        연구논문: 문헌에 수록된 전약(煎藥)에 관한 연구

        This study was aimed at research on Jeonyak (煎藥) appearing in the bibliography. It was during the Goryeo Dynasty that Jeonyak was first mentioned in literature. At this time, Jeonyak was served for consumption during Palgwanhoe. The ingredients and recipes of Jeonyak were listed for the first time in Suunjapbang, a book written by Kim Yu during the Joseon Dynasty. Since then, they have been found in various books and materials. During the Joseon Dynasty, Jeonyak was made in Neuiwon, a medical administrative organization in the palace, and administered as a seasonal food on Dongji Day in the winter. The king gave various to his guests or subjects as special gifts. As a result, Jeonyak became well known to many people and even to those in foreign countries. Jeonyak is a Korean traditional medicated diet food made from decocted beef-feet, bone stock, and other spices, including jujube paste, honey, ginger, pepper, clove, and cinnamon. Jeonyak has a long 800-year history, and its ingredients and recipes have changed only gradually. Milk was a major ingredient of Jeonyak during the Goryeo Dynasty, but glue and gelatin were added in the Joseon Dynasty. Since then, recipes have mainly used gelatin made from beef-feet, skin, beef-bone, and so on. In conclusion, Jeonyak has an 800-year history as a special medicated diet food (藥膳) served seasonally on Dongji Day in the winter.

        To investigate quality characteristics of kimchi prepared for the winter around Chonnam area, home made kimchi samples collected from 22 area, and they were stored at -1±1℃. The results were as follows : The pH and acidity of kimchi samples were 4.75 and 0.84%, respectively. Salt concentration was 3.50% and in Redox potential measurement, Eh value was -134.08mV. Ascorbic acid and reducing sugar contents were 10.18mg% and 13.25mg%, respectively. In color measurement. L value was 52.29 and a and b values were 19.68 and 27.69, respectively. Total viable count was 5.5 x 10^(6) and lactic acid bacteria count and yeast were 4.6 x 10^(5) and 8.8 x 10^(5), respectively. Properties of hardness of kimchi measured instrumentally was 9.26kgf. Alcohol insoluble solids(AIS) content was 5.53% and hot water soluble pectin(HWSP) content and sodium hexametaphosphate soluble pectin(NaSP) content were 17.35% and 29,65%, respectively, also hydrochloric acid soluble pectin(HCSP) content was 53.0%.

