      • 진주담치 濃縮엑스분의 製造 및 利用

        진주담치 乾製品, 製造時 副産物로 생성되는 엑스분을 食品加工用 中間素材로서의 이용가능성을 검토하고자 진주담치 濃縮엑스분을 製造하였으며 그 製品의 化學成分 및 重金屬含量을 分析하였다. 그리고 용도개발 實驗을 하여 다음과 같은 결과를 얻었다. 1. 진주담치를 98℃에서 20分間 蒸煮하여 生成된 엑스분을 93℃에서 4時間 동안 이중솥에서 paste狀으로 될 때까지 濃縮한 결과 製品의 수율은 5.8%였으며, 製品의 水分含量은 42.8%였고, 乾物量 基準으로 粗蛋白質은 32.7%, 글리코겐은 4.8%, 무기질은 31.6%였다. 그리고 pH는 5.16, VBN은 67mg/100mg이었다. 2. 濃縮엑스분 製品의 遊離 아미노산 含量은 全엑스분 室素의 71.4%를 차지하였으며, glycine, arginine, alanine, phenylalanine, lysine, tyrosine, histidine, methionine 및 leucine의 9종의 아미노酸이 總아미노酸의 89.6%를 차지하였다. 3. 용도개발 목적으로 인스탄트 면류 조미수우프 및 크림수우프를 만들어 市販 수우프류를 對照製品으로 官能檢査한 결과 거의 손색이 없었으며 패류 특유의 시원한 맛이 있었다. 그리고 重金屬 含量도 극미량으로 진주담치 濃縮엑스분 製品은 食品衛生上의 安全性이나 營養面에 있어서 손색이 없고 天然香味를 지닌 우수한 食品加工用 中間素材로 利用가능하다는 結論을 얻었다. In order to utilize extracts which are produced as a by-product when dried sea mussel products are processed, concentrated extracts of sea mussel was prepared and its chemical composition, quality stability and effective methods of its utilization are examined. 1. After the sea mussel was steamed at 98℃ for 20min, extracts was concentrated as a paste state in a double jacketed cooker at 93℃ for 4 hrs. 2. The yield of concentrated extracts of sea mussel was 5.8%, and the content crude protein was 32.7%, glycogen 4.8%, minerals 31.6%, VBN 66.87mg % and heavy metals (Pb, Cd, Hg, Cu, Zn) were trace in content. 3. The content of total free amino acids of the product was 71.4% of total extractive nitrogen and the abundant contents of amino acid in the product were glycine, arginine, alanine, phenylalanine, lysine, tyrosine, histidine, methionine, leucine. Judging from sensory evaluation, the instant noodle soup and cream soup made from concentrated extracts of sea mussel were not inferior to the control which purchased on the market.

      • 까치복의 呈味成分

        까치복의 呈味成分에 관한 資料를 얻고자 核酸關聯物質, 유리아미노산, TMAO, TMA, betaine 및 총 creatinine을 分析하였다. 核酸關聯物質 중 IMP가 1.9μmole/g으로서 가장 많았고, 全核酸關聯物質에 대해 39.6%를 차지하였다. 유리아미노산 중 함량이 많은 것은 taurine, lysine, alanine 및 glycine 이고, 이들 네 가지 아미노산이 전유리아미노산의 68.2%를 차지하였다. 총 creatinine�량은 194.5mg/100g으로서 엑스分窒素에 대해 63.4%를 차지하였으며, TMAO 및 betaine 함량은 微量이었다. Omission test 結果 까치복의 呈味成分은 5'-mononucleotides 및 유리아미노산이 주된 구실을 한다는 것을 알았다. Yellowfin puffer, Fugu xanthopterus(Temminck et Schlegel), is one of the most palatable fishes in Korea. However, relatively little is known about the characteristics of its taste. In this study, the taste compounds including nucleotides and their related compounds, free amino acids, trimethylamine oxide, trimethylamine, betaine and total creatinine were analyzed, and their roles in tasting activity were investigated. The amounts of IMP was 1.9 μmole/g, and the ratio of IMP to the total nucleotides and their related compounds was 39.6%. The great portion of free amino acids in the extractives of yellowfin puffer muscle was occupied by taurine, lysine, alanine and glycine in order, and their content was 79.1% of the total free amino acids. Among the organic bases, total creatinine was abundant, and its nitrogen content was 63.4% of total extractive nitrogen. According to the results of the omission test, the main constituents of the characteristic taste of yellowfin puffer could be assumed as free amino acids and 5'-mononucleotides.

