유산균 발효에 의한 흰점박이꽃무지 염장소스 제조 및 특성

본 연구는 식용곤충 기반의 소스 개발을 위해, 흰점박이꽃무지(꽃뱅이; Protaetia brevitarsis, Pb)를 40 % 천일염(solar salt; ss)과 정제염(refined salt; rs)으로 염장하여 간장 형태의 조미료를 제조하였다. 또한, 항균력을 지닌 유산균 L. plantarum (Lp)과 W. paramesenteroides (Wp) 접종에 의한 유해 미생물 발생 억제와 3개월 속성발효에 따른 그 기능을 제시하였다. 40 % 농도의 천일염과 정제염으로 염장하고 3개월간 숙성된 흰점박이꽃무지 염장소스(Pb sauce; ssPB_Lp/Wp, rsPB_Lp/Wp; 꽃뱅이장) 내의 미생물을 16s DNA로 분석한 결과, 두 종류 소스에서 투여된 Lp만 확인되었고 기타 미생물은 확인되지 않았다. Lp와 같이 투여된 Wp는 기타 미생물 발생 억제 기능 후 고염 생존이 어려웠다. 두 종류 꽃뱅이장의 평균 pH, 당도, 염도는 pH 6.1, 32 brix, 27.8 %로 시판 제품과 비교한 결과, 유사범위에 속하였으며 유산균 숙성에 따라 GABA 성분이 증가하고 유리아미노산 형태인 프롤린(491.02 ㎎/100 g), 글리신(198.86 ㎎/100 g), 알라닌(140.67 ㎎/100 g), 글루탐산(71.87 ㎎/100 g) 외의 14종 아미노산이 확인되었다. 또한, 타르색소와 안식향, 팔라옥시안식향산, 소브산 등의 식품첨가물도 불검출 또는 기준 수치 이하로 검출되었다. 다음으로 효능분석에서 항산화 능력 검정(DPPH) 결과, 천일염 꽃뱅이장(ssPB_Lp/Wp)이 69.4 %로 높은 항산화 효과를 나타내었으며, 3T3-L1 세포 독성평가 안전성 및 지방축적 감소 효과가 있음도 확인되었다. 본 연구 결과는 흰점박이꽃무지 외의 식용곤충을 활용한 천연 식용곤충 소스류 개발에 대한 가능성과 유효 제품 개발에 도움이 될 것으로 사료된다. The purpose of this study was to develop an insect-based sauce fermented by lactic acid bacteria (Lactobacillus plantarum [Lp] and Weissella paramesenteroides [Wp]). This study suggested salting as an accelerated method for fermenting the edible insect Protaetia brevitarsis (Pb). Brine containing Pb and 40 % solar or refined salt was inoculated with Lp and Wp to inhibit harmful bacterial growth and facilitate fermentation (ssPb_Lp/Wp and rsPb_Lp/Wp). Three months after inoculation, 16s rDNA sequencing identified Lp as the only microbe in the Pb sauce regardless of the salt used. Although Wp withstood the growth-inhibiting effects of other microbes, it did not survive in brine. The ssPb_ and rsPb_Lp/Wp characteristics (average pH 6.1, sugar content 32 Brix, and salinity 27.8 %) resembled those of commercial fish sauce products. It contained proline (491.02 ㎎/100 g), and 17 other amino acids. Preservative (e.g., benzoin, 4-hydroxybenzoic acid, sorbic acid, and tar pigment) levels complied with the Korean Food Standards Codex. The Lp/Wp inoculation increased gamma-aminobutyric acid levels and reduced adipose accumulation. The antioxidant activity was highest (69.4 %) in ssPb_Lp/Wp. Our study demonstrated the potential of Pb- and/or other insect-based sauces and the validity of applying our method to the development of such products.

