        한우수소의 부위별 Calorie, Cholesterol, 유리아미노산, 핵산관련물질 및 지방산조성

        본 연구는 한우수소 10두에서 10부위(업진, 보섭, 채끝, 등심, 꾸리, 홍두깨, 목심, 설깃, 양지, 우둔)를 선정하여 성분조성 및 맛 관련물질 특성을 분석하였다. 칼로리 함량은 부위간에 유의적인 차이가 없었다(p>0.05). 10 부위내 콜레스테롤 함량은 홍두깨가 콜레스테롤 함량이 26.74 mg/100 g으로 가장 낮았고 업진이 31.08 mg/100 g으로 가장 높게 나타났으나(p<0.05) 다른 부위들간 콜레스테롤 함량에는 유의적인 차이가 없었다(p>0.05). 맛과 관련이 있는 유리아미노산 함량을 부위별로 비교한 결과 모든 부위에 glutamate와 alanine 함량이 각각 $94.33{\sim}216.36\;mg/100\;g,\;154.88{\sim}200.31\;mg/100\;g$로 가장 높은 수준으로 존재하였고 그 다음으로 arginine, phenylalanine 및 lysine으로 분석되었다. 부위별 inosine monophosphate(IMP) 함량은 업진, 보섭, 채끝, 홍두깨, 설깃, 우둔부위가 등심이나 목심 부위보다 유의적으로 더 많이 존재하는 것으로 분석되었다(p<0.05). Inosine 함량은 보섭과 설깃이 가장 많았고 반면에 hypoxanthine은 꾸리부위에서 가장 높게 나타났다(p<0.05). 부위별 총 콜라겐 함량은 업진부위가 가장 높았고 그 다음이 양지, 꾸리, 목심 부위가 높은 것으로 나타났다(p<0.05). 지방산 조성에서 등심부위가 다른 부위와 비교했을 때 stearic acid($C_{18:0}$) 함량이 유의적으로 높았고 우둔부위는 arachidonic acid($C_{20:4n6}$)의 함량이 가장 높은 것으로 나타났다(p<0.05). 총 포화지방산 함량은 업진, 등심 및 양지부위가 가장 높았고 총 불포화지방산 함량은 홍두깨 부위가 가장 높게 나타났다(p<0.05). This study was conducted to investigate the compositions of different cuts of Hanwoo bull beef. 10 cuts [Abjin (short plate), Bosup (top sirloin), Cheggt (striploin), Dngsim (loin), Guri (chuck tender), Hongduke (eye of round), Moksim (chuck roll), Sulgit (bottom round), Udoon (top round), Yangi(brisket)] were prepared from 10 Hanwoo bulls (-24 month old) slaughtered during 3 consecutive days. There were no significant differences in the calorie contents among the 10 cuts (p<0.05). In cholesterol content, Hongduke was significantly lower (26.74 mg/100 g) and Abjin was significantly higher (31.08 mg/100 g) than the other cuts (p<0.05). Free amino acid analysis revealed that there were high contents of glutamate (94.33-216.36 mg/100 g) and alanine (154.88-200.31 mg/100 g), followed by arginine, phenylalanine and lysine in the 10 cuts. In addition, Abjin, Bosup, Cheggt, Hongduke, Sulgit and Udoon had significantly higher inosine monophosphate (IMP) contents than Dngsim or Moksim (p<0.05). Inosine contents were highest in Bosup and Sulgit, whereas hypoxanthine contents were highest in Guri (p<0.05). Total collagen contents were significantly higher in Abjin followed by Yangi, Guri and Moksim (p<0.05). With regard to fatty acid composition, Dngsim had significantly higher $C_{18:0}$ than the other cuts, and Udoon had significantly higher $C_{20:4n6}$ than the other cuts (p<0.05). Total contents of saturated fatty acids (SFA) were significantly higher in Abjin, Dngsim and Yangi, whereas total contents of unsaturated fatty acids (UFA) were significantly higher in Hongduke than the other cuts (p<0.05).