      • 閑山·巨濟灣 굴, 진주담치 및 海水의 重金屬含量

        1982년 7월부터 12월까지 南海岸의 閑山·巨濟灣에서 양식되고 있는 굴 및 自生하고 있는 진주담치와 海水에 대한 重金屬(Hg, Cd, Cu, Pb 및 Zn) 含量을 調査하고 成長過程, 水深別 그리고 굴과 진주담치의 重金屬含量을 相互 比較하였다. 1. 海水에 있어 구리 含量은 대체로 表層이 5m層보다 높았고 그 平均값은 각각 5.0, 3.3ppb였으며, 水銀은 0.132, 0.137ppb로 表層과 5m層間에 差異가 거의 없었다. 2. 굴의 成長에 따른 重金屬含量은 대체로 아연과 구리는 增加하는 반면 카드뮴, 납 및 水銀은 특징적인 變化는 나타나지 않는다. 그리고 水深別(表層 및 5m層)굴의 重金屬含量은 아연과 구리에서 약간의 差異가 있을 뿐 다른 重金屬은 같은 수준이었다. 3. 閑山·巨濟灣에 있어 굴과 진주담치의 重金屬含量(1982年 10月 基準)은 각각 카드뮴 0.55, 0.21ppm, 구리 6.42, 0.66ppm, 납 0.69, 0.41ppm, 아연 101.6, 18.4ppm, 水銀0.009, 0.006ppm으로 굴이 진주담치보다 높았으며, 美國貝類衛生 7次 workshop 推薦暫定基準値인 카드뮴 1.5∼3.5ppm, 구리 42∼175ppm,납 2.0ppm, 아연 1,000∼2,000ppm, 水銀 0.2ppm에 比하여 낮은 값이었다. The quantitive analysis of heavy metals(Hg, Cd, Cu, Pb and Zn) in oyster, Crassostrea gigas, and blue mussel, Mytilus edulis, and growing water associated with hanging culture in Hansan-Geoje Bay on the south coast of Korea were conducted during the period of July to December in 1982. The content of heavy metals in shellfish by growth, water depth, and species were discussed. In sea water, copper content of surface water was in general highe than that of five meter depth to some extent with average of 5.0 and 3.3 ppb, respetively. There were little differences of mercury content between the two water depth, and averaged 0.132 and 0.137, respectively. Cadmium, lead and zinc were indeterminable. In oyster, the contents of copper and zinc by growth showed a trend of gradual increasing with increasing of meat weight, whereas there were little differences in cadmium, lead and mercury during the study period. And there were no differences between surface and five meter depth. The levels of heavy metal in oyster were consistently higher then that in blue mussel. Heavy metal content of both oyster and blue mussel in Hansan-Geoje Bay taking the results in October that it showed higher metal concentration in shellfish during the study period, were 0.55 and 0.21 ppm for cadmium, 6.42 and 0.66 and ppm for copper, 0.69 and 0.41 ppm for lead, 101.6 and 18.4 ppm for zinc and 0.09 and 0.006 ppm for mercury, respectively. They were much less than the alert levels for oyster proposed by the Chemical Task Force of U.S. FDA 7th National Shellfish Sanitation workshop in 1977 that were 1,000-2,000 ppm for zinc 42-175 ppm for copper, 1.5-3.5 ppm for cadmium, 2.0 ppm for lead and 0.2 ppm for mercury.

