        Surface Reflectance Related with Color Characteristics for Pig × Wild Boar Meat

        Color characteristics of pig ${\times}$ wild boar meat were determined with a fiber-optic spectrophotometer. The spectrophotometric characteristic of reduced-myoglobin observed after cutting immediately changed to the spectrophotometric characteristic of oxymyoglobin after 15 minutes of cutting. The spectrophotometry at 400 to 700 nm after 30, 45, 60, 90 and 120 minutes of cutting changed slightly. Compared with M. longissimus thoracis, M. rhomboideus had higher reflectance around 400 nm and from 650 to 1,100 nm and M. spinalis was lower in the visible light region after 60 minutes of cutting. The pig ${\times}$ wild boar meat was similar in reflectance shape with pork but was lower in intensity. The differences depended on the anatomical location. The M. rhomboideus from pig ${\times}$ wild boar had greatly lower reflectance than that from pig, the M. longissimus thoracis reflectance was lower, but M. spinalis reflectance hardly differed. These results showed that pig ${\times}$ wild boar meat had no special characteristic of blooming but had distinguishing characteristic of meat color among anatomical locations.

        DETERMINATION OF LONGISSIMUS MUSCLE AREA IN PIG WITH ULTRASONIC LINEAR ELECTRONIC SCANNER

        The usefulness of a portable linear electronic scanner. B-mode ultrasonic machine, was evaluated for estimating the longissimus muscle area from ultrasonic measurement of the muscle depth in 22 live pigs. The electronic scanner was easy to operate for muscle measurements in live pigs, which did not have to be held but were caged. The cross-sectional images of longissimus muscle and covering muscles and fat appeared on the monitor with grey scale in real time. It was easy to identify the ultrasonograms of fat and muscular tissues because the images differed in the degree of the grey scale. The longissimus muscle had less echogenic image than the other muscles. The boundary lines between first, second or third layers of backfat and the longissimus muscle were distinct on the ultrasonogram. The ultrasonic measurement at the shoulder was not acceptable because of the unstable measurements and the complex tissue structure. The repeatabilities for the measurements of longissimus muscle depth at one-half body length and last rib were acceptable. The simple correlation coefficients between ultrasonic estimates of the muscle depth in live pigs and the actual areas in the carcass, were 0.50 and 0.55 at the last rib and the one-half body length, respectively. Therefore, those positions were similarly suitable to measure. The method of electronic scanner for determining longissimus muscle area from the muscle depth was suitable for practical use in the field because of the simple and inexpensive technique.

        EFFECT OF DIETARY SUPPLEMENTATION OF COPPER AND KAPOK MEAL ON FAT CHARACTERISTICS OF PIGS

        Fifteen Landrace pigs were used to determine the effects of supplemental copper or kapok meal, or both on the characteristics of the depot fat. The pigs were allocated into five groups of 3 pigs each. The animals were fed diets as follows: (1) control diet 100%; (2) control diet plus 20 mg/kg copper; (3) control diet plus 200 mg/kg copper; (4) control diet plus 3% kapok meal; (5) control diet plus 200 mg/kg copper and 3% kapok meal. In addition, 100 mg/kg iron and 100 mg/kg zinc were supplemented to all the diets. The pigs were slaughtered at the same time after 8 weeks of feeding period at an average weight of 98.6 kg. The supplementation of 20 or 200 mg/kg dietary copper did not affect the fatty acid compositions, the iodine numbers, the melting points or the copper contents of the inner and outer layers of backfat and the perirenal fat from pigs. Supplementation of kapok meal significantly elevated the melting point, the content of C18:0 and the ratio of C18:0/C18:1 of the porcine fats and decreased the content of C16:1. There was no interaction noted between copper and kapok meal on the porcine fat characteristics. These results indicate that the swine diet supplemented up to 200 mg/kg copper with zinc and iron can be used in growing-finishing swine diets without affecting either porcine fat characteristics or hardening effect of kapok meal on porcine fat.