        버크셔 계통조성돈의 육질 특성비교

        체계적인 종돈관리와 우리의 식문화 특성을 고려하여 육질이 우수한 버크셔 계통조성을 위하여 총 8농장에서 종돈을 구입하여 유전적인 교류 유무에 따라 총 448두의 버크셔를 가계에 따라 5계통으로 분류하고 도축하여 육질을 비교한 결과 도축 후 45분 pH($pH_{45\;min}$)는 성장계통이 6.08로 육질 1계통과 3계통에 비하여 유의적으로 높았지만, 사후 24시간 pH($pH_{24\;h}$)는 육질 1계통과 계통5가 각각 5.69, 5.65로 유의적으로 낮았다. 수분함량은 계통5가 가장 높았고, 근내지방 함량은 계통 4가 3.07%으로 높았다. 보수력은 계통 3이 58.36%로 가장 높았고, 전단력은 계통 4가 2.84 kg로 가장 낮았다(p<0.05). 육색 명도(CIE L) 값에서는 계통5가 51.59로 다른 계통들에 비하여 유의적으로 높았고, 적색도(a)와 황색도(b)는 유의적인 차이를 보이지 않았다. 전반적인 결과를 볼 때 육질 측면에서 계통 4가 근내지방 함량과 pH가 높고, 육색 명도, 드립감량, 전단력가가 낮아 육질형, 계통 5는 성장형으로서의 한국형 버크셔 계통조성에 활용성이 높을 것으로 판단되었다. Objective of this study was to develop a Korean Berkshire line produced using organized management techniques. A total of 448 pigs divided into five line groups were slaughtered and analyzed for their meat quality. $pH_{45}$ values were significantly higher in lines 1~4 (pH 6.08). However, $pH_{24}$ values were lower in line 1 (pH 5.69) and line 3 (pH 5.65) (p<0.05) than in the other lines. Moisture contents were significantly higher in line 5, and the intramuscular fat contents (3.07%) were significantly higher in the other four lines. Water holding capacity (WHC) was higher for line 3 (58.36%) while Warner-Bratzler shear force (WBS) values were significantly higher for line 4 (2.84 kg/$0.5inch^2$) than in the other lines (p<0.05). For meat color properties, L values (CIE L) were 51.59 for line 5, and this value was higher than the other lines. There were no significant differences in $a^*$ values and $b^*$ values among the five lines (p>0.05). Therefore, line 5 was selected as the growth type, whereas line 4 was selected as the Korean Berkshire line that produced pork significantly higher in pH and significantly lower in meat color (lightness), drip loss, and WBS.

        사육일령이 육계의 가슴 및 다리살의 아미노산·지방산 변화에 미치는 영향

        This study was to investigate the amino acid, free amino acid and fatty acid composition of chicken breast muscle and legs muscle by different raising periods (30, 36 and 42 days). In amino acid composition, the glutamic acids were 3.63% at 30 days, 3.63% at 36 days and 3.54% at 42 days in the breast muscle. The glutamic acid contents in the breast and leg muscle were decreasing tendency as raising periods increased. The total free amino acids were 370.6 mg at 30 days, 235.9 mg at 36 days and 246.3 mg at 42 days in the breast muscle, and those were 470.16 at 30 days, 326.4 mg at 36 days and 321.9 mg at 42 days in the leg muscle. Total contents of free amino acids were higher in chicken legs muscle than in chicken breast muscle. The linoleic acids, the most essential fatty acid, were contained 17.84% at 30 days, 17.84% at 36 days and 20.33% at 42 days in chicken breast muscle. These results indicated that the fatty acid composition increased as raising periods increased. There were 0.69% DHA (Docosahexaenoic acid) in chicken breast muscle at 30 days, 0.96% at 36 days and 1.29% at 42 days. From these results, the DHA contents in chickens were also increased as raising periods increased.

        금속 대 금속 고관절 표면 치환술의 최소 4년 추시 결과

        목적: 금속 대 금속 고관절 표면 치환술의 최소 4년 추시 결과를 보고하고자 하였다. 대상 및 방법: 1998년 11월부터 2001년 9월까지 금속 대 금속 고관절 표면 치환술을 시행 받고 최소 4년 이상 추시 관찰이 가능하였던 36명, 39 고관절을 대상으로 하였다. 평균 연령은 45세(28-69세), 평균 추시 기간은 51.9개월(48-82개월)이었다. 임상적 평가를 위해 해리스 고관절 점수 설문 및 술 후 보행 분석을 시행하였다. 방사선학적으로는 술 후 주기적으로 전후면 및 횡측면 방사선 사진을 촬영하였다. 세라믹 대 세라믹 관절면 고관절 전치환술군 21예를 대조군으로 코발트와 크롬의 혈중 농도를 측정하여 비교하였다. 결과: 해리스 고관절 점수는 술 전 평균 61점(31-74점)에서 최종 추시에서 평균 96점(85-99점)으로 향상되었다. 비구컵의 해리는 보이지 않았고 대퇴 부품의 삽입 각도는 대퇴골 간부에 대해 평균 136°로 22 고관절(61.1%)에서 130-140o의 범위에 있었다. 4년 추시상 생존율은 97.4%이었으며, 혈중 코발트, 크롬 농도 모두가 대조군에 비해서 증가된 소견을 보였다(p<0.05). 결론: 고관절 표면 치환술은 단기 추시 결과 우수한 생존율을 보였으나 향후 더 많은 증례에서의 장기 추시가 필요하며, 금속 이온 유리에 대한 관찰이 필요하다고 생각된다. Purpose : To report the minimum 4 year follow up results of metal on metal hip resurfacing arthroplasty. Materials and Methods : 39 hips from 36 patients, who received hip resurfacing from November 1998 to September 2001 and were followed up for at least 4 years, were enrolled in this study. The average age was 45 years (28-69 years) and the average follow up period was 51.9 months (48-82 months). A clinical evaluation was performed with the Harris Hip Score and gait analysis postoperatively. A radiologic evaluation was performed regularly after surgery using anteroposterior and lateral simple radiographs. The post-operative cobalt-chrome serum concentration was measured and compared using 21 cases of ceramic-on-ceramic total hip arthroplasty as a control group. Results : The Harris Hip Score improved from 61 points (31-74) preoperatively to 96 points (85-99) postoperatively. There were no cases of acetabular loosening, and the average angle of femoral insert to the shaft was 136° with 22 hips (61.1%) being within 130-140o. The 4 year follow-up survival rate was 97.4%. The serum cobalt and chrome levels were higher than the control group (p<0.05). Conclusion : Hip resurfacing showed excellent survival rate after a short-term follow-up, but still requires a long-term evaluation with more cases and further metal ion release studies.

