        전복장의 열처리 공정의 최적화 및 저장성 평가에 관한 연구

        The objective of this study was to optimize the thermal condition and determine the shelf life of heated Chunbokjang product. The optimum thermal condition of heated Chunbok-jang product was determined by sensory test and heat penetration curve was obtained by Thermal Microprocessor. Sterilization time was 21-23 min until F0 value reached 9 min, depending upon the number of abalone. As the solid content was reduced and the temperature of sterilization was increased, the thermal death time was decreased. The score of sensory test indicated that there was no significant difference in flavor of heated Chunbok-jang product made at different sterilization temperatures (110, 121.1, 125, and 130℃). Heated Chunbok-jang product, however, sterilized at 125oC showed the highest score in texture and taste values. Salinity and pH were not changed during seven month storage, but texture became firmer, and any microorganism had not been detected from the heated chunbok-jang product during these periods. As a result of the storage experiment, the shelf-life of heated Chunbok-jang product was 3-month at room temperature.

        연구논문 : 원도심지역의 사회적 자본이 주거만족도에 미치는 영향 -광주광역시 주거유형을 중심으로-

        Social capital, which is accumulated through the interactions of various community members, is coming to the forefront in research on urban renewal and community revitalization. It is currently under focus in the fields of regional development and urban planning due to its relation with residential quality of life. However, until now, the majority of research on social capital in those fields has been studies either measuring its influences in multi-dwelling units (MDUs) or comparing social capital vis-a-vis the physical characteristics of MDUs. This paper states that social capital is necessary in bringing residents into a cooperative planning process in order to encourage participation in community projects and improve the quality of life through democratic governance. The purpose of this research is to deduce and compare the key factors of social capital’s influence on residential satisfaction in various types of housing (MDUs, single-family housing), and to infer forms social capital can take, and the ways to measure them. The main results of the analysis are as follows: First, networking is the most important factor of influence, as the expansion of social capital depends on it. Second, because social capital uses public trust as its basis, community access is necessary to the expansion of social capital. Third, social capital based on open networks is characterized by participation in groups that tend towards vertical relationships and by passive participation. Fourth, participation in groups tending towards horizontal relationships is characteristic of social capital based on closed networks, and forms of active participation emerged.

        Through the linkage between urban tourism and urban regeneration projects, expansion and improvement of tourist accommodation facilities that can feel the unique culture and atmosphere of the region ultimately lead to regional participation, entrepreneurial activation, and location-based policy within the urban revitalization area. It is the beginning of this research that has paid attention to the point. To encourage urban regeneration in connection with urban tourism in sustainable urban regeneration, the purpose of this study is to find out the characteristics of the facilities that affect the satisfaction of use of tourist accommodation facilities (hanok experience business, foreign tourist city, private ministry) operated in the urban revitalization area of Dong - gu, Gwangju Metropolitan City. To do this, multiple regression analysis was conducted on the characteristics of tourist accommodation as independent variable (facilities, location), service (staff, provision, culture) and satisfaction level (price, revisit, recommendation) as dependent variables. The results showed that service (employee, donation, culture) factors affect service satisfaction. In order to revitalize the region through enhancing the competitiveness of tourist accommodation in the area, it is necessary to consider the services provided by the facility operators and the various tourist information and information provided by the facilities, and providing programs to promote exchange activities among guests.

