        보리의 발아정도가 맥아의 β-glucan 용해성 및 맥주의 점도에 미치는 영향

        발아시간에 따라 덜 변형된 맥아(60시간 발아)와 적절히 변형된 맥아(96시간 발아)의 총, 불용성 및 수용성 β-glucan 함량을 측정하였다. 보리의 총 β-glucan 함량은 3.96%였으며 발아 중에 감소하였는데 덜 변형된 맥아에서는 1.02%인 반면에 적절히 변형된 맥아에서는 0.18%로 급격히 감소하였다. 적절히 변형된 맥아는 21℃와 45℃ 추출온도에서 β-glucan 용해성이 덜 변형된 맥아에 비해 현저하게 증가하였다. 변형정도가 다른 두가지 맥아에 대하여 당화온도별로 당화 후 맥즙과 맥주의 점도를 분석하였다. 당화온도가 45-75℃로 증가함에 따라 맥즙과 맥주의 점도가 증가하였으며 적절히 변형된 맥아가 덜 변형된 맥아에 비해 점도의 상승이 크지 않았다. 이는 적절히 변형된 맥아는 덜 변형된 맥아에 비해서 당화과정중에 β-glucan 용해성이 상대적으로 높지만 초기 β-glucan의 함량이 낮을 뿐 만 아니라 맥아에 충분히 합성되어 발달된 β-glucanase의 활성에 의해 당화과정 중에 용출되어지는 β-glucan의 분해가 이루어지기 때문인 것으로 판단되었다. Two barley malt samples were selected at two different stages of germination, a well-modified malt germinated for 96 hr and a poorly-modified malt for 60 hr, and were analyzed for total, insoluble, and soluble β-glucan contents. The total β-glucan content in raw barley was 3.96%, and the content was reduced during malting. The total β-glucan contents of the poorly- and well-modified malts were 1.02% and 0.18%, respectively. After 4 days of germination, approximately 95% of the β-glucan present in the barley was degraded. A significantly higher proportion of water-soluble β-glucan was found in the well-modified malt, suggesting that β-glucan solubility was dependent on cell wall modifications in the malt (β-glucan breakdown). The proportion of water-soluble β-glucan was also affected by the extraction temperature. The two differently modified malts were mashed isothermally at 45, 55, 65, and 75℃ for 2 hr. An increasing mashing temperature resulted in increased viscosity for the wort and the resulting beer. The viscosity of the wort from the well-modified malt was significantly low, due to its low initial malt β-glucan with increased solubility as well as a presumably sufficient β-glucanase activity during mashing.

        고전 텍스트의 계승과 변용에 따른 재창조 텍스트의 지도 방법 연구-<온달전>과 윤석산의 <온달의 꿈>을 중심으로-

        Classical literature texts have been transmitted and recreated as subjective meanings in a wide variety of genres. Authors recreate another world with their own imagination and classical literature texts. This study has been conducted to analysis 'OnDal's Dream' which is an adaptation from 'OnDalJeon' in order to figure out the method of inheritance and the subject and message of the adaptation. The process of inheritance and acculturation appears in the literary world. Some adaptations stick to the genre of the original text, other adaptations change to various genres. There is the process of inheritance and acculturation in the aspect of structure of the adaptation 'OnDal's Dream'. lntertextuality can be found between 'OnDalJeon' and 'OnDal's Dream' in terms of the stages such as 'confrontation' between the ego and the world and 'overcoming' hardships. However, the recreation text has acculturation of the structure that shows the potential desire for elevation of social status at the end part of the work so I could possibly show that the adaptation has limitation because it was far from the dream of common people and laborers at that time. There are different structures and recognition systems between 'OnDal Jeon' and 'OnDal's Dream' because the formal is an epic tale the other is lyric tale. An epic tale has some partial symbols in its story line, while an lyric tale is a symbol as a whole. There is an exhibition of deep emotion which is subjectivized and symbolized against the world in the adaptation 'OnDal's Dream'. And the inheritance of unreality ,which is acculturation to the world of dream, from the original text can be found in the adaptation. First of all, study between the original text and the recreation text should be conducted in terms of intertextuality. Secondly, an instruction on the inheritance which is based on intertextuality between the original text and the recreation text should be conducted. Thirdly, an instruction about the structure of a genre and differences of recognition systems according to inheritance or conversion of a genre. It will be helpful for children to stimulate to take an interest in classical literature texts and traditional arts, to learn more recreation texts, and to develop the practical ability to recreate works. Based on above study, an instruction which shows a spiritual value of literature should be conducted.         산청지역에 분포하는 챠노카이트의 암석학적 연구

        연구지역의 챠노카이트는 일반 화강암질암에 비해 암색을 띠고, 사방휘석과 석류석을 함유하는 석영-장석질암이다. 일부 지역에서 엽리가 발달하나 대체로 미약한 편이며 산상의 특징, 구성광물의 종류와 암석의 변형 정도 등에 의해 암상의 변화를 보인다. 주 구성광물은 석영, 사장석, K-장석, 사방휘석이며, 흑운모, 석류석, 앤쏘필라이트 등을 부분적으로 포함한다. 암석화학적 분석 결과, SiO2의 함량이 61-65%에 해당되었으며, 주위의 규장질 화성암 조성의 편마암류들과 연속적인 변화 경향성을 보인다. 주성분 산화물들의 변화 경향을 살펴본 결과, 각섬석 편마암, 회장질암을 제외한 주위의 편마암류들과 거의 동일한 체계성을 보였다. 챠노카이트의 변성조건을 고찰하기 위하여 사방휘석-석류석 지온계와 사장석-석류석 지압계를 적용해 본 결과 석류석의 중심부의 경우 761℃ 내외의 온도와 약 7kbar의 압력 조건, 주변부의 경우 653℃ 내외의 온도와 약 6.4kbar의 압력조건을 지시하였다. 이는 챠노카이트가 초기의 고변성작용을 받은 후 보다 후기의 저변성작용에 의해 재평형이 이루졌음을 암시한다. The Chamockite in Sancheong region is quarzofeldspathic rock containing orthopyroxene and gamet with a color dark than common granitic rocks. The Chamwkite are mostly massive and medium to coarse-grained with K-feldspar phenocryst, but reveal weak foliation. The rock consist mainly of quartz, K-feldspar, plagioclase and orthopyroxene, with biotite, garnet, and anthophyllite. In petrochemistry, the Chamockite has 61-65% SiO₂ contents, varying gradually into the margin contacted with orthogneiss, which have compositions of felsic igneous rocks. Major element show almost systematical variation with those of the marginal orthogneisses, except the hornblende gneiss and anorthosite. The Chamockite and orthogneisses show the tholeiitic differentiational trend. Trace and rare earth element abundance patterns in the Chamockite show remarkable negative Sr and Eu anomalies similar to orthogneisses, but different from the hornblende gneiss and anorthosite. Eu contents of the Chamockite are richer than that of orthogneisses. The metamorphic condition of the Chamockite were tested by an orthopyroxene-garnet geothermometer and a plagioclasegamet geobarometer. Estimated P-T conditions are about 761℃ and 7 kbar at peak metamorphism, but 653℃ and 6.4 kbar at retrograde metamorphism. This suggests that the Charnockite have from an early stage of high-grade metamorphism to represent the granulite facies and then to a late stage medium-grade metamorphism belonging to the amphibolite facies.
