspect on the dynamics of transport flows was analyzed in detail and characterized, the scheme of determining the optimal solution for the development of the city was proposed considering the compromise between economic and ecological interests of society, state and business entities. A scheme of innovative development of urban logistics infrastructure under pandemic constraints was also developed. Materials of the article are relevant for developers of city plans, managers of urban logistics infrastructure, employees of enterprises participating in transport and logistics markets, scientists, and doctoral students.

Plant sterols in their free forms are known to inhibit colon cancer. Whether these activities persist when compounds are incorporated into processed food is not reported yet. This study aimed to test the ability of plant sterol esters (PSE) incorporated into a nonpuffed extruded food (NPE) model to inhibit colon carcinogenesis. PSE was added into NPE at four concentrations (0.0%, 0.7%, 1.4%, and 2.1%). PSE-NPE activity was tested in azoxymethane/dextran sodium sulfate-induced Balb/c mice. The groups given PSE-NPE did not show any colon tumor formation. Immunohistochemistry results revealed that the group fed with 1.4% PSE had the lowest histoscore for cyclooxygenase-2 expression and the highest histoscore for cleaved caspase-3, cleaved caspase-8, and cleaved caspase-9expressions. The results of this study indicated that even after incorporation into a food system, which is processed using high pressure and temperature, PSE retained its chemopreventive activity. The proposed mechanisms are by suppressing inflammation and inducing apoptosis.

<P>Mononuclear nonheme manganese(IV)-oxo complexes binding calcium ion and other redox-inactive metal ions, [(dpaq)Mn<SUP>IV</SUP>(O)]<SUP>+</SUP>-M<SUP><I>n</I>+</SUP> (<B>1</B>-M<SUP>n+</SUP>, M<SUP><I>n</I>+</SUP> = Ca<SUP>2+</SUP>, Mg<SUP>2+</SUP>, Zn<SUP>2+</SUP>, Lu<SUP>3+</SUP>, Y<SUP>3+</SUP>, Al<SUP>3+</SUP>, and Sc<SUP>3+</SUP>) (dpaq = 2-[bis(pyridin-2-ylmethyl)]amino-<I>N</I>-quinolin-8-yl-acetamidate), were synthesized by reacting a hydroxomanganese(III) complex, [(dpaq)Mn<SUP>III</SUP>(OH)]<SUP>+</SUP>, with iodosylbenzene (PhIO) in the presence of redox-inactive metal ions (M<SUP><I>n</I>+</SUP>). The Mn(IV)-oxo complexes were characterized using various spectroscopic techniques. In reactivity studies, we observed contrasting effects of M<SUP><I>n</I>+</SUP> on the reactivity of <B>1</B>-M<SUP><I>n</I>+</SUP> in redox reactions such as electron-transfer (ET), oxygen atom transfer (OAT), and hydrogen atom transfer (HAT) reactions. In the OAT and ET reactions, the reactivity order of <B>1</B>-M<SUP><I>n</I>+</SUP>, such as <B>1</B>-Sc<SUP>3+</SUP> ≈ <B>1</B>-Al<SUP>3+</SUP> > <B>1</B>-Y<SUP>3+</SUP> > <B>1</B>-Lu<SUP>3+</SUP> > <B>1</B>-Zn<SUP>2+</SUP> > <B>1</B>-Mg<SUP>2+</SUP> > <B>1</B>-Ca<SUP>2+</SUP>, follows the Lewis acidity of M<SUP><I>n</I>+</SUP> bound to the Mn-O moiety; that is, the stronger the Lewis acidity of M<SUP><I>n</I>+</SUP>, the higher the reactivity of <B>1</B>-M<SUP><I>n</I>+</SUP> becomes. In sharp contrast, the reactivity of <B>1</B>-M<SUP><I>n</I>+</SUP> in the HAT reaction was reversed, giving the reactivity order <B>1</B>-Ca<SUP>2+</SUP> > <B>1</B>-Mg<SUP>2+</SUP> > <B>1</B>-Zn<SUP>2+</SUP> > <B>1</B>-Lu<SUP>3+</SUP>> <B>1</B>-Y<SUP>3+</SUP>> <B>1</B>-Al<SUP>3+</SUP> ≈ <B>1</B>-Sc<SUP>3+</SUP>; that is, the higher is Lewis acidity of M<SUP><I>n</I>+</SUP>, the lower the reactivity of <B>1</B>-M<SUP><I>n</I>+</SUP> in the HAT reaction. The latter result implies that the Lewis acidity of M<SUP><I>n</I>+</SUP> bound to the Mn-O moiety can modulate the basicity of the metal-oxo moiety, thus influencing the HAT reactivity of <B>1</B>-M<SUP><I>n</I>+</SUP>; cytochrome P450 utilizes the axial thiolate ligand to increase the basicity of the iron-oxo moiety, which enhances the reactivity of compound I in C-H bond activation reactions.</P> [FIG OMISSION]</BR>
