Effects of Extrusion Conditions on Pasting Properties of Potato and Potato : Wheat Flour Mixture

The purpose of this study was to develop extrusion process of fresh potato and to study the effects of extrusion condition on the pasting properties of extruded potato products. The blend of pressed potato and wheat flour and pressed potatoes were extruded at different die exit temperatures (110-160℃) and screw speed of 100 rpm using a twin-screw extruder with conveying, high and low shear screw configuration. The viscosity-related parameters, such as peak viscosity, through, final viscosity, peak time, and pasting temperature of the feed materials and extruded products, were studied using a rapid visco analyzer (RVA). Their water solubility index (WSI) and water absorption index (WAI) were also studied. The peak viscosity, through, final viscosity, and peak time of pressed potato extrudates and potato-wheat flour mixture extrudates decreased as die exit temperature increased. The WSI and WAI of potato products increased as die exit temperature increased. When high shear screw configuration was used, the values of viscosity-related parameters were lower than those when low shear screw configuration was used. The potato-wheat flour mixture products obtained different degrees of depolymerization from fresh potatoes and wheat flour depending on die exit temperature and screw configuration.

Nanotechnology represents a new frontier in science and technology with long term goal and benefits. Nowdays, nanotechnology is producing many revolutions and applications such as quantum computing, surface and materials modification, novel swparation and sensing technologies, and human biomedical replacements. These new techniques are being introduced in food and cio filed. In this review, the status and trends related to nanocomposites, nanoparticles, nanoyubes, delivery vehicles and biosafely were reviwed. The situation of funding of nanotechnology research in USA, Japan and Korea is also summarized.

Bacteriological survey was performed with the 81 seweage specimens taken from the flooded areas in Seoul City (Young; dungpo-Ku, Yongsan-Ku, Mapo-Ku, Seongdong-Ku and Seodaemoon-Ku) during August, 1972. Thirteen strains of enteric pathogens were isolated. from their specimens of the 13' strains of isolates, 5 strains of Salmonella species, 6 strains of Shigella and 2 strains of Vibrio parahaemolyticus were confirmed by means of biological, biochemial and serological test, respectively.

Bats seemed to be a susceptible animals to infection with some arboviruses but insufficient evidence precludes the determination of their relative importance in maintaining the Japanese encephalitis virus in nature. An attempt was made to evaluate the neutralizing antibody against Japanese once halitis virus on the sera of bats. The eighty-four serum samples were obtained from bats (Pipistrellus abramus Temminck) which were captured at the Mt. Song-Chu and Mt. Do-Bong in July, 1971. Neutralizing antibody against Japanese encephalitis virus was demonstrated from 5 (6.0%) out of 84 serum specimens by means of plaque inhibition method.

Growth of Russian spring-summer encephalitis virus in established line of mosquito (Sigh's Aedes albopictus) cells was studied by infectivity ' titration of mouse lethal doses and observation of morphological changes on the infected cell monolayers. The cell line could support the multiplication of Russian spring summer encephalitis virus. The maximum virus titer of 10''0 mice LD50 was reached in 3 days after virus inoculation. Cytopathic effect was found on the whole monolayer from second post infective day and large round spherical cell aggregates were observed theereafter.
