Flavobacterium sp. strain DS5 (NRRL B-14859) was used to convert four major vegetable oil components, oleic acid, linoleic acid, α-linolenic acid, and γ-linolenic acid, to oxygenated unsaturated fatty acids. From gas chromatography (GC) data and previous literatures, the major bioconversion products from oleic, linoleic, α -linolenic, and γ-linolenic acids by strain DS5 were found as 10-ketostearic acid (10-KSA), 10-hydroxy-12(Z)-octadecenoic acid (10-HOA), 10-hydroxy-12(Z),15(Z)-octadecadienoic acid, and 10-hydroxy-6(Z),12(Z)-octadecadienoic acid, respectively. The order of reactivity for the DS5 enzyme was: oleic > α-linolenic > γ-linolenic > linoleic acids.