        Vitamins A and E in Carcass Fat from Japanese Black and F1 Cross Cattle

        This study was carried out to determine the contents of vitamins A and E in carcass fat from Japanese Black and F1 cross cattle, because the method of controlling the amount of vitamin A in feed has been used in the production of expensive beef with high marbling in Japan. We determined the contents of tocopherol and retinol in subcutaneous and perirenal fats for 40 carcasses of Japanese Black and F1 (Holstein${\times}$Japanese Black crossed) cattle that had been sent to market from 10 prefectures. In bovine fat, free ${\alpha}$-tocopherol was present in the greatest amount, the level of ${\gamma}$-tocopherol was about 10% and there was only a trace of ${\delta}$-tocopherol. The means${\pm}$standard deviation of ${\alpha}$-tocopherol content in subcutaneous and perirenal fats were $0.68{\pm}0.33mg/100g$ and $0.54{\pm}0.23mg/100g$, respectively. The means${\pm}$standard deviation of retinol content in subcutaneous and perirenal fats were $2.9{\pm}4.5{\mu}g/100g$ and $2.9{\pm}5.1{\mu}g/100g$, respectively. Both vitamins differed widely between animals and were present at a relatively low level compared to other reports (${\alpha}$-tocopherol 2.4-5.4 mg/100 g fat tissue and $30-220{\mu}g/100g$ muscle tissue). The correlation coefficients between subcutaneous and perirenal fats for retinol and ${\alpha}$-tocopherol content were 0.97 (p<0.01) and 0.82 (p<0.01), respectively, which showed high correlation. However, the correlation coefficients between retinol and ${\alpha}$-tocopherol contents for subcutaneous and perirenal fats were 0.11 and 0.08, respectively, which showed low correlation. Breed effect was observed in both vitamins. These results indicated that vitamins A and E in fat from Japanese Black and F1 cross cattle under the vitamin A controlling method are present at relatively low levels and feeds need to be supplemented with vitamin E.

        ASSESSMENT OF PORCINE FAT QUALITY BY FIBER-OPTIC SPECTROPHOTOMETRY

        Research was undertaken to determine if relectance (interactance) measured with a portable fiver optic probe (Colormet) can be used to assess porcine fat quality. Soft fat generally had lower interactance than hard fat, p<0.05 from 400 to 700 nm, although interactance spectra of hard and soft fat were similar in shape. At $4^{\circ}C$, interactance from 450 nm to 700 nm at the inner layer of backfat was correlated (p<0.01) with subjective soft fat score (r = 0.06 to 0.70), and with the refractive index (r = -0.62 to -0.65) and melting point (r = 0.59 to 0.60) of heat-extracted lipid. Colormet interactance $L^*$ at $4^{\circ}C$ was correlated (p<0.01) with soft fat score (r = 0.72), refractive index (r = -0.66) and melting point (r = 0.61). Interactance decreased as the temperature of the fat was increased from 22 to $44^{\circ}C$ (p<0.01). Soft fat had lower interactance than fats that were slightly soft, slightly hard and hard at 4, 22 and $40^{\circ}C$, although softness and temperature may interact to affect interactance. These results indicate that soft porcine fat may be detected easily by fiber-optic spectrophotometry.

        Changes in Meat Color and α-Tocopherol Concentrations in Plasma and Tissues from Japanese Beef Cattle Fed by Two Methods of Vitamin E Supplementation

        The influence of dietary vitamin E supplementation on meat color and ${\alpha}$-tocopherol concentrations in plasma, longissimus thoracis muscle and subcutaneous fat was investigated. Ten Japanese $Black{\times}Holstein$ crossbred steers were placed in three experimental groups receiving different supplements of vitamin E. Four steers (control) were fed no supplemental vitamin E. Two groups of three steers each, were supplemented with 500 mg dl-${\alpha}$-tocopherol acetate per animal daily for 175 days and 1,000 mg for 100 days, respectively, before slaughter. The ${\alpha}$-tocopherol concentration in plasma increased, as vitamin E were fed, and were related to the length of time and the amount of supplement. The ${\alpha}$-tocopherol concentrations in the muscle and the fat from the two supplemental groups did not differ significantly and were three or more times greater than those in the control group. Vitamin E supplementation did not affect the quantity of marbling of beef. Supplemental vitamin E stabilized the color of displayed beef around wavelengths of 500 nm and 640 nm. The two methods of vitamin E supplementation had similar effects on meat color. The effect of supplemental vitamin E on the color of beef with marbling was observed 2-3 days after slaughter and was followed for another two weeks.
