        상백피 첨가에 따른 숙육의 연화와 관능적 특성

        상백피 첨가에 다른 숙육의 연화와 관능적 특성을 알아보기 위하여 숙육의 전단력, 조리손실, pH, 단백질함량, 관능적 검사 등을 분석하였다. 전단력은 상백피 첨가량이 증가함에 따라 감소하여 숙육의 연화도가 증가하는 것으로 나타났다. 즉 상백피를 첨가하지 않은 군과 비교해 볼 때 2.5%, 상백피 첨가시는 8.8%, 5,0% 첨가시는 25%, 7.5% 첨가시는 47%, 10% 첨가시는 58%로 각각 숙육의 연화도는 증가하였다. 숙육의 조리손실은 상백피를 0, 2.5, 5.0, 7.5, 10% 첨가함에 따라 44.5, 45.3, 45.8, 47.5, 50%로 증가하였다. 숙육의 pH는 상백피의 첨가하는 양이 증가할수록 5.60∼5.46의 범위로 다소 낮아졌다. 숙육의 단백질함량은 상백피를 첨가하는 양이 증가할수록 감소하였고 육수의 단백질함량은 증가하였다. 숙육의 관능검사 결과에서는 전반적으로 상백피를 첨가하지 않은 군보다 상백피를 첨가한 군에서 모두 높은 기호도를 보였으며 시료간에 유의적인 차이를 나타냈다. 특히 연화도에서는 10% 상백피 첨가시 유의적으로 가장 높게 나타났으며 색도, 향미, 다즙성, 전체적인 기호도에서는 5% 상백피 첨가군에서 유의적으로 높게 평가되었다. 따라서 이와 같은 결과를 종합해 볼 때 숙육제조시 상백피를 5% 수준으로 첨가하는 것이 전체적인 기호면에서 바람직하다고 생각한다. Tenderization of beef by the addition of barks(Morus alba Linne) and its sensory properties were observed by shearing test, cooking loss, pH, protein content and sensory evaluation. Shear force was decreased as the addition level of barks(Morus alba Linne) increased. Tenderization effect of beef was increased 8.8% at the addition level of 2.5%, 25% at 5.0%, 47% at 7.5%, 58% at 10% barks(Morus alba Linne). Cooking loss was observed 44.50% at the no addition, 45.3% at 2.5%, 45.8% at 5.0%, 47.5% at 7.5%, 50.0% at 10% addition level of barks(Morus alba Linne). As the addition level of barks(Morus alba Linne) increased pH of cooked beef decreased to the range of 5.6 to 5.46. As the addition level of barks (Morus alba Linne) increased protein content of beef decreased whereas protein content of cooked liquor increased. The addition of barks(Morus alba Linne) improved the sensory quality of cooked beef. Especially, tenderness scored the highest value in 10% added beef and other quality factors color, flavor, juiciness and overall quality were evaluated significantly high in 5% added beef. Therefore 5% addition level of barks(Morus alba Linne) for cooking beef was suggested as the desirable level of addition.

      • R&D 프로젝트 수행에 대한 기술커뮤니케이션 패턴의 효과분석

        본 연구는 기술커뮤니케이션을 연구원 개인 활동의 시각으로만 보아온 종래의 관점과 달리, 기술커뮤니케이션의 패턴을 연구원들의 집단적 활동과 개별적 활동의 두 기본 형태로 보고 각 형태의 활용도와 효용도에 작용하는 요인과 함께 성과와의 관련성을 분석하려는 것을 목적으로 한다. 이를 위해 연구가설을 설정한 후, 국내 전자산업에 속한 18개 대기업 연구소를 대상으로 설문조사를 실시하고, 다변량 분석기법을 사용하여 수집된 자료를 분석 한다. 그 결과, 집단적 커뮤니케이션과 개별적 커뮤니케이션으로 구성된 기술커뮤니케이션 패턴의 상세하고 유효한 구조가 본 연구에서 밝혀져, R&D관리에 있어서 제원리를 한충 정치화 할 수 있게 되었다. Most studies have basically dealt with technical communication from the viewpoint of individual activities of scientists and engineers. Considering the common practice of collective communication and its actual importance in solving technical problems in the private laboratories, this paper aims to try to investigate the structures of two proposed technical communication patterns(TCP), individual and collective, and its effects on the performance of R&D projects. For the purpose, a research framework is developed and some hypotheses relating to TCP are drawn. The data were gathered through questionnaires from laboratories of 18 large electric and electronic companies. Regression model and factor analysis are employed as principal tools for analysis. The results show that collective communication is more likely to be effective in some cases than individual communication in solving technical problems facing in the middle of on-going R&D projects. This implies the R&D management have to pay more attention than before to the dimension of collectiveness in technical communication.