        광주지역 중학생의 식품표시에 대한 인식 및 이용실태

        본 연구는 2009년 9월 7일부터 9월 19일 사이에 광주광역시 소재 중학교 남학생과 여학생 420명을 대상으로 중학생의 식생활태도와 영양지식의 수준별 식품표시에 대한 인식과 이용실태의 차이점을 알아보았다. 첫째, 중학생의 식생활 태도는 총 75점 만점에 평균 49.47점으로 양호한 편이었다. 성별 식생활태도는 남학생 49.78점, 여학생 49.13점으로 남학생과 여학생 간의 유의한 차이는 나타나지 않았다. 또한 학년별 식생활태도는 1학년이 50.68점, 2학년 49.49점, 3학년 48.10점으로 1학년의 식생활태도가 가장 좋은 것으로 나타났으나 유의한 차이는 없었다. 둘째, 중학생의 영양지식 정도는 총 15점 만점에 평균 10.88점으로 나타나 양호한 편이었다. 성별 영양지식의 평균은 남학생 10.65점, 여학생 11.15점으로 여학생이 남학생보다 영양지식의 수준이 높았다(p<0.01). 또한 학년별 영양지식의 평균은 1학년이 10.98점, 2학년은 10.65점, 3학년은 11.03점으로 3학년의 영양지식이 가장 높았다. 셋째, 중학생의 식품표시 확인 여부는 ‘확인한다’가 62.9%로 나타났다. 식품표시는 남학생보다는 여학생이 더 확인하였고, 학년별로는 2, 3학년에 비해 1학년이 더 확인하는 편이었다. 또한 식생활태도가 좋은 그룹이 유의한 차이(p<0.001)를 보이며 식품표시를 더 많이 확인하였으며, 영양지식 점수가 높은 그룹이 식품표시를 더 확인하였다. 식품표시를 확인한다고 답한 대상자들 중 가장 먼저 확인하는 식품표시 내용은 유통기한이 54.9%로 가장 많았고 제품명, 가격 순이었다. 식품표시를 확인하는 이유 역시 유통기한(제조일자)을 확인하기 위해서가 61.6%로 가장 많았고 영양성분의 정보를 얻기 위해, 보관 시 주의할 점을 알아보려고, 가격이나 중량 등을 비교하려고 순이었다. 식품표시를 확인하지 않는 이유는 아무 생각 없이 습관적으로 구매하는 편이 43.8%로 가장 많았고, 식품표시에 관심이 없기 때문 30.9%, 식품표시 내용을 이해하기 어렵기 때문이 17.3% 순으로 나타났다. 식품표시에 대한 만족도는 총점 30점 만점중 16.20점으로 중간 정도였다. 식생활태도가 좋은 그룹은 17.54점, 중간 그룹은 16.32점, 나쁜 그룹 14.86점으로 만족정도에 있어 그룹 간 유의한 차이(p<0.001)가 나타났다. 즉, 식생활태도가 좋은 집단의 식품 표시에 대한 만족도가 높았다. 영양지식 수준별 그룹의 만족 정도는 높은 그룹이 15.79점, 중간 그룹 16.08점, 낮은 그룹 17.08점으로 영양지식 수준이 낮은 그룹의 만족도가 영양지식 수준이 높은 그룹에 비해 높았다. 넷째, 식품과 영양표시의 내용에 대한 이해도는 총 7점 만점에 4.71점으로 높은 편이었다. 식생활태도로 분류한 그룹별 식품과 영양표시의 내용에 대한 이해도는 중간 그룹의 실제 이해도가 가장 높았고 오히려 좋은 그룹의 이해도는 세 그룹 중 가장 낮았다. 영양지식 수준으로 분류한 그룹별 식품과 영양표시의 내용에 대한 이해 정도는 영양지식 수준이 높은 집단이 높았다. 이러한 결과 중학생의 식생활태도와 영양지식 수준은 양호한 것을 알 수 있었다. 식생활태도와 영양지식 수준이 높은 집단의 식품표시에 관한 인식이 높고 식품표시를 확인하는 비율 역시 높음을 알 수 있었으나 실제로 식품과 영양표시를 이해하는 정도는 그보다 낮았다. 따라서 중학생들이 식품표시를 확인하고 구입할 수 있도록 실천위주의 교육이 필요하고, 식품표시 형식 또한 쉽게 이해할 수 있고 눈에 잘 띄는 표시기준과 표시방법을 마련하고 믿을 수 있는 식품영양표시제의 정착을 위해 정부나 관련기관, 기업, 학교의 노력이 필요하다 하겠다. This study was conducted to investigate dietary attitude, and nutritional knowledge of middle school students in Gwangju and examine their perception and utilization of food labeling systems. The total and mean dietary attitude scores were 75 and 49.47, respectively. The total and mean nutrition knowledge scores were 15 and 10.88, respectively. Girls showed significantly higher nutrition knowledge than boys (p<0.01). Overall, 62.9% of respondents checked food labeling, and there were significant differences in dietary attitudes among groups that did and did not checking labeling (p<0.001), with higher dietary attitude being associated with checking the label. Moreover, higher nutritional knowledge was associated with checking the food label. Individuals who checked the food label considered the expiration date (54.9%), product name (14.4%) and price (10.2%). The main reasons for checking food labeling were (in descending order) to confirm the expiration date (61.6%), determine the ingredients and nutritional information, learn how to store the product, and compare the price and weight with other products. The overall satisfaction with the food labeling system was 16.20 out of 30, and significant differences (p<0.001) were observed among individuals with high, moderate and low dietary attitudes, as indicated by satisfaction scores of 17.54, 16.32 and 14.86, respectively. Individuals with high, moderate and low dietary attitudes had nutritional knowledge scores of 15.79, 16.08, and 17.08 respectively. The overall score for understanding nutrition labeling was 4.71 out of 7, and the understanding differed significantly among groups (p<0.01), with those with moderate food attitudes having the highest score.

