        Formulating Reduced-fat Sausages with Quinoa or Teff Flours: Effects on Emulsion Characteristics and Product Quality

        This study dealt with the use of quinoa flour (QF) or teff flour (TF) as partial beef fat replacers in the formulation of emulsion-type sausages. A control (C) group was manufactured with 20% beef fat, while the other three groups were formulated with 10% beef fat plus 5% QF (Q), 5% TF (T), and 2.5% QF+2.5% TF (QT). Water-holding capacity of the emulsions was higher in Q (81.81%), T (82.20%), and QT (84.10%) samples than in C (64.83%) samples. Total expressible fluid and expressible fat were the lowest in Q and T samples, indicating the highest emulsion stability of those groups. Incorporation of QF and TF into formulations increased moisture and carbohydrate contents while decreased fat and energy values. Besides, the use of QF was effective to increase protein and dietary fiber contents. T sausages had lower luminosity (L*) and higher yellowness (b*) than C sausages, whilst Q sausages did not result in significant color changes. Higher cook yield values were recorded in Q (97.96%), T (98.21%), and QT (98.15%) samples compared with C (96.44%) samples. Inclusion of QF and TF to formulation led to lower hardness and gumminess, while utilization of TF was also effective to decrease chewiness. Consequently, healthier emulsified sausages were obtained by the inclusion of QF or TF that could decrease the fat content more than 50% without sacrificing overall quality, bringing advantages by quinoa over teff for increasing nutritional value and leading minimal modifications on color and texture.

        Raw and pyrolyzed (with and without melamine) graphene nanoplatelets with different surface areas as PEM fuel cell catalyst supports

        Platinum (Pt) catalysts dispersed on carbon-based support materials are generally used in the polymer electrolyte membrane (PEM) fuel cells. In this study, commercial graphene nanoplatelets (GNPs), with diferent surface areas (320, 530, 800 m2 g−1), were used as catalyst supports in PEM fuel cells. These GNPs were also pyrolyzed under the inert atmosphere, with and without melamine, as the nitrogen (N) source. Various characterizations (Elemental analysis, FTIR, Raman spectroscopy, BET, TEM, HRTEM, SAED, XRD, TGA, ICP-MS, contact angle measurement, CV, ORR, chronoamperometry, EIS, PEM fuel cell performance test) were performed for the detailed analysis of Pt/GNPs. Based on the three-electrode cell system, the lowest electrochemical surface area (ECSA) loss (29.9%), Pt mass activity loss (20.3%) and overall (charge and mass) resistance (42.2 Ω) were obtained with the Pt/M-530 catalyst. According to the in-situ PEM fuel cell performance results, the specifc peak power density was recorded as (450 mW mg Pt−1) for the Pt/R-530 catalyst, which has also the second most hydrophobic catalyst layer surface with the 146.5°±1.28° contact angle value. On the heels of Pt/R-530, the two best performances also belong to the Pt/M-530 (391 mW mg Pt−1) and Pt/P-530 (378 mW mg Pt−1) catalysts of the same group.

        Quality Characteristics of PSE-Like Turkey Pectoralis major Muscles Generated by High Post-Mortem Temperature in a Local Turkish Slaughterhouse

        The objective of this study was to investigate the effects of high post-mortem temperature application on development of pale, soft, exudative (PSE) turkey meat characteristics in terms of local slaughter conditions. Within this scope, it was targeted to obtain PSE-like muscles benefiting from different post-mortem temperature applications. Immediately after slaughter, turkey Pectoralis major (n=15) muscles were kept at various post-mortem temperatures (0, 10, 20, 30, and 40℃) for 5 h. pH values of 40°C treatment were lower than four other treatments (p<0.05). L* values, drip loss, cook loss, and thawing loss of 40℃ group were higher than the other groups (p< 0.05). Napole yield of 40℃ treatment indicated that high post-mortem temperature decreases brine uptake. Protein solubility of 40℃ group was lower than 0℃ group (p<0.05). Expressible moisture did not differ between 0 and 40℃ treatments. Hardness, gumminess and chewiness of 40℃ treatment were higher than 0℃ treatment. The results of this research showed that high post-mortem temperature treatment induced development of PSE-like turkey meat, with lower pH, paler color, higher technological and storage losses, and reduced protein solubility and texture.

        Response of educational research in Turkey to the UN Decade of Education for Sustainable Development

        With the Decade of Education for Sustainable Development (DESD), nations’ engagement with sustainability has differed considerably on the basis of their socio-political priorities. Since reviewing research trends is one way of getting a broad understanding about the value attached to an internationally prioritized issue, such as Education for Sustainable Development (ESD), this study aims to see the coherence and effectiveness of the DESD on the Turkish stakeholders’ side and portrays how such a global issue is addressed in educational research by local actors. The study employed a mixed-method design through a two-step process: a quantitative investigation through numbers to assess the level and direction of the attention paid to ESD; and a qualitative examination through content and collocation analyses to identify key dimensions and prevalent themes. As the sample, the papers published with a focus on ESD themes between the years 2005 and 2014 in three high-impact educational journals in Turkey were included. The data analyses were carried out through: (a) descriptive statistics by use of frequency distribution tables and percentages; (b) a content analysis employed with thematic coding and categorization and (c) a collocation analysis done by means of the software AntConc. The most prevailing themes emerging from the publications were on environmentalism; human values; gender equality; democratic values; multiculturalism; interculturality; morals and character education; student dropouts and absenteeism; life-long learning; community service and responsibility; human rights; children’s rights; citizenship and peace education. All those themes gave crucial hints about the local concerns and socio-cultural priorities of the case of Turkey.

