S. mutans에 대한 키토산의 항균효과는 그 분자량에 따라 뚜렷한 차이를 보였으며, 약 30,000의 분자량을 갖는 키토산이 가장 높은 항균활성을 보였다. 키토산 처리에 의해 세포로부터 단백질, 핵산, 2가 양이온 등이 상당량 유출되는 것이 관찰되었으며, 세포내 물질의 유출정도는 키토산의 항균효과와 밀접한 상관성을 보였다. 이러한 세포내 물질의 유출은 양이온성을 띠는 키토산의 아민기와 세포벽내의 음이온 성분과의 강한 결합에 의해 세포벽의 결합력이 약화되면서 생기는 결과로서 추측되었다. 키토산처리에 의해 S. mutans의 세포벽이 원형질로부터 분리되고 세포내 물질이 세포벽 내에서 밖으로 유출되는 현상은 투과전자현미경(TEM)에 의해 확인되었다. Bactericidal effects of chitosans with varying molecular weight $(10,000{\sim}170,000)$ were investigated for Streptococcus mutans, a primary causative bacterium of dental caries. The molecular weight of chitosan was a significant contributor to the bactericidal effect, and a chitosan having approximately 30,000 of molecular weight exhibited the highest bactericidal effects on S. mutans. Treatment of chitosan resulted in leaking intracellular protein and nucleic acid out of S. mutans cells. In addition, the divalent cations such as $Ca^{2+}\;and\;Mg^{2+}$ were also significantly released out of the cell. Visible damage of chitosan treated cells was observed by transmission electron microscopy (TEM), in which the cell wall was notably distorted and cytoplasmic membrane was separated from the cell wall. The results suggested that the bactericidal effect of chitosan on S. mutans was attributable to both leakage of intracellular materials and structural disintegration of cell wall.

생미역 및 건미역에 0.1M Na₂CO₃를 가하여 미역내에 분포하는 알긴산을 추출하여 미역 페이스트를 제조한 후, 이를 첨가한 육제품 패티의 관능특성과 물성을 측정하였다. 전체적으로 미역 페이스트의 첨가에 의해 조리한 패티의 맛, 색상, 풍미, 조직감, 다즙성 등 각종 관능특성이 향상되는 현상을 보였다. 경도는 미역 페이스트의 첨가에 의해 크게 감소하여 부드러운 조직감을 제공하였다. 또한, 미역 페이스트의 첨가에 의한 보수력의 증가로 패티의 조리에 의한 무게손실율이 감소하였다. Sea mustard paste was prepared by treating wet and dried sea mustard with 0.1M Na₂CO₃, which mainly aimed to extract alginate from the cell wall of sea mustard. The pastes were added to beef, chicken and pork to manufacture the meat patties. The effects of adding the paste were investigated in terms of sensory properties, texture(hardness) and weight changes after cooking. The sensory attributes such as taste, color, texture and juiciness were generally enhanced by adding the paste. The hardness of cooked patties was significantly decreased, so the paste provided softer texture. The addition of paste also resulted in decreasing the weight loss of meat patties after cooking.
Changes in Solution Properties of Pectins by Enzymatic Hydrolysis of Sidechains

사과펙틴의 측쇄를 hemicellulase를 이용하여 가수분해한 후, 묽은 용액(dilute solutions ; c<c^*)과 진한 용액(concentrated solutions ; c >c^*)에서 용액점도의 변화를 관찰하였다. 효소에 포함되어 있는 polygalacturonase는 polygalacturonic acid를 ligand로 이용한 affinity chromatography로 제거하였다. 묽은 용액에서 측쇄의 가수분해는 점도에 큰 영향을 주지 않은 반면에, 진한 용액에서 측쇄를 가수분해한 경우에는 점도가 크게 감소하는 경향을 보였다. 이는 진한 용액 상태에서 펙틴의 측쇄가 분자간의 엉킴(intermolecular entanglements)에 상당히 기여할 수 있음을 의미한다. 한편, 진한 용액 (2~6%)에서 효소처리에 의한 점도감소는 펙틴의 농도의존성을 보였다. The neutral sugar sidechains of apple pectins were hydrolyzed by commercial hemicellulases produced from Aspergillus niger, and the corresponding changes in solution viscosity were investigated in dilute (c<c^*) and concentrated (c>c^*) pectin solutions. Pectinase activity included in hemicellulases was removed by Epoxy-activated Sepharose 6B affinity chromatography using polygalacturonic acid as a ligand. Enzymatic hydrolysis of sidechains did not affect the specific viscosity of dilute (0.5%) pectin solutions, while viscosity significantly decreased in concentrated (2.0~6.0%) region. These results strongly suggest that the sidechains of pectins exist as an entangled state in concentrated solutions. It was also found that in the concentrated region the extent of viscosity reduction was dependent on pectin concentrations.
