          A book with nutrition theme can be used as an interesting tool to teach nutrition to children. The purpose of the study was to search children"s books with nutrition themes, and evaluate the content and the quality of the books. Fifteen books were found on the internet and in a bookstore. The main subjects were cooking (8 books), weight control (5 books), and food culture (2 books). Most books regarding cooking provides recipes but they do not provide enough information on food groups, nutrients, and food sanitation. Most books regarding weight control provides desirable food habits, calories in foods, and excercise, but they need to give more information on appropriate method to assess children"s obesity. Most books were evaluated as "The messeges were clear." "The illustration matched with the theme." "The illustration was attractive." However, most books were not written by a nutrition professional, indicating the reliability of the books was not ensured. Therefore, more books with various nutrition themes should be written for children by nutrition professionals, which can be used to help children develop healthy eating behavior.

      • 대학식당에 대한 학생들의 이용실태 및 만족도

        In order to improve the Quality of university foodservice, use and satisfaction with five cafeterias among students in a university located in Cheongju were evaluated by a Questionnaire survey. The results analyzed from the responses of 673 students are as follows: Students who usually eat at the cafeterias were 4.4% for breakfast, 81.5% for lunch. and 27.8% for dinner. Fifty one percent of the students ate at the' cafeterias once a day, and 26.6% more than twice a day. The main reasons for eating there were 'to save money and time' and 'no other appropriate place to eat'. The reasons for not eating there were 'tasteless', 'crowded and noisy', and 'waiting in a long line', The mean satisfaction scores for taste, menu, and sanitary conditions of cafeteria were the lowest at Cafeteria A, which is directly managed by the university. The scores for price and the amount of food, the degree of keeping warm of food, kindness of the personnel, and cleanliness of dishes and spoons were the lowest at Cafeteria E, which is managed by a private enterprise. While male students were more dissatisfied with the amount of food, especially rice, female students were more dissatisfied with the degree of keeping warm of food, kindness of the personnel, and sanitary conditions of cafeterias. The first priority each cafeteria should improve was found to be taste of food at Cafeteria A and C, price at Cafeteria Band E, and menu and taste at Cafeteria D. These results showed that the students were very dissatisfied with the foodservice offered at the cafeterias and eager for the improvement of the quality. It is anticipated that those who take charge of the management of the cafeterias will make efforts to improve the quality of foodservice on the basis of these results.

      • 비만 어린이 대상 영양교육 프로그램의 효과 평가

          There are many factors affecting the growth and the change of the foodservice industry. Convenience has become a top priority for the increasing number of single households and working women todays. This trend has given a strong impetus to the foodservice operations and they are now providing take-out service. The purpose of this research was to analyse the customer satisfaction with the take-out service of the restaurants. A questionnaire survey of 450 consumers that have experience in take-out service at the restaurants was conducted and 378 completed questionnaires were available for the purpose of the statistical evaluation. Statical analyses were made of raw data by way of using the SAS 8.2 S. Customers" satisfaction scale was composed of 5-Likert scales. The main results of this study were summarized as follows; The customer satisfaction with the take-out service was analyzed according to area, gender and job. The satisfaction score was between 3 point and 4 point among 5 scales. In the satisfaction score according to job, the score in urban area was highly than rural area significantly. In the satisfaction score according to gender, there was no relations significantly in the satisfaction score according to job, there was different significantly in the elements of food taste, price, kindness of employee, knowledge of menu, neatness of employee and access to the restaurant.

