외식업 창업 지원서비스가 창업역량과 경영성과에 미치는 영향

본 연구는 외식업 창업자에 대한 창업지원서비스 그리고 창업역량과 경영성과에 대한 이론적 개념을 정립하고, 외식업 소상공인에 대한 지원서비스와 창업역량이 경영성과에 미치는 영향을 검증하고자 하였다. 또한, 창업횟수에 따라 창업지원서비스, 창업역량, 경영성과를 지각하는데 차이가 있을 것이라는 가정 하에 차이분석을 실시하였다. 본 연구의 표본은 소상공인 전담지원기관의 서비스인 자금지원, 교육지원, 창업·컨설팅 등 정보제공을 받아본 경험이 있는 대구·경북에 거주중인 외식업 소상공인 및 자영업자를 대상으로 설문을 실시하였다. 설문지는 2016년 6월 20일부터 9월 9일까지 실시하였으며, 조사방법은 직접 설문방법으로 총 370부를 배포하여, 이중에서 불성실한 응답을 한 62부를 제외시키고 실증분석에서 308부가 사용되었다. 분석결과, 소상공인에 대한 지원서비스는 창업역량에 유의한 정(+)의 영향을 미치는 것으로 나타났으며, 창업역량은 경영성과에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 따라서 소상공인의 경영성과를 체계적으로 평가하고 효율적인 지원정책을 개발하기 위해서는 소상공인 경영성과의 결정요인에 관한 연구가 절실히 요구되며 특히, 기존의 소상공인 창업단계에 중점을 두고 이루어진 정책적 관심과 연구는 소상공인의 실질적인 경영활동과 성과창출 과정을 반영하는 방향으로 확대될 필요가 있다고 하겠다 This study investigated the influence of supporting business for start-up companies provided by national and local government and public organizations, start-up competency on the management performance. The goal of this investigation is to empirically prove that despite the benefits of educational and financial support, mentoring and consulting which selected applicants received as a part of supporting business for start-up companies provided by national and local government and public organizations, there is a gap between individual entrepreneurs` satisfaction after actual foundation of the company. We carried out a survey for small business people and tradespeople living in Taegu and Kyungbuk who have been experienced the service from the Small Business Center from 2016. 6. 20 to 2016. 9. 9. We distributed 370 questionnaires and used 308 questionnaires. The result of this study shows that the supporting service for small business people has a direct effect on the start-up competency and the management performance. The supporting service for small business people has a meaningful positive effect. Therefore to evaluate systematically management performance of small business people and to develop effective supporting service, the study on the decision factors of the small business people`s management performance is needed. Especially, the studies and concerns made which are focusing on established small business people are needed to be extended to reflex a real management activity and the process of outcome.

The purpose of this study was to investigate the effect of extension speed on load-deflection characteristics of elastomeric chains, and stress relaxation of elastomeric chains during uninterrupted extension of 4 weeks. Gray and transparent elastomeric chains from Ormco, 3M Unitek, RMO were tested. For load-deflection test, elastomeric chains were extended 10 mm (102% to 105% extension) with two extension speed of 10 mm/sec and 0.1 mm/sec. For stress relaxation test, the elastomeric chains were extended 10 mm and maintained on the force gauge for 4 weeks. When the extension speed was lowered to 0.1 mm/sec, forces during both extension and unloading decreased significantly, and the permanent deformation increased significantly. The initial force of elastomeric chains decreased 23% to 48% during initial 12 hours of constant extension, and then decreased 8% to 11% more during the rest of 4 week period. After 4 week of constant extension, the remaining force was 67% (transparent), 69% (gray) in RMO chains, 60% in Ormco chains, 41% (gray) to 50% (transparent) in Unitek chains. Stress relaxation of elastomeric chain seems to start at the start of extension procedure thus lowering the force level of elastomeric chain when extended more slowly, and it is recommended to determine initial force level of elastomeric chain considering the stress relaxation pattern revealed in this study.