      • 사람의 혈관 내피세포에 대한 Rickettsia typhi의 감염

        R. typhi, the etiologic agent of murine typhus, has known to cause fever, headache, maculopapular rash and vasculitis of small blood vessel. The skin rash and vasculitis are thought to be the results of endothelial cell injury from the infection with R. typhi in vivo. R. typhi showed ability to cause cellular injury of cultured human endothelial cells. The endothelial cells used in this experiment wee obtained by collagenase treatment of human umbilical cord veins. These cells were conformed to be endothelial cell by the presence of von Willebrand factor through the immunofluorescent antibody technique and Weibel-Palade bodies under the electron microscopy. Ultrastructural study revealed that there were no evidences of entry and/or escape from endothelial cells of R. typhi in 24 hours through 48 hours after infection. On the contrary, numerous particles implicating R. typhi were observed in large vacuole within endothelial cells at 48 hours after inoculations. Estimating the severe injury of endothelial cells by infection of R. typhi, the endothelial cells seems to be the primary target cells in human disease caused by R. typhi infection.

      • 밝은社會를 指向하는 指導者 Leadership에 關한 硏究 : 새마을 指導者를 중심으로 With Reference to the Saemaeul Leadership

        The Saemaeul Undong was launched in 1972 on the basis of the experimental model or Saemaeul pilot projects of the previous year. The Saemaeul Undong is now a nation-wide movement which is based on the fundamental spirits of diligence, self-help and cooperation. Much of the success of the Saemaeul Undong depends on its leaders, who play a pivot role in implementing Saemaeul projects for their community. Popularly elected by the village assembly according to their leadership and faith, the leaders render their services without remuneration, working in the spirit of self-sacrifice. Now, the Saemacul Undong enters upon its tenth year in 1981. If the movement is to continue with renewed momentum, effective training projects for Saemaeul leaders must be worked out. For this purpose, it is then recommended that the research works on the leadership training projects of the Bright Society Movement be referred to. Initially started as a community movement for better life on the campus of Kyung Hee University in 1960's, the Bright Society Movement is now gaining widespread support from national as well as international club members. The goals of the Bright Society Movement are to promote mutual understanding and friendship among members and to construct on earth a truly sound and civilized welfare society that is spiritually beautiful, materially affluent, and humanely rewarding. The main objectives of this study is to propose effective training projects for Saemeaul leaders as well as the Bright Society leaders. 1) Educational courses of leadership training should be offered through the school as well as through the training institution of the community. 2) Educational contents of leadership training should place greater emphasis not only on the spiritual education but also on the technical and practical education related to the welfare of the Community. 3) Public relations education should be strengthened because leaders must work in close cooperation with the community residents for the effective movement. 4) Long-term integrated projects for the community or village unit should be established and the movement should be developed according to them. 5) A special system of regional itinerant education should be established for the effective management of selective leaders. 6) For the welfare of leaders themselves, special favors such as the authorization of leadership careers, scholarships for their sons and daughters, discounts on public charges and the priority on public employment must be offer according to their respective performance.

        高砂百合의 鱗片繁殖에 있어서 IAA, NAA, GA處理의 影響

        This study was carried out in order to observe the reproduction of the scale in phillippinense var. formosanum, treated with NAA, IAA, GA group on each developmental stage of the scale. The results obtained were as follows; 1) It was accelerated the ratio of new bulb formation in NAA treatment group on the scale, and inhibited it in GA treatment group. But it was not definited that treated with IAA treatment group. 2) It represented the high rate of juvenile bud in NAA treatment group on the scale and initial cells, and remarkably accelerated the developmental stage of new bulb which proceeding in some degree with GA treatment group. 3) It represented the high rate of leaf number in NAA treatment group and inhibited it treated after the developmental stage which proceeding in some degree. It accelerated the increase of leaf number that treated with GA treatment group, but remarkably inhibited in IAA treatment group. 4) It represented the high rate of flower bud formation in NAA treatment group on the scale, and inhibited it on the latter period. But in GA treatment group, especially GA7 treatment group, it represented the high rate of flower bud formation and also remarkably accelerated it treated after the developmental stage which proceeding in some degree.

