Betulinic acid content of jujubes was determined in order to collect the basic data for the evaluation index of jujube beverages. For the determination of betulinic acid, ethylacetate extracts of dried juiube were pretreated with C_18 Sep-Pak^_ cartridge before HPLC of Nova-Pak^_ C_18 column and UV detector. The jujube samples were 4 cultivars from 4 area of Korea and 3 of unknown cultivars from China. The range of betulinic acid content of Korean jujube was 3.888mg% - 21.531mg% whereas Chinese 0.305mg% - 1.728mg%. Among the Korean cultivars Boeun from Chungbuk was found to have the lowest content of betulinic acid as 3.888mg% whereas Bokjo from Kyongsan was highest as 21.531mg%. In regional comparison of the betulinic acid content, jujube of Chungbuk region was found to have the lowest content and Kyongbuk, the highest.

Some extraction methods were evaluated to choose the best condition for preparing the dried extracts having protein-bound polysaccharides from Coriolus versicolor fruit body. The method invested were a cold extraction at room temperature for 24 hours; hot extractions at 80℃ and 100℃ for 4, 12, 24, and 48 hours, respectively; auteclaving at 121℃, 1 atm for 0.5, 1, 2 and 4 hours, respectively; extraction in household microwave oven for 0.5 and 1 hour. Among these, the most yield of dried extracts with protein-bound polysaccharides were obtained from the conditions carried at 100℃ for 48 hours and at 121℃, 1 atm autoclaving for 4 hours. The yields of dried extracts were estimated to 21.98% and 22.19%, and protein-bound polysaccharides to 14.77% and 15.10%, respectively. Dried extracts prepared from Korean and Chinese C. versicola at those conditions were compared for the yield of extracts and sugar and amino acid compositions. Dried extracts from Korean C, versicola was found to have high quality Than that of Chinese in extracts yield.