      • 청주지역 영양플러스 사업 참여자들의 사업 만족도 및 영양개선 효과

        This study was conducted to investigate satisfaction and improvement of nutritional status among the participants of Nutri-Plus program held at Health Center located in Sangdang-gu, Cheongju, Chungcheongbuk-do, Korea. Questionnaire survey was carried out targeting total 190 participants including 5 pregnant women, 51 lactating women, 55 infants, and 79 children. Anthropometric, biochemical and dietary intake data before and after participation were collected to investigate the effectiveness of the program. The subjects were satisfied with the program and supplementary foods as assessed with the satisfaction score. The overall score was higher than 4 point out of 5 point criteria. While the subjects were satisfied with supplementary foods such as rice(unpolished rice, barley), milk, and eggs, they were not with potatoes(sweet potato, noodles), black beans(red bean, cereal), and carrots(green pumpkin). When the nutritional status was compared before and after the program, vitamin A intake of pregnant women was significantly increased after the program(p<0.01). Significant increases of hemoglobin concentrations(p<0.001) was found in lactating women with values from 11.7g/dl to 12.6g/dl along with significant increases in the intakes of energy, vitamin A, protein, calcium, and riboflavin. Height, body weight, and BMI of infants were significantly increased after the program(p<0.001), but the infants and children who were below 10th percentile in height and weight were decreased(p<0.001) and their hemoglobin contents were increased significantly(p<0.001) after the program. Significant increases were also observed in the intakes of energy, protein, calcium, iron, vitamin A, riboflavin, and vitamin C(p<0.05). Our study showed that the participants of the Nutri-Plus program were satisfied with the program and supplementary foods and nutritional status was improved after participating the program.

      • 어린이 시간대의 TV 식품광고 내용 분석

        The purpose of this study was to analyze the contents of food advertisements on TV during children’s prime time. Food advertisements were examined on four television stations from 5 pm to 7 pm for a week in 2007. During the period, 62 unique food advertisements were aired a total of 201 times. Of the total 201 advertisements, the confectionary group was the most frequently advertised (33.3%), followed by food service restaurants (19.4%) and non-alcoholic beverages (18.9%). When the advertisements were categorized according to the target consumer group, those targeting ‘general consumers and adults’ were 61.7% and those targeting ‘children’ were 22.9%. The advertisements targeting children mostly featured animation characters, celebrities and peers. The most often used technique (41.9%) of the advertisements targeting children was a promotional offer which directed children’s attention to free toys. Advertised foods from 53.2% of 201 advertisements were incompatible with dietary guidelines for children. These results indicate that food advertisements exposed during children’s prime time may have negative impacts on children’s healthy food choices. Therefore, efforts should be made to establish a better food advertising environment for children by monitoring and controlling food advertisements

      • 식사평가 웹사이트의 활용 및 평가

        The purpose of this study was to investigate dietary habits and nutrient intake of college students through 'idiet' website and evaluate satisfaction of the website. The subjects were 166 students who registered 'food and nutrition' as a general education course in Chungbuk National University. Dietary habits, dietary attitudes, food frequency, and dietary intake were investigated through the 'idiet' website by himself/herself. More than two thirds(69.3%) of the subjects were categorized as 'poor' in dietary habits, and 36.7% were categorized as 'poor' in dietary attitudes. Nutrient intakes were estimated on the website when the students chose the name and the amount of the foods they ate during 24 hours with the help of real-size photos provided on the website. Mean daily energy intakes were 2,146 kcal, and 1,667 kcal in male and female students, respectively, which were comparable with those published in the previous studies estimated though a 24-hour recall or a food record method. Mean daily intakes of vitamin C, riboflavin and calcium were less than 75% of Recommended Intakes. Nutrient intakes of the subjects who were categorized as 'good' in dietary habits and food frequency were significantly higher than those who were categorized as 'poor'. The usefulness of the contents were evaluated by the subjects after using the website and the results showed that the usefulness score of nutrient intake assessment was high. Seventy five percents of the subjects answered that the website might be helpful for weight control, and 71.7% would recommend this website to others, and 68.1% would revisit this website. These results showed that the website might be useful for examining dietary habits, dietary attitudes, food frequency, and dietary intake of college students.