        The purpose of this study was to examine the perception and preference of skiers in a bid to provide ski resorts with useful information about successful positioning strategy. The subjects in this study were 9,722 skiers who purchased season tickets from N web site that sold ski season tickets. Their online purchasing route and page view were analyzed to find out what factors affected their purchase of ski season tickets. The findings of this study were as follows: First, 78 percent of the people investigated were make, and 22 percent were female. By age, the largest group was in their 20s(5,344 skiers), followed by those in their 30s(3,434), those in their 40s(631) and teenagers(229). Second, their page view rate with Yangji recorded highest with 24%, followed by Sungwoo Resort with 23% and Chonmasan with 13 percent. Third, by geographic area, the skiers from southern Gyeonggi province bought the largest number of tickets for the 2002/2003 season, followed by Gangweon province residents and northem Gyeonggi province dwellers. In the case of the 2003/2004 season, those from Gangweon provinece pruchased the most tickets, followed by southern Gyeonggi province dwellers and north Gyeonggi province residents.

        단일풍선 소장내시경으로 진단된 거대세포바이러스 공장염

        Cytomegalovirus (CMV) infections are usually diagnosed in immunocompromised patients. A 74-year-old male without any significant medical history visited our center because of abdominal pain and diarrhea which began about a month ago. Abdominal computed tomography revealed segmental enhanced bowel wall thickening on jejunum and single-balloon enteroscopy showed multiple geographic shaped ulcerations covered with exudates on proximal jejunum. Biopsy samples taken during endoscopic examination demonstrated necrotic fibrinopurulent tissue debris and benign ulcer. Nested-PCR analysis of CMV DNA from jejunal tissue was positive. The patient was finally diagnosed with CMV jejunitis and was treated by intravenous ganciclovir for 14 days after which, abdominal pain and diarrhea improved. Our case shows that CMV jejunitis can occur in an immunocompetent adult as multiple jejunal ulcers which can be diagnosed using a single-balloon enteroscope. (Korean J Gastroenterol 2013;62:238-242)

        Pattern-definable and low cost fabrication of nanopatterned conducting polymer film on flexible substrates.

        <P>This study reports the pattern definable and low cost fabrication of nanopatterned conducting polymer film on flexible substrates. Noble nanopatterned polymer hard template was fabricated by using nanoimprint lithography (NIL) and used for electropolymerization of conducting polymer. Conducting polymer was electrochemically deposited on the template and transferred over to flexible substrates. Eventually conducting polymer films with various nanopatterns were fabricated on flexible substrates. High pattern definability was achieved by nanoimprinted polymer template, which was molded from lithographically fabricated stamp. Low cost fabrication was accomplished due to low cost NIL, reusable polymer templates, and low material consumption of electrodeposition. The electrodeposited films were transferred using double sided tape. Because the templates are made of flexible polymer, the transfer bonding method applied in this study is adaptable to both wafers and flexible polymer substrates. The fabricated nanopatterned conducting polymer film can be applied to gas sensors, super capacitors, super wetting films, and neuron interfaces due to its characteristic of high surface to volume. For an illustrative application, the gas sensing properties of films were tested. The result showed enhanced sensing characteristic with nanopatterned film, which are attributed to the high surface to volume ratio of nanopatterned films.</P>

        High-throughput step-and-repeat UV-nanoimprint lithography

        UV-NIL has shown promise as new disruptive technology to displace photolithography in patterning nano features. This method is attractive because of their high-throughput with easy operation at room temperature and low pressure with low-cost. In this paper, a new UV-NIL process is proposed to apply a large-area stamp to a high-throughput step-and-repeat process at atmospheric conditions, utilizing additive gas pressurization and an elementwise patterned stamp (EPS), which consists of elements separated by channels. With the proposed method, only four imprints were required to press an 8 in. wafer. EPS features measuring 50–80 nm were successfully transferred onto the wafers. The experiments demonstrated that a 5 · 5 in.2. EPS could be used with a step-and-repeat UV-NIL process to imprint 8 in. wafers under atmospheric conditions.