니코틴 대체요법군과 니코틴 대체제 및 부프로피온 병용투여군 간의 금연 6주 후 체중변화의 차이

연구배경: 부프로피온(Bupropion)의 금연 후 체중증가 억제효과는 이미 알려져 있지만, 니코틴 대체요법과 부프로피온의 병용요법 시에도, 니코틴 대체요법만 적용한 군보다 유의한 효과를 보이는지에 대한 연구는 드물었다. 국내 보건소 금연클리닉 사업을 통하여 이에 대해 알아보고자 하였다. 방법: 2007년 1월 부산의 일개 보건소 금연클리닉을 방문하여 5개월간 금연에 성공한 70명의 남성을 대상으로 니코틴 대체요법을 시행 받은 군 32명과 니코틴 대체요법과 부프로피온을 함께 시행 받은 군 38명에서 금연 전후의 체중, 체질량지수, 호기 일산화탄소량, 혈압을 조사하였다. 결과: 양 군의 비교에서 니코틴 대체제 단독요법군과 부프로피온과의 병용요법군의 체중증가의 기울기 및 체질량지수 증가의 기울기에는 유의한 차이가 없었다. 금연 후 6주째의 체중은 연령(r=−0.536, P<0.001), 흡연기간(r=−0.505, P<0.001)과는 유의한 음의 상관관계를 나타내었고, 하루 평균 흡연량(r=0.312, P<0.01) 및 첫 방문시 체중(r=0.985, P<0.001)과는 양의 상관관계를 보였다. 결론: 니코틴 대체제 단독요법군 및 니코틴 대체제와 부프로피온의 병용요법군의 금연 6주 후 체중 증가율에는 유의한 차이가 없었다. Background: The suppressive effect of bupropion for weight gain after smoking cessation was already known, but studies about whether the combination therapy of nicotine replacement therapy and bupropion has better suppressive effect for weight gain after smoking cessation than nicotine replacement therapy alone have been rare. The purpose of this study was to evaluate this subject along with a domestic project for smoking cessation in Republic of Korea. Methods: 70 males had started smoking cessation from January in 2007, and succeeded in ceasing smoking for 5 months by visiting a smoking clinic of a health center in Pusan. The patients were divided into two groups which are the group of nicotine replacement therapy alone and nicotine replacement therapy with bupropion therapy. Weight, body mass index, expiratory carbon monoxide amount and blood pressure of two groups were compared and analyzed. Results: The rates of increment of weight of two groups had no significant differences. Negative correlation was represented between the average of weight at the 6th week and the averages of age and duration of smoking. Positive correlation was represented between the average of number of cigarettes and baseline weight. Conclusion: Nicotine replacement therapy alone and nicotine replacement therapy with bupropion therapy have the similar rate of increment of weight after 6 weeks of smoking cessation.

As COVID-19 is prevalent for a long time until 2022, the number of people who have experienced the aftereffects of COVID-19 is increasing. Since most of them experience the aftereffects of the nervous system with close experience in space, this study attempts to grasp the relationship between residential space and the healing environment from a neuroarchitectural perspective to heal the aftereffects of the nervous system. As for the research method, a survey was conducted on 160 college students at Y University. As a result of the study, the independent sample t-test was found to be significant in color, texture, shape, and all other areas to heal memory and concentration decline according to gender, and it is judged that there is a difference in creating a healing environment in cognitive aspects. In addition, depending on gender, most aftereffects differ in the importance of visual and nature-related healing environmental factors, so it is thought that visually influencing various things and creating an environment close to nature will play an important role in curing aftereffects.

본 연구는 스마트팜에 대한 개념과 사례를 살펴보고, 이를 통해 지역형 스마트팜 공간환경디자인 방법을 제안하는데 목적이 있다. 이를 위해 현재 대표적 스마트 팜으로 인정받고 있는 사례를 중심으로 지역 환경과의 관계에서 공간 환경이 어떻게 계획되어 있는지 조사·분석하였다. 연구결과를 살펴보면, 공간환경계획 시 햇빛에 대한 노출과 투과성 재료와 친환경재료 등으로 지역 환경을 최대한 활용하여 경제성을 높여야 한다. 또한 외부환경 유입을 위한 계단식 형태와 식물 재배를 위한 단열 및 보온, 공기질 개선을 고려할 필요가 있다. 빛과 열순환을 위한 공간환경이 구축되어야 하며, 사용되는 인공조명을 통해 아름다운 야관경관을 연출하는 것도 고려되어야 한다. 이러한 연구결과를 토대로 지역성을 고려한 공간별 세부적인 공간환경디자인 가이드라인을 제시하였다. The purpose of this study is to investigate the concept and case of smart farm, and to propose a regional smart farm space environmental design method. To this end, we investigated and analyzed how the spatial environment was planned in relation to the local environment, focusing on the cases that are recognized as representative smart farms. According to the results of the study, the local environment should be maximized by using sunlight, transparent materials, and eco-friendly materials when planning the space environment. Furthermore, it is necessary to consider the gradual shape of the inflow into the external environment, insulation and heat retention for plant cultivation, and improvement of air quality. It should also be considered to create a spatial environment for light and heat circulation, and to create a beautiful landscape through artificial lighting. Based on the results of this study, detailed spatial environmental design guidelines for each space are presented.