      • 인천지역 영유아 부모의 보육시설 급식에 대한 만족도 및 어린이급식관리지원센터에 대한 인식

        The purpose of this study was to investigate satisfaction with foodservice of infants and children caring facilities and perception on Centers for Children's Foodservice Management among parents. A questionnaire survey was conducted to 202 people who had infants attending daycare center or kindergarten in Incheon from August 10 to September 3, 2015. More than half respondents (64.9%) were satisfied with foodservice of daycare centers, and the most satisfied category was to provide nutritious meal. Approximately 40% of the respondents did not know whether a dietician was employed in the daycare center where their children attended. Approximately 70% of the respondents replied the reason for the necessity of a dietician was to plan a balanced diet. 67.3 % of the respondents had not heard of the Centers for Children's Foodservice Management, and 75.2% did not know whether the daycare center where their children attended was supported by the Centers for Children's Foodservice Management. Therefore, it is necessary to promote the Centers for Children's Foodservice Management among the parents of infants and children.

          Trienzyme treatment (protease, α-amylase, folate conjugase) before microbiological assay is widely used to measure folate content in foods. The amounts of protein and carbohydrate in foods, however, are varied and the condition of enzyme treatment should be adjusted by food composition. The purpose of this study was to determine the optimal condition of trienzyme treatment for folate assay in muskmelon. The lowest concentration of protease to digest protein in muskmelon was tried to be determined because muskmelon contains only a small amount of protein. Protease and heat treatment did not increase folate assay results of muskmelon at all, which indicates these steeps are not necessary. Therefore, folate content of muskmelon was measured after the treatment of α-amylase and folate conjugase without protease treatment. The average folate content of muskmelon including placenta was 87.5㎍/100g. Folate content of placenta of muskmelon (260.7㎍/100g) was about 6 times higher than flesh alone (64.2㎍/100g). Our results show that muskmelon, especially with placenta, is a good source of folate.

        The purpose of this study was to compare dietary habit and food preference by obesity index in preschool children. The subjects were 373 children, aged 5 to 6, of 7 preschools in Chungbuk. A questionnaire was answered by the children"s mother. The children were classified into three groups depending on obesity index. Nine percents of the subjects were classified as "obesity", and 12% were "underweight", and 79% were "normal". There was an association with obesity index and eating speed. The percentage of the subjects who responded that they ate very fast were 22%, 9%, and 2% of obese, normal and underweight group, respectively. More children among those who responded that they ate very fast were found to eat until they felt full. The food preference score of the children was high in ice cream, fried chicken, and yogurt regardless of obesity group, but the preference ranking of cooked rice was higher in obese group than in the other groups. Most of the food preference scores in children were significantly correlated with those of their mothers. Our study suggests that preschool children should be advised to eat slowly to prevent obesity. Nutrition education for healthy food choice should be implemented not only for children but also for their parents.

      • 초등학생 대상 비만관련 도서의 평가

        The purpose of this study was to evaluate the contents and the quality of the books with obesity themes for elementary school children using an evaluation tool. Children's books with obesity themes were searched at the websites of bookstores and libraries from July to September, 2007 and twenty books were collected after the investigator checked the contents at the libraries and bookstores. An evaluation tool was developed consisting of a total of 15 questions, nine of which concerned about the contents and six of which did the formats. Each question was designed to assess in three responses of "Yes", "No" or "Difficult to evaluate." The books were categorized into several genres. Eleven books were children's stories, 5 were cartoons, and 4 were combinational genres encompassing children's stories, cartoons, and explanatory texts. The publication of the books with obesity themes started on 1997 and has been increased since 2004, which indicates that the public's interest in childhood obesity has been increased. In terms of contents, the questions of “Are the contents of this book organized systematically?", "Are the contents appropriate to children?" and "Is this book written in a way that children can enjoy it?" were evaluated most positively in the order. In terms of formats, "Do its cover and colors stimulate children's interest?" was evaluated most positively and then followed by "Are the letter size and style proper for children?" Among all the questions, "Is the author or chief editor a nutrition expert?" was evaluated most negatively. Therefore, it is important for nutrition experts to take active part in writing and editing children's books with obesity themes in order to provide children with reliable information. The evaluation results will be able to suggest some direction in improving children's books with obesity themes and help the readers make a good choice of them.
