In this work, pectin-based biohydrogels with and without eucalyptus sawdust were synthesized viaradical crosslinking and characterized by Fourier transform infrared (FT-IR) spectroscopy, scanningelectron microscopy (SEM), swelling assays (SA), thermogravimetric analysis (TGA), differential scanningcalorimetry (DSC), X-ray diffraction (XRD), and rheological tests (RT). The immobilization of β-Dgalactosidasein the biohydrogel networks was performed by adsorption, and the immobilized enzymeactivity was studied during lactose hydrolysis reactions. Strong inter and intramolecular interactionsamong enzyme and biohydrogel chemical groups increased the biopolymer network crosslinkingdensities, decreasing the swelling capacities. The water diffusion mechanism in the biopolymer networkswas governed by non-Fickian transport, being affected by the pH and temperature values of the aqueoussolutions. The incorporation of eucalyptus sawdust in the biopolymer network increased thefinalbiomaterial thermal and mechanical resistance, preserving the immobilized enzyme stability. Pectinbasedbiohydrogels reinforced with eucalyptus sawdust proved to be potential solid supports for theimmobilization of β-D-galactosidase. These polymeric matrices preserved the enzyme stability in moreacidic aqueous solutions and enabled the application of the immobilized enzyme for at least sixsuccessive lactose hydrolysis cycles. Overall, β-D-galactosidase immobilized in pectin-based biohy-drogels appears as an alternative for the production of either lactose-free or low-dosage lactose foods.

There are factors that condition the evolution of regional disparities in a country. In Mexico, the manufacturing sector has moved towards a regionalization of production. The objective of this research is to analyze theoretically the integration, evolution and interregional competition in the Mexican manufacturing sector, the disparities in its socioeconomic development and the measurement of the economic and social transformation from 1993 to 2008. The results show that the dynamism of the sector was based on the use of the conjunctures generated by the convergence of the productivity levels of the Japanese and European North American industries, resulting in increased competitive pressures. The productivity and growth of the sector does not ensure that social and economic levels are reached that indicate a sustained regional development process; hence, it is necessary to initiate a de-localization process or to establish new industries with a certain degree of spatial dispersion.

The ability and willingness to develop, organize and manage a business along with handling its risks in order to obtain a benefit is the entrepreneurialism that characterizes the population of Hidalgo. The bestexample of entrepreneurship is the start of new businesses in the state of Hidalgo, which are the initiatives of people who are convinced that business development at any level is a path to success. The study developed below is the result of a research project carried out through the National Research Network of MiPYMES (Micro, Small and Medium Enterprises) to answer the following questions: What are the characteristics and motivations of entrepreneurs in the state of Hidalgo, and what are the conditions they face to consolidate themselves as successful entrepreneurs? The most relevant results indicate that the main economic activities that have been developed in the state are the retail trade and hospitality services. The companies have an average of 3 years since their start of operations. Nearly 50% are run by female entrepreneurs whose main motivation is to increase income and have greater dependence. The main obstacles they face are government bureaucracy and lack of financing.
