This study was performed to evaluate the effect of persimmon vinegar on serum lipid components in the hypercholesterolemic Sprague-Dawley male rats. Forty rats were divided into four groups and fed diets containing 1% cholesterol for 4 weeks. Experimental diets added to distilled water, 1.5%, 3%, and 7% persimmon vinegar(PV) as drinking water. Concentration of total cholesterol, LDL and HDL cholesterol, triglyceride in serum and activity of AST, ALT in serum were assayed. Average food intake, weight gain and FER of experimental rats were not significantly different by contents of persimmon vinegar. Concentration of total cholesterol and LDL cholesterol in serum were lowest in 7% persimmon vinegar group. However concentration of HDL cholesterol in serum was highest in 3% persimmon vinegar group. Concentration of triglyceride in serum was significantly lower in persimmon vinegar group than control group. Activities of AST and ALT in serum were lowest in 7% persimmon vinegar group. The results in this study suggest that persimmon vinegar is effective in lowering serum triglyceride level.
식물성 단백질 수준이 성장기 흰쥐의 골밀도에 대한 칼슘 효율에 미치는 영향

본 연구는 선행연구에서 성장기 흰쥐의 경우 동물성 단백질인 casein의 수준(20%, 40%)을 달리 하였을 때 골밀도 및 골밀도에 대한 칼슘효율이 고단백군에서 높게 나타났으므로 단백질 급원을 식물성 단백질로 대치하였을 경우에도 골밀도에 대한 칼슘 효율에 미치는 영향이 동일하게 나타나는지를 조사하고자 시도하였다. 실험식이는 단백질 급원을 Soy protein으로 대치한 것 외에는 선행연구의 모든 조건과 실험방법을 같게 하였다. 즉, 단백질 급원은 식물성 단백질인 Soy protein을 사용하였고, 단백질 수준을 대조군 20%, 고단백군 40%로 조절하여 9주간 실험하였다. 골밀도와 골무기질 함량은 양에너지 방사선 골밀도 측정기(dual energy X-ray absorptiometry)를 이용하여 9주째 측정하였고 요와 혈청에 대한 생화학적 분석을 하였다. 연구 결과를 요약하면, 요중칼슘 배설량과 Crosslinks value, 혈청 칼슘, 인, ALP, Osteocalcin함량은 유의적 차이를 나타내지 않았다. 또한 총 골밀도, 총골무기질 함량, 총골칼슘 함량 및 척추와 대퇴부의 골밀도 함량과 이에 대한 각각의 칼슘효율은 유의적 차이를 나타내지 않았다. 따라서 단백질의 종류에 따라서 단백질 급여수준이 골밀도 및 골밀도에 대한 칼슘 효율에 미치는 영향이 다름을 알 수 있었다.
Alcaligences에 의해 생산되는 새로운 Hetero-다당류인 Welan Gum과 Xanthan Gum의 Rheology특성에 관한 비교 연구

Alcaligences로부터 추출된 새로운 미생물 다당류인 Welan gum 과 Xanthanonas campetris 의 발효에 의해 얻은 Xanthan gum의 rheology 특성을 비교 검토하였다. 그 결과 Welan gum의 고유점도는 pH7에서 염을 가하지 않는 상태에서는 Xanthan gum 보다 훨씬 낮았으나 0.1 M-KCI 용액중에서는 비슷한 값을 나타냈다. pH, 온도 및 염농도 의존성은 Welan gum 이 더 안정하였으며, 농도 의존성은 두 시료 모두 pseudoplastic 거동을 나타냈다. 또한 Welan gum과 Xanthan gum은 각각 0.056g/dl 및 0.024g/dl 농도 이상에서 entanglement coupling 이 일어났으며, 염종류에 대한 영향은 1 가염(KCl, NaCl), 2가염(MgCl_(2), CaCl_(2)) 및 Urea에 대해 Welan gum 이 더 안정하였다. The polysaccharide produced by Alcaligence, Welgan gum, was rheologically characterized and compared with Xanthan gum, To evaluate the potential function of Welan gum and Xanthan gum, the physical properties of the gums were determined under various solution conditions. Rheological properties of the gums were determined by measuring intrinsic viscosity of the solution in the different pH and salt concentration. At the range of pH 2-11 and salt 0-1.00 M-KCl, the intrinsic viscosity of Welan gum was ranged from 13.65 to 17.90 dl/g and Xanthan gum was ranged from 8.19 to 41.8dl/g. In the absence of salt, the instrinsic viscosity of Welan gum was not affected by increasing pH of the solution, whereas the intrinsic viscosity of Xanthan gum was appeared maximum at the neutral pH, then decreased both acidic and alkalic pH. Intrinsic viscosity of Welan gum was not affected by increasing salt concentration, whereas intrinsec viscosity of Xanthan gum was decreased with increasing salt concentration. The chain stiffness parameter for the Welan gum was 0.01, for Xanthan gum was 0.005. The overlap parameter of Welan gum and Xanthan gum were 0.056 dl/g and 0.024 dl/g, respectively Welan gum and Xanthan gum were showed shear rate dependent or pseudoplastic. The apparent viscosity of Welan gum and Xanthan gum were decreased as the shear rate increased. The yield stress, proportionality constant, and shear index of Welan gum were increased slightly as the concentration of the gum was increased. The apparent viscosity of Welan gum was decreased slightly by increasing temperature, whereas Xanthan gum was decreased In the presence of salts (KCI, NaCl CaCl_(2), MgCl_(2) and urea). Welan gum was not affected and Xanthan gum was affected slightly.

