We compiled and analyzed long-term time-series data collected in Korea to evaluate changes in oceanographic conditions and marine ecosystems near Jeju Island (33°00`-34°00` N, I 25°30`- I 27°30` E) from 1981 to 2010. Environmental data included depth-specific time series of temperature and salinity that have been measured bimonthly since 1961 in water columns at 175 fixed stations along 22 oceanographic lines in Korean waters by the National Fisheries Research & Development Institute, and time series of estimated volume transport of the Tsushima Warm Current (TWC) and Korea Strait Bottom Cold Water(KSBCW) for the period from 1961 to 2008. We analyzed the species composition in terms of biomass of fish species caught by Korean fishing vessels in the waters near Jeju Island(l981-2010). Data were summarized and related to environmental changes using canonical correspondence analysis (CCA). The CCA detected major shifts in fish community structure between 1982 and 1983 and between 1990 and 1992; the dominant species were a filefish during 1981 - 1992 and chub mackerel from 1992 to 2007. CCA suggested that water temperature and salinity in the mixed layer and the volume transport of the TWC and the KSI3CW were significantly related to the long-term changes in the fish community in the waters off Jeju Island. Fish community shifts seemed to he related to the well-established 1989 regime shil`t in the North Pacific. Further studies are required to elucidate the mechanisms driving climate change effects on the thermal windows and habitat ranges of commercial species to develop fisheries management plans based on reliable projections of long-term changes in the oceanographic conditions in waters off Jeju Island.
모의실험을 통한 동남해안 대구 (Gadus macrocephalus)의 가입당 생산 분석

We derived biological reference points for Pacific cod Gadus macrocephalus in southeastern Korean waters by applying a yield-per-recruit analysis based on a daily simulation that adopted size-dependent fecundity, growth, and natural mortality functions, This showed that the yield per recruit of Pacific cod can be maximized at an instantaneous rate of fishing mortality (F)=0.37 yr` under the current regulations, where the minimum catch size (L)30 cm in total length (TL), The maximum economic yield was estimated to be attained at L=35-45 cm TL, if F>1 yr` but at Le=z3540 cm TL, if F<l yr`. Despite great uncertainty in the stock assessment, to develop fisheries management plans for the sustainable exploitation of Pacific cod in southeastern Korean waters, it is necessary to estimate F using capture-recapture or other expedient methods.
표지방류 조사를 통한 거제 외포 주변해역 대구 (Gadus macrocephalus) 자원량과 어획사망률 추정

We estimated the population size and fishing mortality of Pacific cod Gadus macrocephalus during the spawning season in waters off Woipo, Geoje Island, Korea, using a mark-recapture method. We marked and released 51 cod>50 cm in total length; six were recaptured by local fishermen during the period from December 15 to 31, 2009. The estimated population size was ca. 180,000 and the fishing mortality of the exploitable cod was 26%. Although we could assume a closed population due to the short survey period, we evaluated the uncertainty in the estimates by applying bootstrap resampling because the sample size was small. The estimated 95% confidence interval was 94,000-568,000 for the population size and 8-49% for fishing mortality. Our study demonstrated that the application of mark-recapture methods and bootstrap resampling can be useful in stock assessment for fisheries management in Korea, but requires a larger sample size, spatially extensive coverage, and sophisticated mark-recapture models based on a refined sampling design for reliable stock assessment and biological reference points in sustainable cod management.

The age and growth of rabbit fish, Siganus fuscescens were investigated from samples monthly collected in the coast of Jeju island, Korea from February to December 2012. Ages were determined from annuli in otoliths, and annuli were formed in one or two months immediately after spawning once a year. Also, main spawning period was estimated between July and August, thus rings were considered as annual marks. The von Bertalanffy growth equations estimated from a non-linear regression method were Lt=37.24 (1-e-0.33(t+1.24)) (R2=0.92) for female and Lt=31.44(1-e-0.45(t+1.23)) (R2=0.90) for male, and the growth between female and male was different.