        배즙과 배 건조분말을 첨가한 양갱의 물리화학적 특성

        This study was conducted to investigate the physicochemical characteristics of yanggaeng prepared with pear juice and dried pear powder. The proximate composition and total polyphenol content, antioxidant activities, Hunter`s color values, texture, sensory properties of pear yanggaeng variants [pear juice (PJ), pear juice and hot-air-dried pear powder (PJH), pear juice and freeze-dried pear powder (PJF) yanggaeng] were examined. The moisture content was highest (27.9%) in the control (C) yanggaeng, but the latter`s energy and carbohydrate content were lower than in the pear yanggaeng variants. The differences between the pear yanggaeng variants were not significant. The total polyphenol content was highest in the 20.7 mg/100g PJF yanggaeng. The antioxidant activities of PJF yanggaeng were higher than those of the other pear yanggaeng varients. The Hunter color value results showed that the lightness (L) values were highest in C yanggaeng whereas the redness(a) and yellowness(b) values were highest in PJH yanggaeng. The springiness in texture was lowest in C yanggaeng and not significant in the others. The hardness and chewiness were highest in PJH and PJF yanggaeng, but adhesiveness was lowest therein. The results of the sensory test showed that PJF yanggaeng was the highest in flavor, color, taste, hardness, chewiness, and overal quality. Based on these results, it can be concluded that pear juice and freeze-dried pear powder yanggaeng has excellent physicochemical and antioxidant activities.

        묵은 김치 제조과정에서의 이화학적 및 미생물학적 특성 변화

        To develop the low-temperature and long-term fermented kimchi, kimchi was prepared according to the recipe of a specific ratio of major and minor ingredients and adjusted its salinity to 3.7%. Prepared kimchi fermented at 15±1℃ for 24 hours and transferred and fermented in a refrigerator only used to make low-temperature and long-term fermented kimchi at -1±1℃ for 30 weeks. During 30 weeks of fermentation the changes in physicochemical and microbiological properties of low-temperature and long-term fermented kimchi were studied. The initial pH of 6.47 decreased gradually and dropped to pH 4.0 after 14 weeks of fermentation, and then it maintained at same level. Acidity increased to 0.49% on 2 weeks of fermentation and kept at 0.47∼0.50% during 2 to 30 weeks fermentation. Salinity was slightly increased at early stage and started to decrease on 4 weeks of fermentation, and then it did not change. The change of reducing sugar content was closely related to the trend of pH change with a very high correlation coefficient(r=0.912). Lactic acid, citric acid, malic acid, succinic acid and acetic acid were major organic acids contained in low-temperature and long-term fermented kimchi. Vitamin C content decreased at initial stage of fermentation and then slightly increased up to the maximum of 22.3㎎% on 8 weeks of fermentation. In color measurement, L value continued to increase during the fermentation and reached at the highest of 55.45 on 22 weeks of fermentation, and a and b values of 3.62 and 4.54 also increased to 31.26 and 37.32 on 30 weeks of fermentation, respectively. Total microbial count increased slowly from beginning and was the highest on 4 weeks of fermentation, and then began to decrease slowly. Count of lactobacillus spp. was highest after 6 weeks, but count of Leuconostoc spp. was highest on 2 weeks of fermentation, and then both showed a slow decrease. Yeast count wasn't increased until 4 weeks of fermentation and then increased rapidly to get the highest on 10 weeks of fermentation.