        Variation of Ba concentration in some plants grown in industrial zone in Türkiye

        This study was carried out on Fagus orientalis Lipsky (Oriental beech), Carpinus orientalis (Oriental hornbeam), and Quercus petraea (Matt.) Liebl. (Sessile oak) species that naturally spread out in the Çaycuma district of Zonguldak province, an industrial area in the northwestern Türkiye. The study aimed to determine the annual changes in barium (Ba) concentrations in the annual rings of the wood of the species. Moreover, Ba concentrations in the inner and outer bark were compared with the concentration in the wood, and changes in Ba concentration were determined by years and directions. As a result, the lowest mean Ba concentrations were found in hornbeam for all organs, whereas the highest values in the inner bark (944134 ppb) and wood (46996 ppb) were found in beech. The highest values in the outer bark were found in oak with 927482 ppb. For the three species, the values obtained on the outer side of the outer bark were higher. The study showed that all three species are useful in monitoring the changes in concentrations and the pollution of Ba in the air and can be used for this purpose. However, the most suitable species that can be used to reduce Ba concentration is Fagus orientalis, which has the highest Ba storage ability in the wood part.

        The Impact of Optical Illusions on the Vestibular System

        Background and Objectives: Balance control is maintained in stationary and dynamic conditions, with coordinated muscle responses generated by somatosensory, vestibular, and visual inputs. This study aimed to investigate how the vestibular system is affected in the presence of an optical illusion to better understand the interconnected pathways of the visual and vestibular systems.Subjects and Methods: The study involved 54 young adults (27 males and 27 females) aged 18-25 years. The recruited participants were subjected to the cervical vestibular evoked myogenic potentials (cVEMP) test and video head impulse test (vHIT). The cVEMP and vHIT tests were performed once each in the absence and presence of an optical illusion. In addition, after each test, whether the individuals felt balanced was determined using a questionnaire.Results: cVEMP results in the presence of the optical illusion showed shortened latencies and increased amplitudes for the left side in comparison to the results in the absence of the optical illusion (<i>p</i>≤0.05). When vHIT results were compared, it was seen that the right lateral and bilateral anterior canal gains were increased, almost to 1.0 (<i>p</i><0.05).Conclusions: It is thought that when the visual-vestibular inputs are incompatible with each other, the sensory reweighting mechanism is activated, and this mechanism strengthens the more reliable (vestibular) inputs, while suppressing the less reliable (visual) inputs. As long as the incompatible condition persists, the sensory reweighting mechanism will continue to operate, thanks to the feedback loop from the efferent vestibular system.

        Genetic Diversity in the Coat Protein Genes of Prune dwarf virus Isolates from Sweet Cherry Growing in Turkey

        Sweet cherry is an important fruit crop with increasingeconomical value in Turkey and the world. A numberof viruses cause diseases and economical losses in sweetcherry. Prune dwarf virus (PDV), is one of the mostcommon viruses of stone fruits including sweet cherryin the world. In this study, PDV was detected from316 of 521 sweet cherry samples collected from 142orchards in 10 districts of Isparta province of Turkeyby double antibody sandwich-enzyme linked immunosorbentassay (DAS-ELISA). The presence of PDV inELISA positive samples was confirmed in 37 isolates byreverse transcription- polymerase chain reaction (RTPCR)method. A genomic region of 862 bp containingthe coat protein (CP) gene of PDV was re-amplifiedfrom 21 selected isolates by RT-PCR. Amplified DNAfragments of these isolates were purified and sequencedfor molecular characterization and determining geneticdiversity of PDV. Sequence comparisons showed 84-99% to 81-100% sequence identity at nucleotide andamino acid level, respectively, of the CP genes of PDVisolates from Isparta and other parts of the world. Phylogeneticanalyses of the CP genes of PDV isolates fromdifferent geographical origins and diverse hosts revealedthat PDV isolates formed different phylogeneticgroups. While isolates were not grouped solely basedon their geographical origins or hosts, some associationbetween phylogenetic groups and geographical originsor hosts were observed.

        A RECENT GENERALIZATION OF COFINITELY INJECTIVE MODULES

        Let R be an associative ring with identity and M be a left R-module. In this paper, we define modules that have the property (δ- CE) ((δ-CEE)), these are modules that have a δ-supplement (ample δ- supplements) in every cofinite extension which are generalized version of modules that have the properties (CE) and (CEE) introduced in [6] and so a generalization of Zöschinger’s modules with the properties (E) and (EE) given in [23]. We investigate various properties of these modules along with examples. In particular we prove these: (1) a module M has the property (δ-CEE) if and only if every submodule of M has the property (δ-CE); (2) direct summands of a module that has the property (δ-CE) also have the property (δ-CE); (3) each factor module of a module that has the property (δ-CE) also has the property (δ-CE) under a special condition; (4) every module with composition series has the property (δ- CE); (5) over a δ-V -ring a module M has the property (δ-CE) if and only if M is cofinitely injective; (6) a ring R is δ-semiperfect if and only if every left R-module has the property (δ-CE).
