        대전 ${\cdot}$ 충남지역 단체급식소 조리종사자의 위생관리실태조사

        This study was conducted to evaluate sanitary managment practices of institutional foodservice employees in Daejeon and Chungnam areas, and to suggest a guideline for an effective safety & sanitary managment of the institutional foodservice. The subjects consist of 782 employees in 80 institutional foodservice, respectively. The collected data was processed using the SPSS V.10.0 package for descriptive analysis. The results of this study were summarized as follows. The employees were female(97.2%), over 41 age(68.1%), high school(51.0%), less than 1-5 years(52.8%) of total career in the institutional foodservice. Employment status was contract(64.2%) and cook's certification w3s not applicable(80.1%). The institutional foodservice was over 1,000 number(65.0%) of average serving per day and operations format was direct(69.6%) management and 11-20 number of employees for cooking were 58.2%. Employees(96.0%) were received sanitation training and 82.4% of them have been monthly educated. Sanitation training instructor was dietitian 91.6%. The rating of sanitary management practices was food handling 4.36/5.00, food products management 4.32/5.00, personal hygiene 4.31/5.00, equipments and tools handing 4.18/5.00. The employees, who were educated in the sanitation training, presented significantly higher rates of the sanitary management practices than of the uneducated employess. Therefore, the institutional foodservice operations will have to pay special attention to sanitation training program of the employees. The suitable methods of sanitation training must be developed to improve the practical use of sanitary management by employees and institutional foodservice. Also, to enhance these practices, it is necessary to establish the countermeasure to care for safety & sanitary management of the institutional foodservice.

        고려 숙종의 즉위에 대한 재검토

        The existing studies on the process of King Sukjong’s accession to the throne have been focused on the confrontation between Lee Ja-ui and Gaerimgong in the period of King Hunjong’s reign after death of King Seonjong. However, the fact that King Sukjong did not recognize King Hunjong as an orthodox monarch reveals the his conflicts with King Seonjong. During his reign, King Seonjong did not appoint the Crown Prince and rejected Gaerimgong’s visit to him. Gaerimgong had expected he would succeed to the throne, considering the trust of King Munjong and the recognition of Goryeo society in which was familiar with the case of brotherhood inheritance, and the fact that he had the strongest power at that time. When Gaerimgong was rejected of his visit to King Seonjong, it is judged that he grasped the King Sunjong’s intention and prepared a thorough rebellion. It seems that ‘Lee Ja-ui rebellion’ was made up by Gaerimgong, and that is ultimately understood as a political event linked to King Sukjong’s enthronement. It is because that it is difficult to find a reason to cause rebellion of Lee Ja-ui, and also can be considered that Gaerimgong might have used his experience of the succession process of King Jeongjong. Aa a maternal relative, Lee Ja-ui who was asked to look after King Hunjong from King Seonjong was counterattacked by Gaerimgong in the process of protecting King Hunjong. Gaerimgong made Lee Ja-ui a scapegoat for his justification to be King, and eventually would have removed him. At that time, Gaerimgong was the most powerful man, who held the military power and secured a wide range of support. But King Seonjong conflicted with Gaerimgong regarding the successor selection. In the end, his military affairs and his crown must be understood in such a political situation at the time.

      • 學校給食의 衛生管理에 對한 考察

        학교급식의 근본목적은 학생의 성장과 발육, 더 나아가서 건강과 체력의 유지 뿐만이 아니라 교육활동으로서 운동 보건 및 영양을 하나로 묶는 총괄적이고도 유기적인 활동이어야 한다는데에 있다. 이와 같은 학교급식의 목적을 달성하기 위해서는 영양관리와 함께 위생관리가 철저하게 이루어져야 한다. 학교급식의 위생관리에 있어서는 소화기계 전염병과 식중독의 발생 방지에 중점을 두어야 한다. 이를 위해 다음과 같은 사항에 있어서의 위생관리가 필요하다. 1. 식품의 구입, 취급 및 조리 등에 있어서의 위생관리 2. 조리종사원, 아동, 학생에 대한 위생관리 3. 급식시설 설비의 위생관리 또한 식중독과 소화기계 전염병의 사고대책을 마련해 두어서 사고 발생시에 적절한 조치를 취할 수 있도록 해야 한다. 학교환경위생의 기준에 정해진 검사항목의 검사를 시행하여 학교급식에 있어서의 위생관리를 철저히 해야 한다.