본 연구는 선행연구에 대한 문헌적 고찰을 통해서 소상공인에 대한 지원서비스가 지원서비스만족, 경영성과에 미치는 영향과 지원서비스와 경영성과의 관계에서 지원서비스 만족의 매개효과를 밝혀내기 위해 대구·경북에 거주 중인 소상공인 및 자영업자를 대상으로 실증분석을 시행하였다. 이러한 연구목적을 달성하기 위해 소상공인 전담지원기관의 서비스를 받아본 경험이 있는 대구·경북에 거주하는 소상공인 및 자영업자를 대상으로 2015년 4월 22일부터 5월 15일까지 설문조사를 실시하였으며, 총 210부의 설문지를 배포하여 196부가 분석에 사용되었다. 분석결과, 소상공인에 대한 지원서비스는 지원서비스 만족과 경영성과에 유의한 정(+)의 영향을 미치는 것으로 나타났으며, 지원서비스 만족 또한 지원서비스와 경영성과의 관계에서 부분매개효과를 나타내는 것으로 분석되었다. 따라서 소상공인의 경영성과를 체계적으로 평가하고 효율적인 지원정책을 개발하기 위해서는 소상공인 경영성과의 결정요인에 관한 연구가 절실히 요구되며 특히, 기존의 소상공인 창업단계에 중점을 두고 이루어진 정책적 관심과 연구는 소상공인의 실질적인 경영활동과 성과창출 과정을 반영하는 방향으로 확대될 필요가 있다고 하겠다. This study was conducted to investigate the effect of supporting service for small business people, the management performance and the meditating effect of supporting service satisfaction between the relation of supporting service satisfaction and management performance through prior literature reviews for small business people and tradespeople living in Taegu and Kyungbuk. We carried out a survey for small business people and tradespeople living in Taegu and Kyungbuk who have been experienced the service from the Small Business Center from 2015. 4. 22 to 2015. 5. 15. We distributed 210 questionnaires and used 196 questionnaires. The results of the study are like these. The supporting service for small business people has a meaningful positive effect. The satisfaction of supporting service also has a partial meditating effect on the relation between supporting service and management performance. Therefore to evaluate systematically management performance of small business people and to develop effective supporting service, the study on the decision factors of the small business people``s management performance is needed. 프랜차이즈 본부의 사회적책임(CSR)활동이 가맹점이 인지하는 브랜드 이미지와 가맹점의 경영성과, 재계약의도에 미치는 영향