      • Methylmethacrylate와 n-Butylalcohol의 에스테르 교환반응에 관한 연구

        The transesterification reaction between methylmethacrylate and n-butyl alcohol was kinetically investigated in the presence of constant quantity of inhibitor and various metal acetate catalyst at 120℃. The quantity of n-butylmethacrylate produced in the reaction flask was measured by gas-chromatography, and the reaction rate was investigated by measuring of the quantity of the product the reaction under various catalysts. The transesterification was carried out in the first order reaction kinetics with respect to the concentration of methylmethacrylate and n-buty1 alcohol, respectively. The linear relationship was show between rate constant and absolute temperatures, and the activation energy of 14.7Kcal for the reaction with zinc acetate catalyst was calculated. The maximum reaction rate was appeared at the range of 1.5 to 1.6 of electro-negativity of metal ions.

      • 복숭아의 가공과 전망

        복숭아는 저장성이 낮아 수확기에 홍수출하가 불가피한 과실로서 가공의 필요성이 강조되고 있는 과실이다. 그러나 복숭아의 특성을 살린 새로운 가공법이 개발되어 있지 않을 뿐만 아니라 가공법이 개발된다 하더라고 가공 시스템이 미비하여 생산량 조절이 어렵게 될 경우 가격의 변동으로 인한 농민의 피해가 크게 우려되고 있다. 이에 대한 농정당국의 대책면에서는 주로 우량품종의 생산을 촉진시키는 방향으로 투자되고 있어 한마디로 이에 대한 대책은 전무한 것으로 평가된다. 따라서 복숭아 농가의 수익보장을 위해서는 복숭아 재배지를 단지화하여 관리시스템을 정비하여 생산량의 조절을 도모하는 한편 과실, 꽃 잎 등을 이용하는 다양한 새로운 가공제품을 끊임없이 개발할 수 있는 농정당국의 지원이 요망된다. 아울러 개발된 가공법을 이용하여 농민들이 직접 가공에 참여할 수 있는 종합 가공공장 및 매장의 운영이 바람직하다고 보며 또한 단지화된 도원을 관광 단지화하는 종합적인 운영체계의 확립이 요망된다.

      • 원격조작을 위한 로봇 그래픽 시뮬레이터 개발

        Robot simulators have been used for the design, analysis, and control of robot systems. Robot simulator have many features such as system modeling, 3D graphic display of model, graphical robot teaching, and off-line programming. In this paper, a robot simulator is proposed which has basic features of robot simulators and some other features to support remote operation. The proposed robot simulator can be used to operate robots in real workplace by using off-line or online simulation and to make human operators learn the operations of robots. In particular, the proposed robot simulator supports a network client/server model for remote operations of robots. By using this feature, human operators can connect his computer system to the server system and control a real robot. The server system has a vision camera to transmit the image of working robots as feedback data to human operators.

        정신분열증과 우울증의 지각결핍의 비교

        정신분열증 환자의 지각결핍을 타 질환군과 비교해 보기 위하여 1983.6.1부터 동년 8월 31일 까지 전남의 대병원 정신과 외래에 다니는 우울증 환자 20명 국립나주정신병원에 입원한 정신분열증 환자 20명을 임의 선택하여 Garner의 모형을 이용 카드 분류를 시행하고 그 자료를 토대로 수정분류시간, 공제지수, 비율지수 등을 산출하여 변량분석한 결과 다음과 같은 결론을 얻었다. 1. 양 군의 수정시간을 변량 분석한 결과 유의한 차이를 발견할 수 없었다. 2. 공제지수와 비율지수를 변량분석한 결과 과다성 분류와 여과분류에서는 공제지수와 비율지수에서 아무런 유의차가 없었다. 3. 주사분류에서는 공제지수 비교에서 1% 수준에서 비율지수 비교에서 5% 수준으로 우울증의 분류시간이 긴 것으로 나타났다. 이상의 결과를 살펴볼 때 여과기능의 결함이라는 지각결핍은 정신분열증의 고유한 장애가 아닐 수도 있겠다. The perception of stimuli with two dimensions (size and figure) was investigated using Garners card sorting method into schizophrenic and depressive patients. The comparison of three performance indices (redundancy, filltering, scanning) between two study groups revealed that 1) the analysis of variance of the corrected time shows no significant difference between two groups, 2) in redundancy and filtering sorting the subtractive and ratio indices show no significant difference between two groups, 3) in scanning sorting the depressive group shows significantly longer sorting time than schizophrenic group(p<0.01 in subtractive index, p>0.05 in ratio index). The above findings suggest that the previously known perceptual deficit(mainly filtering deficit) may not be specific only to schizophrenia.