This study investigated the relationship among the flight stress, disease and eating behavior of the Airline cabin crews. Self administered questionnaires were collected from three hundred and twenty cabin crews. Statistical data analysis was completed using a SPSS v.10.0 program. The results were summarized as follows: Before the flight, the maladaptation to the oversea foods was the most common stress for the crews less than one year flight experience. During the flight, fastidious arrangement and loss of appetite due to overwork were the most common stresses. After the flight, anorexia due to jet lag was the most common stress. Backache and stomachache were the most common job-related ailments of the airline cabin crews. During the flight, the intakes of carbonated drinks and coffee were most common. After the flight, water was the most common drink they consumed.
실크펩타이드 분말 첨가가 쌀다식의 품질변화에 미치는 영향

This study was conducted to investigate the effect of added silkpeptide powder on the quality (nutrient content and sensory evaluation score) of the rice Dasik, Rice Dasik was prepared with 0, 1, 2, 3, and 4% concentration of silkpeptide powder. The sensory evaluation scores for the group of the rice Dasik with 2% silkpeptide powder were found to be significantly higher than those of other groups. Increasing silkpeptide powder led to the significant increase in the contents of crude protein and crude ash. But there were no significant differences in contents of crude fat and moisture. And the contents of Ca, K and Mg of silkpeptide powder groups were higher than those of the silkpeptide powder free group.

Background and Objectives: Histologic differentiation of primary ovarian carcinoma from metastatic carcinoma to the ovary may be difficult. We investigated to discriminate between primary and metastatic ovarian carcinoma by immunohistochemistry. Materials and Method: Ire evaluated cytokeratin (CK) 7, CK20, CK18, and carcinoombrvonic antigen (CEA) expression In 20 ovarian adenocarcinomas (7 serous, mucinous. 2 endomotrioid, and 7 metastatic), 10 gastric adenocarcinomas and 10 colonic adenocarcinomas. Results: CK7 expression was demonstrated in all serous and 3 out of 4 mucinous adenocarcinoma, and 1 out of 10 each gastric and colonic adenocarcinoma. CK20 expression was seen in 4 out of 10 cases of colonic adenocarcinoma and 3 out of 7 cases of metastatic ovarian carcinoma. But, all primary ovarian carcinoma and gastric adenocarcinoma were negative for CK20 except for focal positivity in only 1 ovarian mucinous adenocarcinoma. CK18 expression may not be helpful to differentiate the primary or metastatic carcinoma because all cases examined were positive for CK18 except for 1 ovarian mucinous carcinoma. CEA expression was negative for all serous and endometrioid adenocarcinoma, but was positive for the vast majority of mucinous type, metastatic ovarian carcinoma, gastric and colonic adenocarcinoma. Conclusion: Immunohistochemical study for CK7 and CK20 may be helpful in differential diagnosis between primary and metastatic ovarian carcinoma. Also, imrnunostaining for CEA may be a value on differential diagnosis of mucinous and nonrnucinous (serous and endomerioid) ovarian carcinomas.