본 연구는 외식 프랜차이즈 산업 내에서 외식 프랜차이즈 본부의 CSR 활동이 브랜드 이미지, 경영성과, 재계약의도에 미치는 영향에 대한 포괄적인 모형을 개발하고자 한다. 제안된 모형을 검증하기 위하여 대구 및 경북 지역의 외식 프랜차이즈 가맹점에서 본부와 충분한 정보를 공유하고 있는 소유주 또는 고용점장, 매니저와 팀장급 이상의 직원 193명을 대상으로 설문조사가 실시되었으며, 수집된 자료는 SPSS/PC 18.0 통계 패키지 프로그램을 이용하여 분석되었다. 먼저, 표본의 일반적 특성을 분석하기 위하여 빈도분석(frequency analysis)이 실시되었으며, 연구모형을 구성하는 각 연구단위들에 대한 타당성과 신뢰성을 평가하기 위하여 각각의 연구단위에 대한 요인분석 후 신뢰도 분석이 실시되었다. 요인들에 대한 내적 일관성을 검증하기 위하여 신뢰도 분석은 요인 분석결과 남은 변수들에 대하여 Cronbach`s α 값을 이용하여 실시되었다. 그리고 각 연구단위들 간의 상관관계분석이 실시되었으며, 연구가설에 대한 검증과 연구모형의 구조적 관계 분석을 위하여 회귀분석이 실시되었다. 분석 결과, 모든 연구단위 들에 대한 요인의 설명력은0.6 이상으로 집중타당성이 있음을 알 수 있으며, 신뢰도 값은 0.8 이상으로 나타나 각 측정변수들의 신뢰성이 확보된 것으로 볼 수 있다. 본 연구의 결과를 요약하면, 다음과 같다. 첫째, 프랜차이즈 본부의 사회적 책임활동이 본부의 이미지에 통계적으로 유의한 영향을 미치는 것으로 나타났다. 둘째, 프랜차이즈 본부의 이미지는 경영성과와 재계약의도에 통계적으로 유의한 영향을 미치는 것으로 나타났다. 셋째, 경영성과는 재계약의도에 통계적으로 유의한 영향을 미치는 것으로 나타났다. This study has develop to the structural model that CSR of franchisor activities impact on brand image, management performance and recontracting intention. To analysis proposed model, this study investigate with owner or hiring manager, manager and over team leader. The data was collected 193 community in enough to share information with food services franchisee, and analyzed with SPSS/PC 18.0. First, to test unidimensionality and nomological validity of the measures of each construct we employed a scale refinement procedure. The result of reliability test with Cronbach`s α and confirmatory factor analysis warranted unidimensionality of the measures for each construct. In addition, nomological validity of the measures was warranted from the result of correlation analysis. All loading exceeded 0.6 and each indicator t-value exceeded 0.8. The data were analyzed with structural equation modeling using path analysis. Since the result of the overall model analysis demonstrated a good fit. The findings can be summarized as follows: First, franchisor social responsibility has a significant effect on brand image. Second, brand image has a signigicant effect on management performance and recontracting intention. Finally, management performance has a significant effect on recontracting intention. And management performance had an effect on recontracting intention, which high brand awareness, business possibility and profitability were factors that select the franchise brand in foodservice industry. To put it another way, franchisors` efficient support for competitive business items and customers` high awareness of brand in selecting the brand can stable returns, and improve management performance. Consequently, the stable management can be attempted through a long-term recontracting.

조리외식전공 대학생들의 진로장벽인식과 진로관여행동의 관계에 미치는 진로적응성의 매개효과

본 연구는 조리외식전공 대학생들이 지각하는 진로장벽과 진로적응성, 진로관여행동의 관계를 검증하고 진로적응성의 매개효과를 검증하는 데 있다. 대구경북지역 조리외식 전공대학생 403명이 설문에 응답하였으며, 이중에서 불성실한 응답을 한 19부를 제외시키고 실증분석에서 384부가 사용되었다. 자료는 SPSS 21.0을 사용하여 구조적 관계를 분석하였다. 분석결과, 조리외식전공 대학생의 진로장벽 인식은 진로적응성과 진로관여행동에 유의한 부(-)의 영향을 미치는 것으로 나타났고, 진로적응성은 진로관여행동에 유의한 정(+)의 영향을 미치는 것으로 나타났다. 또한, 진로장벽과 진로관여행동의 관계에서 진로적응성의 부분매개효과가 확인되었다. 이러한 결과를 바탕으로 대학생의 진로관여행동 수준에 대한 진로장벽과 진로적응성의 의미와 진로교육 및 상담에서 진로적응성의 역할 등이 논의되었다. The purpose of this study aims to 1) investigate the structural relationship among career barriers, career adaptability and career involvement behavior, 2) mediating effect of career adaptability on the relationship between career barriers on career involvement behavior. The survey was conducted on 403 students from universities and colleges in Daegu·Gyeongbuk area and 384 data were utilized for the final analysis. The results firstly indicate that career barriers perceived by undergraduates majoring in culinary and foodservice management makes a significantly negative influence on career adaptability and career involvement behavior. Secondly, career adaptability positively influences career involvement behavior. Finally, career adaptability fully mediates the relationship between career barriers on career involvement behavior. Based on these results, the meaning of career barriers and career adaptability on the career involvement behavior level of undergraduates and the role of career adaptability in career education and career counseling were discussed.