        환상그림책을 활용한 후속 활동이 유아의 언어표현력 및 정서지능에 미치는 영향

        본 연구는 환상그림책을 활용한 후속 활동이 유아의 언어표현력 및 정서지능에 미치는 효과를 분석하는데 그 목적이 있다. 연구대상은 G시 만 5세 유치원 유아 50명(실험집단 25명, 비교집단 25명)을 대상으로 하였으며 실험집단은 환상그림책을 활용한 등장인물에 대한 일기, 편지쓰기, 신문/광고 만들기, 자서전 꾸미기, 등장인물 단평, 가상하기의 후속 활동을 실시하였고, 비교집단은 환상그림책을 활용한 일반 이야기나누기활동을 실시하였다. 연구결과, 첫째, 환상그림책을 활용한 후속활동 집단이 유아의 언어표현력 중 창의적 표현을 제외한 단어 수, 문장 수, 내용일치, 내용연계 능력 부분에서 유의하게 높은 것으로 밝혀졌다. 둘째, 환상그림책을 활용한 후속활동 집단이 유아의 정서지능 부분에서 유의하게 높은 것으로 밝혀졌다. 즉, 환상그림책을 활용한 후속 활동은 유아의 언어표현력 및 정서지능에 효과적임을 알 수 있었다. The purpose of this study was to identify the effect of follow-up activities through fantasy picture books on young children’s language expression ability and emotional intelligence. The subjects of this study were 50 five-year-old children, specifically, 25 students at ‘J’ kindergarten (the experiment group) and 25 students at ‘B’ kindergarten (the comparison group) in G city. The result of this study showed that there were a significant difference in young children’s language expression ability and emotional intelligence between the experiment and the comparison groups. This findings suggest that the follow-up activities through fantasy picture books can improve young children’s language expression ability and emotional intelligence.

        참당귀(Angelica gigas) 뿌리 추출물로부터 (+)-Decursinol의 대량 제조 방법

        The purpose of this study is to develop a mass preparation method of (+)-decursinol from Angelica gigas roots. Recently, it has been shown that (+)-decursin, (+)-decursinol angelate and its analogues, isolated from Angelica gigas root, exhibit various biological activities such as antitumor, antibacterial and neuroprotective activities. The contents of these compounds, ester form of (+)-decursinol, is very high in the Angelica gigas roots, whereas the content of (+)-decursinol itself is very low. Therefore, (+)-decursinol which can be used as starting material to synthesize various its analogues was easily prepared from decursin analogues in the Angelica gigas roots. In order to achieve such aim, the Ether-Fr, of the ethanol extract of Angelica gigas root was hydrolysed with various alkalis and solvents. As a result, the order of (+)-decursinol preparation was 1) NaOH, KOH, 2) K2CO3, and 3) NaHCO3 as alkali. Also, the yield of (+)-decursinol was higher in diethyl ether than any other solvent conditions. From 1kg of dried Angelica gigas roots, we could obtain 27.4g of (+)-decursinol as a pure white solid.

        제6기(2013년∼2015년) 국민건강영양조사 자료를 이용하여 조사한 노인에서 에너지 섭취 과소보고와 관련 요인

        Background: This study was to investigate the extent of under-reporting (UR) of energy intake (EI) and the factors associated with UR of EI in the Korean elderly populationby using the 6th Korean National Health and Nutrition Examination Survey data. Methods: This study was conducted 3,992 people aged 65 and over. Nutrition information was collected using a 24-hour recall method, and subjects with an Energy intake (EI)/Basal metabolic rate of less than 1.10 were defined as UR of EI by the revised Goldberg cut-off method. Socioeconomic factors, BMI, health-related behavior, and comorbidities were compared between UR and normal reporting (NR) of EI. Nutrient intakes between the two groups were also compared in each sex. Multivariate regression analysis was performed to examine the associations of variables on UR of EI. Results: UR of EI was 522 out of 1705 in men and 908 out of 2,287 in women. The risk of UR was lower by 0.440 times (95% CI [0.253, 0.764], P<0.01) in manual worker than no financial activity group in men and was higher by 1.839 times (95% CI [1.318, 2.566], P<0.01) in high BMI women than in the normal BMI. Conclusion: We found that independent risk factors for UR of EI are high BMI in elderly women and occupational factor in elderly men. Therefore, when interpreting the results of the relationship between nutrition and chronic diseases of the elderly, it is important to consider under-reporting of energy intake and related factors based on the results of this study.