        연구논문 : 대학 캠퍼스 외부시설의 공간적 특성이 지역커뮤니티 구성요소에 미치는 영향 -전남대학교 용봉캠퍼스를 사례로-

        도시 내 대토지소유자이자 지역경제의 주체로 대학의 캠퍼스는 소재 주변지역에 경제적·사회적·물리적으로 많은 영향을 미친다. 대학 소재 주변지역 사회와의 협력적 네트워크를 통한 지역 재생과 대학의 사회적 책임 및 공헌이 대두되는 시점에서 도시형 캠퍼스가 지역 커뮤니티 형성에 영향을 준다는 가정하에 캠퍼스 외부시설 및 외부공간의 변화가 일어나고 있는 실정이다. 본 연구는 이러한 맥락에서 캠퍼스 외부시설의 공간적 특성이 지역 커뮤니티 형성에 필요한 구성요소에 어떠한 영향을 미치는 지를 실증분석하였다. 이를 위해 선행연구를 통하여 캠퍼스 외부시설의 공간적 특성과 지역 커뮤니티 구성요소에 대한 속성을 변수로 도출하였다. 도출된 변수의 신뢰성 및 타당성을 검증하기 위해 신뢰성분석, 확인적 요인분석을 실시하였고, 최종적으로 캠퍼스 외부시설의 공간적 특성과 지역 커뮤니티 구성요소간의 영향관계를 다중회귀분석을 통해 실증분석 하였다. 조사대상의 모집단은 전남대학교 외부시설(용지, 봉지, 종합운동장)을 이용하는 이용자로, 2012년 5월에 설문조사를 실시하였다. 총 회수된 112부 가운데 유효한 100부를 활용하였다. 독립변수인 캠퍼스 외부시설의 공간적 특성은 선행연구를 통하여 5가지 공적공간의 특성(개방성, 접근성, 연계성, 교류성, 위계성)을 연구 목적에 맞게 2가지(개방성·접근성, 연계성·교류성)로 정의하였으며, 요인분석 결과를 통해 검증하였다. 종속변수인 지역 커뮤니티 구성요소는 지역성, 공동체성, 유기체성이였던 요인들을 연구목적에 맞게 지역성과 유기체성을 통합하고 공동체성을 상호작용과 유대감으로 나누어 사용하였다. 실증분석 결과를 가설을 통하여 구체적으로 살펴보면 캠퍼스 외부시설의 교류성·연계성이 주민들의 상호활동에 큰 영향을 주며, 캠퍼스 외부시설의 개방성·접근성은 지역주민들의 지역유기체성에 영향을 주는 것으로 나타났다. 주민들이 느끼는 공동유대감측면에서는 독립변수 모두가 영향을 미치는 것으로 나타났다. 궁극적으로 캠퍼스 외부시설의 공간적 특성이 지역 커뮤니티 구성요소에 영향을 미친다 할 수 있다. 연구결과, 대학의 물리적 계획(이전·확장·시설확충)을 수립시 대학은 지역사회와의 상호 네트워크를 기반으로 한 계획을 고려해야하는 사회적 책임의 당위성을 실증분석을 통해 입증하였다. 즉, 대학은 지역 커뮤니티 구성원들이 느끼는 캠퍼스 존재가치를 높이기 위해 캠퍼스 외부시설의 개방성, 접근성을 고려한 설계요소가 필요하며, 지역커뮤니티형성을 위해 유대감과 상호활동을 할 수 있는 설계요소가 필요하다. 이러한 캠퍼스 외부시설의 공간 계획·설계를 통해 지역과 지역, 지역과 대학의 커뮤니티를 형성함으로 지역사회-대학의 협력을 기반한 지역 재생이 가능할 것으로 기대한다. In order to analyze the effects of spatial characteristics of campus`s external facilities on a local community, this paper finds each variable through the advanced research and the review of the literature. According to the advanced research. the attributes of the campus`s external facilities arc openness and approach. exchange and connectivity rank by understanding public space and factors of local community component arc locality and organism, community friendship. interaction through the questionnaire. So as to check the validity of Multiple regression analysis. this paper analyzed factor. reliability. correlation and verified a hypothesis through Multiple regression analysis. The results of this study illustrate that the spatial characteristics of campus`s external facilities influenced a local community component. As a result of the study. this paper proves that the university considers plan with local community as the social responsibility of university when the university establish physical plan. This paper is to expect that regional regeneration based on local community-university cooperation.

      • 진해만 빈산소수괴 발생의 경년변동 특성

        As a basic study to improve oxygen deficient water mass(ODW), this study analyzed the spatial and temporal variation of the water quality and investigated the characteristics of ODW in Jinhae bay, from 1989 to 2006 by observing the annual variation of water qualities, the severe polluted area was found, and the effects of a special management sea area in Masan bay and the construction of Pusan Newport on the water qualities was investigated. Finally, we estimated ODW_are, ODW_vol. and ODW_R in Jinhae bay. From the study, it is shown that overall water quality at 2000s has been improved by investigating the variations of dissolved oxygen, chemical oxygen demand, etc. From cluster analysis, Jinhae bay was classified into four regions. The four regions were defined as Southern, Central, Northern, and Eastern. ODW was occurred in all areas of Region I in 1993 and 2002~2004. ODW were not occurred in Region Ⅳ because seawater was well exchanged in the eastern part of Jinhae bay. On the other hand, ODW was generated every year in Region I, this means the southern part is the most polluted area in Jinhae bay. ODW_R was decreased in Region Ⅲ hence, it is shown that water quality of Region Ⅲ has been improved since operating wastewater treatment plant in 1994.