      • 蠶桑産物에 관한 연구경향 : 1980년대 이후 문헌을 중심으로

        The studies of silk yarn products have been made since 1960. Still the study on non fibrous functional foods was not included in those studies. Recently, research activities about functional foods are going on progress. Upon examination of the study made after 1980, thirteen topics were related to mulberry leaf and adult diseases, and effect of Cd & Pb containded in drinking water. The studies of mulberry trees have been made in various way and fifty two studies are presented. Mulberry tree is a plant belongs to family of mulberry tree. The special feature is that the leaf has saw-tooth and the branch does not have thorn. There are ten different kinds of mulberry trees including Morus alba Linne distributed in Korea and China. About eighteen topics were related to silkworm and mulberry. In conclusion, the study about functional products use to utilize silk yarn products has not been made sufficiently, even almost no data presented. Various functional foods such as mulberry leaf tea and mulberry leaf noodles should be studied and developed.

        고려 혜종의 죽음과 정종의 왕위계승

        The existing studies on the Accession of King Jeongjong to the Throne focused on ‘Wang Gyu's rebellion’, which led little attention to the death of King Hyejong. King Hyejong died without selecting a successor. During his short reign, it was continued attempting assassination against Hyejong and the threat to the throne. Jeongjong was the most threatening to King Hyejong and the most powerful force having the eye on the throne that time. Jeongjong was got of the installation of the King from the Later Jin Dynasty instead of King Hyejong, but he did not announce the death of King Hyejong and the enthronement of himself. It is probable that he took Wang Gyu as the political scapegoat to make a justification for his ascending to the throne and removed him. First, it is hard to find a reasonable motive for Wang Gyu to have to assassinate King Hyejong. Second, before King Hyejong's death, Jeongjong took already control of the central political system and the military forces, and eliminated all the aides of King Hyejong by attracting Wang Sik-ryum's forces. Third, Jeongjong tried to overcome the repulsive group against him and the burden of his injustiful ascending to the throne, by transferring the capital of the country to Seogyeong. The relatively weak kingship of Haejong could have been easily exposed to the threat of Jeongjong who had the strong Hojok as background at any time. Abnormal succession to the throne of Jeongjong was already implicit in the possibility of a power struggle in the Hojok coalition government based on the marriage policy of Taejo. 고려 정종의 즉위에 대한 기왕의 연구는 왕규의 난에 주목하다 보니 혜종의 죽음에 대해서는 면밀히 살피지 못한 부분이 있다. 혜종은 후계자 선정을 하지 않은 채 세상을 떠났으며 짧은 재위동안 혜종에 대한 암살 시도와 왕위에 대한 위협이 계속 되었다. 정종은 혜종에게 위협적이었고 왕위를 넘볼 가장 유력한 세력이었다. 더불어 정종은 후진으로부터 혜종의 국왕책봉을 대신 받았지만 혜종의 죽음과 본인의 즉위를 알리지는 않았다. 정종은 자신이 왕위를 차지하는 명분을 얻기 위해 왕규를 희생양으로 삼았을 가능성이 크다. 첫째, 왕규가 혜종을 암살했을만한 합당한 동기를 찾아보기 힘들다. 둘째, 정종은 혜종이 임종하기 전에 이미 왕식렴세력을 끌어들여 중앙정계와 군사력을 장악하고 혜종의 모든 측근을 제거해 나갔다. 셋째, 정종은 무리한 서경천도를 강행함으로써 자신에 대한 반발세력과 정상적이지 못한 즉위의 부담에서 벗어나고자 하였다. 혜종의 상대적으로 취약한 왕권은 강한 호족을 배경으로 둔 정종에게 언제든 위협받을 소지가 있었다. 정종의 정상적이지 못한 왕위계승은 태조의 혼인정책에 의한 호족연합정권에서 이미 권력분쟁의 가능성을 잉태하고 있었다고 보아야 할 것이다.
