        품종이 다른 국내산 쌀을 이용한 쌀컵케이크의 품질 특성

        국내에서 기능성 쌀로 개발된 설갱, 고아미, 하이아미 쌀과 다수확품종인 통일계 한아름, 일반계 드래찬과 한마음의 베이킹 가공적성을 알아보기 위하여 낟알로 수침, 건조한 후 제분하는 방법으로 쌀가루를 제조하여 쌀가루의 이화학적 특성과 컵케이크를 제조하여 품질 특성을 비교하였다. 하이아미는 단백질 함량가장 높고 드래찬과 한마음은 지방과 회분함량이 높았다. 아밀로스 함량은 고아미 쌀가루가 33.84%로 가장 높고 설갱 쌀가루는 물 결합 능력은 가장 낮았으나 팽윤력과 용해도는 가장 높았다. 쌀가루 호화액의 점성은 모든 값에서 고아미 쌀가루가 가장 낮은 점성을 보였으며 setback 점성은 설갱과 고아미가 낮았다. 쌀컵케이크의 비체적은 고아미와 하이아미가 낮았으며 설갱 컵케이크는 윗면이 들어가고 내부 기공의 균일성이 나빴고 고아미와 하이아미는 내부가 밀집되어 있었다. 컵케이크의 텍스처 특성은 설갱은 경도가 가장 낮고 부착성이 나타났으며 회복력이 가장 낮은 반면 고아미와 하이아미는 경도, 탄성 씹힘성이 높았다. 차이조사와 선호도 조사 결과 한아름은 기공의 균일도, 부피팽창이 잘되고 전반적인 선호도가 가장 좋았으며 그 다음이 드래찬과 한마음컵케이크 이었다. 위의 결과로부터 쌀가루의 단백질 함량, 아밀로스 함량, 쌀가루 호화액의 cold 및 setback 점성이 쌀가루의 베이킹 가공성에 영향을 줌을 확인하였다. The physicochemical properties of rice flours and quality characteristics of rice cupcake were investigated using the domestic rice varieties Goami, Hanareum, Hanmaeum, Deuraechan, Seolgaeng, and Haiami. Protein and amylase contents were highest in. The final and setback viscosities of Haiami, Hanmaeum, Deuraechan, and Hanareum were higher than those of Goami and Seolgaeng. The specific volume of rice cupcakes was lower with Goami and Haiami than with the others. Seolgaeng cupcake had a dented surface and irregular air pockets, while the Hanareum cupcake was well shaped and had uniform air pockets. The hardness, springiness, and chewiness of Goami and Haiami cupcakes were higher than those of the others, while adhesiveness was observed only in Seolgaeng cupcake. The overall preferences scores of rice cupcakes prepared from Hanareum, Hanmaeum and Deuraechan were higher than for the other cupcakes (p<0.05). These results suggested that amylose content, and final and setback viscosities of rice flour are very important factors in rice cupcakes.

        숙성에 따른 토종 복분자 딸기의 특성

        토종 복분자 딸기 열매를 이용하여 건강식품을 개발하기 위하여 성숙시기에 따라 토종 복분자 딸기 열매의 구성성분, 이화학적 특성과 항산화활성을 조사하였다. 숙성시기에 따라 미숙과, 중숙과 및 완숙과를 전남 곡성군에서 수확하여 동결건조하여 분말을 제조하고 분쇄과정에서 씨를 분리하여 비교하였다. 완숙된 토종복분자 딸기의 열매분말은 밝은 적색을 띠었으나 북미산 복분자 딸기 열매 분말은 칙칙한 검붉은색이었으며 토종 복분자 열매 씨는 북미산에 비해 더 부드럽고 작았다. 숙성시기에 따라 조단백질, 조지질과 총 당 함량은 증가하였고 회분과 총 식이섬유함량은 감소하였다. 유리당은 fructose, glucose와 rhamnose가 분석되었는데 fructose가 가장 많았다. 아미노산은 aspartic acid와 glutamic acid를 많이 함유하고 있으며 필수아미노산 중에는 leucine함량이 높았다. 무기질 중 위해금속은 검출되지 않았고 성숙에 따라 감소경향을 보이며 K와 Ca함량이 높았다. 유기산도 성숙에 따라 감소하였으며 citric acid가 가장 많은 비율을 차지하였다. 총 페놀함량은 미숙과(12.84 mg/100 g)가 가장 높았고 중숙과와 완숙과(9.38, 9.66 mg/100 g)는 유사하였다. DPPH 자유라디칼 소거능으로 분석한 항산화활성은 86.21-81.22%로 미숙과가 높았고 성숙에 따라 감소하였다. To develop a healthy functional food containing Rubus coreanus fruit (RCF) powder with different degrees of ripening, the composition, physicochemical properties, and antioxidant activity of native RCF during ripening were investigated and compared with Rubus occidentalis fruit (ROF). Ripened RCF was bright red in color, whereas ripened ROF was dull and dark red in color. The seeds of RCF were softer and smaller than those of ROF. Crude protein, crude lipid, and total sugar content of RCF powder increased with increased ripening time, whereas ash and total dietary fiber contents decreased with increased ripening time. Color differences increased with increased ripening. Eighteen types of amino acids were analyzed from RCF, and glutamic acid had the highest content. RCF powder had the highest level of potassium and calcium and did not contain any hazardous metals. Mineral and organic acid contents decreased according to ripening.