본 연구는 소비자가 추구하는 친환경 기능성 자연 치즈제품의 다양한 아이템 개발을 위해 녹차를 자연 치즈에 접목시킴으로써 녹차의 약리 효과가 부여된 기능성 치즈의 개발 가능성 검토를 위해 실시되었다. 이 녹차 첨가 자연 치즈는 약 4개월간 숙성하면서 유산균의 생육과 pH, 질소화합물의 변화 및 단백질의 분해도 측정 및 카테킨 함량과 관능평가를 통하여 제품의 품질 평가를 실시하였다. 유산균 수는 숙성 12주까지 녹차 1.0% 이상을 첨가한 구에서 대조구에 비해 다소 낮은 유산균 수를 보였으나, 숙성 16주에는 대조구와 녹차 첨가구의 유산균 수 차이가 없었다. pH 5.0~5.3이던 것이 숙성 15주에는 pH 5.9~6.3 범위를 나타냄으로써 숙성이 진행됨으로 점차 상승하였다. 치즈의 숙성 기간 중 질소화합물의 변화는 비단백태 질소화합물(NPN)의 경우 숙성 시작보다 단백질 함량이 증가하였고, WSN과 NCN에 비해 다소 많이 함유되어 있었다. 전기영동 결과, 치즈의 숙성이 진행됨에 따라 α□-casein, β-casein 및 □-casein 등 모든 종류의 casein이 점진적으로 분해되었고, 특히 α□-casein은 숙성 8주 후부터는 거의 분해되어 다른 casein에 비해 더 빠른 속도로 분해되는 것을 알 수 있었다. 카테킨 화합물의 종류로는 epigallocatechin(EGC), catechin(+catechin), epicatechin(EC), epigallocatechin gallate(EGCG), epicatechin gallate(ECG)등 5종이 동정되었으며, 이 중 EGC 함량이 12.39 mg%로 나타났다. 치즈에 함유된 총 카테킨 함량은 녹차 첨가량에 따라 증가하였으며, 치즈의 총 카테킨 함량은 각각 24.1, 46.0 및 103.9 mg%이었다. 녹차 첨가구 중 가장 선호도가 높은 구는 녹차 1.0% 첨가구로 맛 2.61, 외형은 2.28, 향미는 2.44, 조직은 2.33의 평가를 받았으나, 첨가구 간의 유의한 차이는 없었다. 치즈의 향미는 대조구 및 첨가구간에 유의적 차이를 보이지 않았다. 이상의 결과를 종합해 볼 때 녹차를 첨가한 아펜젤러 치즈에서 치즈로 이행된 카테킨 성분이 숙성 종료 후에까지도 치즈 내에 일정량 보전됨이 확인되었고, 녹차 첨가는 아펜젤러 치즈의 숙성 과정에 크게 영향을 미치지 않았으나, 맛과 외관, 물성 등 관능적 기호도를 떨어뜨리는 결과를 가져와 향후 자연 치즈 제조 시 첨가 수준 및 가공 방법을 달리하는 등 관능적 특성 향상을 위한 추가적인 연구가 이루어 진다면 녹차 함유 기능성 자연 치즈의 제품 개발이 가능할것으로 기대되었다. Appenzeller cheese samples were prepared by addition of 0.5, 1.0, and 2.0% green tea (Camellia sinensis, CS) powder and control cheese. We examined various quality characteristics of the novel cheese, such as viable-cell counts, pH, water-soluble nitrogen (WSN), non-casein nitrogen (NCN), non-protein nitrogen (NPN), and catechin level during maturation for 16 weeks at 14 ℃. To develop a Korean natural cheese containing green tea powder, we also analyzed the changes in the polyacrylamide gel electrophoresis pattern, chemical composition, and sensory qualities. The viable cell counts of the samples were not significantly different. Until the 3rdweek, the pH of the CS cheese decreased with an increase in the maturation time. However, the pH gradually increased by the 12th week, while WSN, NCN, NPN also increased. The WSN, NCN, NPN, and catechin values for the CS cheese samples were significantly higher than the values for the control cheese. The polyacrylamide gel electrophoretic pattern of caseins for the CS cheese indicated that this cheese degraded more rapidly than the control cheese did. In the sensory evaluation, cheese with 1.0% CS powder showed the highest scores in taste and appearance and good scores in flavor and texture. These results indicate that 1.0% CS is the optimal value for addition to cheese, and cheese containing 1.0% CS shows good physiological properties and reasonably high overall sensory acceptability.