        죽순의 화학적 특성 및 염장 죽순 제조과정 중 성분 변화

        죽순의 가공 식품으로서의 적합성을 규명하고 염장죽순에 대한 과학적 자료를 마련하기 위차여 왕죽, 분죽, 맹종죽 죽순의 화학적 특성과 염장 죽순 제조 과정에서의 화학적 성분변화를 검토하였다. 수분. 조지방 함량은 염장기간에 따라 서서히 감소하였고 조단백. 회분의 함량은 증가하였으며 pH는 염장 80일째까지 감소하였다가 80일 이후부터는 다시 증가하였고 염 농도는 맹종죽 죽순이 가강 높은 염 농도를 보였으며 숙성이 진행되는 60일째 최고 염 농도를 보였다가 그 이후는 조금씩 감소하였다. 탄닌과 아스코르브산 함량은 염장 중에 계속 완만한 감소를 보였다 유리 아미노산의 조성은 세린 아르기닌. 알라닌. 로이신. 티로신이 주요 아미노산으로 분석되었고, 숙성이 진행됨에 따라 총 유리아미노산 함량은 염장 120일째까지 지속적으로 감소하였다 특히 아르기닌이 가장 빠른 감소 폭을 보였으며 세린. 알라닌. 로이신 등은 서서히 감소하였다 총 유리아미노산의 함량은 원료 죽순 중 왕죽 죽순이 1.060.18㎎/100g으로 가장 높은 함량을 나타냈고 다음으로 맹종죽 죽순이 612.29㎎/100g. 분죽 죽순이 539.76㎎/100g의 순으로 나타났으며 염장 죽순은 맹종죽 죽순이 76.60㎎/100g으로 가장 높았고 분죽 죽순이 44.43㎎/100g.왕죽 죽순이 43.70㎎/100g 나타나 염장 중 유리 아미노산의 감소가 큰 것을 알 수 있다. 무기성분의 경우 Mg, Ca. Na을 제외한 대두분이 원료 죽순에서 높은 함량이 분석되었는데 윈료 죽순은 K>P>Na>Ca>Mg>Fe>)Zn>Mn>Ge>Gu의 순으로 K의 함량이 가장 높았으나 숙성이 진행됨에 따라 P. Fe. Zn. Mn, Ge, Gu의 함량은 서서히 감소하고 K, Mg. Na. Ca의 함량은 증가하여 염장 l20일째에」Na>K>Ca>P>Fe>Ge>Mn>Zn의 순으로 Na 함량이 크게 증가하였다. In result of chemical properties of bamboo shoots and changes of chemical components of salted bamboo shoots during 120 days salting, the contents of moisture, crude fat, tannin and ascorbic acid were decreased but those of crude protein, crude ash and salt concentration were increased during salting. The pH was decreased in 80days-past of salting and after that, gradually increased. The main free amino acids of bamboo shoots were serine, arginine, alanine, leucine, and tyrosine. The content of total free amino acid was rapidly decreased in 80days-past of salting and after that, slowly decreased. Wang bamboo shoots was the highest as 1060.18㎎/l00g in content of total free amino acid. The main mineral elements were K, P, Na, and Mg. The contents of Fe and K were the highest among them. The contents of P, Fe, Zn, Mn, Ge and Cu were decreased but K, Mg, Na and Ca were increased during salting. When fresh bamboo shoots were compared with salted bamboo shoots, fresh bamboo shoots contained the contents of moisture, crude protein, crude fat, tannin and ascorbic acid more than salted bamboo shoots did, but the less the contents of ash, fiber and salt concentration.

        송순차의 화학적 특성 및 품질관련 효모의 동정

        In order to optimize the quality of pine sprout tea, its chemical properties were analyzed and the yeasts associated with the quality of pine sprout tea during the storage were isolated and identified. In proximate composition moisture content was 20.13%, but other components except sugar were relatively low. Sugars such as glucose(30.15%), fructose(19.57%), and sucrose(9.27%) were major sugars which contained up to 76.73%. Total vitamin C and soluble tannin contents were 11.31 ㎎% and 68.31 ㎎%, respectively. Thirteen kinds of free amino acids were detected, but they were contained only in trace. In fatty acid composition 64.69% of fatty aids composed mainly of saturated fatty acids and major fatty acids were oleic acid, palmitic acid, and tricosaenoic acid. Among 8 mineral elements detected, calcium content was highest with 79.00 ㎎% and followed by potassium(45.16 ㎎%) and magnesium(8.93 ㎎%). The sweetness of pine sprout tea was gradually decreased from 70˚ Brix to 63˚ Brix and 3.2% of ethanol at the initial concentration was increased to 6.0% during the storage of 40 days. The yeasts associated with the quality and alcohol formation of pine sprout tea during the storage were identified by Biolog Microstationl TM system, as Zygosaccharomyces rouxii, Kluyveromyces lodderae, Kluyveromyces wickerhamii, and Pichia fluxuum.

