Sun-dried calyxes of Hibiscus sabdariffa werefinely grinded and fractionated by controlled differentialsieving processing (CDSp) into four granulometric classes. The obtained powder fractions were examined for theirmicronutrient contents and in vivo antioxidant properties inhigh-fat diet induced oxidation model rats. Unsievedpowder and lyophilized ethanolic extract were used forcomparison. Micronutrient contents and antioxidant propertieswere significantly influenced (p\0.05) by particlesizes. The mineral, vitamin, carotenoid and anthocyanincontents were shown to be higher in smaller powder particles. Comparatively, the ethanolic extract powder had thehigher carotenoid, vitamin and anthocyanin contents whilethe superfine powders\180 lm and 180–212 lm had thehigher mineral contents and antioxidant properties whichwas characterized by high superoxide dismutase, catalaseactivities and low malondialdehyde production. Plantgrinding followed by CDSp may be an option to improvemicronutrient content and antioxidant activity of plantpowders.