        미세 댓잎분말의 개발 및 색의 안정화

        To develop a color stable and fine bamboo leaf powder (BLP) as a functional green biomaterial, bamboo leaf (BL) purchased from Sasa borealis and cultivated in Damyang, Jeonnam was treated with different conditions and BLP was evaluated. The four treatments comprised of boiling in water, in zinc chloride, sodium bicarbonate, and vinegar solutions, BLP4 was treated with 2% $ZnCl_2$ for 1 h, BLP5 was treated with 1% $ZnCl_2$ for 2 h, and BLP6 was treated with 1% $ZnCl_2+10%$ NaCl for 1 h. The particle size distribution, ash content, water binding capacity, and color change after heating in acidic solution were compared to commercial fine green tea (GTP) and bamboo leaf powders (CBLP). The particle size (cumulative 90%) of BLP was finest in BLP4 followed by BLP6 < BLP5 < GTP < CBLP. The water binding capacity of GTP was the highest and that of BLP was negatively correlated with particle size. After heating in acidic solution, the color of commercial GTP and CBLP changed from bright green to olive green, but the treated BLPs remained bright green. Especially, the -a (greenness) values for the commercial powders decreased from 11.2-13.6 to 3.1-3.8, while those of the treated BLPs did not change.

        백미와 발아현미의 혼합비율이 압출성형 멥쌀가루의 이화학적 특성에 미치는 효과

        To develop the high quality gluten-free rice products with health functionality and desirable texture with moistness, the physicochemical properties of extruded rice flours prepared from the mixture of germinated brown and white rices were investigated. The domestic organic Samgwangbyeo was used to make white and germinated brown rices. White rice (WR) was dried after soaked for 6 h at $15{\pm}3^{\circ}C$ and mixed with germinated brown rice (GBR) with different mixing ratios (100:0, 75:25, 50:50, 25:75, 0:100). The operating conditions of twin screw extruder were 250 rpm of screw speed, $120^{\circ}C$ of barrel temperature, and 25% moisture content of rice flour. The ash, crude protein and crude lipid contents were significantly different (p<0.05) and those of extruded GBR were the highest values, but those of extruded WR were the lowest. The color difference of extruded WR based on white plate showed the lowest among them. The water binding capacity (334.16%), swelling power (8.83 g/g), solubility (33.13%), and total starch (79.50%) were the lowest in extruded GBR. The viscosities of all extruded rice flours by RVA were maintained during heating. The peak and total setback viscosities of extruded rice flours ranged 127-352 and 58.0-85.5 cP, respectively. The novel food biomaterial from germinated brown rice as well as white rice was developed by twin screw extruder. The extruded rice flours control the moistness to improve the texture and also have functional materials, dietary fiber, GABA, and ferulic acid, etc to increase quality of gluten free rice products.

        솔잎분말과 추출물을 첨가한 쌀 컵케이크의 항산화성과 품질 특성

        To develop the tailor made rice flour products for consumers with increasing functionality of pine needles, rice cupcakes were prepared with adding different contents of pine needle powder (PP) and extract (PE, by pressing pine needle). The physicochemical, textural, sensory properties, and antioxidative activities of rice cupcakes were investigated. The antioxidative activities of rice cupcakes with PP and PE were higher than those of the control and were significantly different with adding pine needle type (PP or PE). The specific volume of rice cupcakes increased with adding PP and PE, except for 10 g PP added cupcake. Textural properties were also significantly different with pine needle types and contents. On the sensory preference test data, the scores of the teens, the twenties, and the thirties were higher in PP added rice cupcakes (3 and 5 g added), but those in the forties, the fifties, and above the sixties were higher in PE added rice cupcakes (3 g added). From these above results, the PP addition improved the processing quality of rice cupcakes (under 10 g added), but reduced unique flavor of pine needle. It was suggested that rice products added with pine needle would be developed to consider consumer's age, type of pine needle and its content.

        대봉감 퓨레를 첨가한 우리밀 식빵의 품질 특성

        Daebong persimmon puree (DPP) prepared from removing the astringency of persimmon was used as a substitute for water when making the dough of white pan bread using domestic wheat flour, and the resulting, quality characteristics were investigated. The moisture content of DPP was 96.69%, and the dough was made by various levels of substitution of DPP for water (0, 10, 30, 50 and 100%). During fermentation, the expansion power of the dough decreased with increasing DPP levels (p<0.05). The volume, specific volume, baking loss, and the L and ${\Delta}E$ values of the crust and crumb of the breads also decreased with increasing DPP levels. The hardness and chewiness of the bread containing 100% DPP (without water) showed the highest values, but the springiness, cohesiveness and resilience showed the opposite trends. In the difference tests, all attributes except air cell uniformity were significantly different (p<0.05). Bread made with 100% substitution of DPP for water achieved the highest scores for flavor, taste and overall acceptability.