      • 광주시내 업종별 음식점의 위생상태 및 식중독원인 세균의 분포 특성

        업종별 음식점 주방의 위생상태는 일식>중식>한식의 순이었고 개인위생의 경우는 일식>한식>중식의 순이었는데 주방 및 종업원의 위생상태를 향상시키기 위해서는 음식점 규모의 대형화, 45℃ 이상의 온수공급, 주방시설의 표준화, 위생비닐장갑의 착용, 및 유니폼 착용이 신속하게 이루어져야 할 것이다. 업종별 대중음식점의 주방기구중의 세균분포는 전반적으로 일반세균수가 높게 나타났고 특히 대장균군수가 높게 나타났는데 음식물이 아니고 조리기구이긴 하지만 우리 음식점의 위생상 문제가 많은 것으로 생각된다. 미국 육군 Natick연구소가 제시한 음식물의 미생물 기준한계인 1 ×10??마리 이하, 대장균수가 100마리 이하와 비교할때 일반세균수의 경우는 아주 만족할만한 위생상태로 평가되었으나 대장균수는 개숫물의 경우 업종과 관계없이 높게 나타났고 행주와 칼의 경우 일식음식점에서만 높게 나타났으며 도마의 경우는 모두 100마리 이하로 양호한 위생상태로 평가되었다. 한식 전문음식점간의 세균수가 큰 차이를 보인 것은 규모와 운영방법이 서로 다르기 때문으로 앞으로 한식음식점에 대한 시설 및 환경개선에 대한 노력이 요구되었다. 또한 일식음식점간에는 일반세균수의 분포가 크게 다는 것으로 조사되었는데 특히 개숫물, 행주 및 도마중에 존재하는 미생물수가 크게 차이가 있었다. 등급별 한식음식점의 세균분포는 호텔급 음식점> 일반대중급 음식점> 여관급 음식점의 순으로 나타나 업소규모가 클수록 위생시설 및 위생습관의 수준이 높아 위생상태가 양호한 것으로 분석되었고 여관급음식점의 경우 위생상태가 낮은 것은 이용빈도가 낮은 것이 그 원인이 아닌가 생각되었다. Sanitary evaluation of kitchen area in different types of restaurants was the best at Japanese style restaurants and the worst aat Korean style restaurants. In personal hygiene Japanese style restaurant were evaluated as the best, but Chinese style restaurants were evaluated as the worst. Total and coliform bacterial counts were mostly showed high levels at all types of restaurants and especially this tendency was predominated in coliform counts. As compared to the standards suggested by U.S. Army Natick, however, total bacterial counts in all of supplies were evaluated as the satisfactory state. On the other hand, coliform counts in dish-washing water were much higher than the standard, which were not affected by the types of restaurant, and Japanese style restaurants were higher in wiping cloths and knives, but cutting boards were evaluated as satisfactory state with the counts less than 1.0 ×10².Bacterial counts in Korean style restaurants were greatly different depended on the size or type of restaurant. Total bacterial counts in Japanese style were also different among restaurants, especially in dish-washing water, wiping cloths, and cutting boards. According to the results of the evaluation of Korean style restaurant, bacterial distribution based on the class of restaurants, classified as hotel, motel, and public classes, hotel class restaurants showed lower levels of bacterial counts than public class. This result suggested that the larger and higher classes of restaurants maintained the satisfactory state without potential hazards.

        재배방법이 다른 미나리의 항세균 활성

        Antibacterial activities in each part of watercress(Oenanthe javanica D.C.) grown under different culture conditions were measured to determine the possibility to use watercress as a resource to develop the antibacterial substance. The leaves of watercress were extracted with methanol and the methanol extract was further fractionated with various organic solvents. Antibacterial activities against Shigella dysenteriae ATCC 9361 in all fractions were determined according to the agar diffusion method using paper disc. Methanol extract of watercress leaves was more effectively inhibited the growth of the tested bacteria than the extracts of roots or stems at the concentration of 0.5 g eq./disc, and the extract of watercress from Hwasoon was the most effective one as compared to others. Phenolic and neutral fractions fractionated from methanol extract of watercress had a considerable inhibiting activity on the growth of the bacteria, but acidic and basic fractions did not show any inhibitory effect. Minimum inhibitory concentrations of phenolic and neutral fractions against Shigella dysenteriae ATCC 9361 were 400 ㎍/disc and 550 ㎍/disc, respectively.
