        The Effect of the Addition of Encapsulated Collagen Hydrolysate on Some Quality Characteristics of Sucuk

        The effect of addition commercial fish collagen hydrolysate and encapsulated fish collagen hydrolysate on the quality characteristics of sucuk (a traditional Turkish dry-fermented sausage) was investigated. Fish collagen hydrolysates were encapsulated with maltodextrin (MD) which has two different dextrose equivalent (12DE and 19 DE), with two different types of core/coating material ratios (10% peptide : 90% MD, 20% peptide : 80% MD). Than six group of sucuk dough (control, peptide, MD1210, MD1220, MD1910, MD1920) prepared and naturally fermented. The effects of the ripening period (28 d), treatment (peptide and encapsulated peptide addition) ‘ripening period × treatment’ interaction on sucuk’s pH, lactic acid contents, aw values and moisture contents were statistically significant (p<0.01). The pH, moisture and aw decrease and lactic acid concentration increses during ripening period. The highest pH was observed with peptide added group (5.41), and encapsulated peptide added groups (4.76-4.77) were lower than the control group (5.26). Lactic acid concentration was affected from treatment and all treatment groups lactic acid concentration (0.185-0.190%) were higher than the control group (0.164%). Antioxidant and Angiotensin converting enzyme inhibition activities of water soluble protein extracts were significantly (p<0.01) increased during ripening time. Antioxidant activity reached the highest level at 28th d. There was no significant increase observed after fermentation for both activities. Antioxidant activity of encapsulated peptide added (%39.56-40.48) groups were higher than control (34.28%) and peptide added (33.99%) groups except MD1920 (38.30%). The effect of the ripening period of the sucuk samples on TBA values was found to be statistically significant (p<0.01) while treatment and ‘ripening period × treatment’ interaction were not to be significant (p<0.05).         Effect of Orifice Induced Hydrodynamic Cavitation on the Properties of Waste Activated Sludge

        Exploring alternative methods to reduce the quantity of wastewater sludge and improve its characteristics is among the prioritized subjects in the field of sludge management. Hydrodynamic cavitation, commonly employed for water and wastewater treatment, also holds the potential for utilization as a pre-treatment method for sludge. In the presented study, the excess sludge obtained from the wastewater treatment facility of a food and beverage manufacturing factory was collected and disintegrated with a orifice-induced hydrodynamic cavitation unit. According to the data obtained, the highest cavitation performance was achieved under the condition where the cavitation number was set to 0.3. In addition, hydrodynamic cavitation performed under the optimum operating conditions, significantly increased the solubility of waste activated sludge. The results showed that the soluble chemical oxygen demand concentration, which was initially determined as 382 mg/l, reached 3,068 mg/l end of the cavitation. 64% of the total Kjeldahl nitrogen and 60% of the total phosphorus of waste-activated sludge were converted into soluble forms by the effects of hydrodynamic cavitation. Moreover, the results of the microbial study indicated that removal rates of indicator bacteria varied between 94% and 99%.

        Synthesis, Antioxidant and Antimicrobial Evaluation of Simple Aromatic Esters of Ferulic Acid

        Aromatic ester derivatives of ferulic acid where the phenolic hydroxyl is free (6a-d) or acetylated (5a-d) were evaluated for their antioxidant and antimicrobial properties. The superoxide radical scavenging capacity of compounds 5d and 6d-e (IC_50 of 0.19, 0.27 and 0.20 mM, respectively)was found to be twice as active as α-tocopherol (IC_50 = 0.51 mM). DPPH radical scavenging capacity was moderate and only found in compounds bearing free phenolic hydroxyl groups (6a-e). With regard to antimicrobial properties, compounds 6b and 6c displayed significant activity against Enterococcus faecalis (MICs = 16 μg/mL) and vancomycin-resistant E. faecalis (MIC for 6b, 32 and for 6c, 16 μg/mL). Compound 6c also demonstrated prominent activity against planktonic Staphylococcus aureus with a MIC value of <8 μg/mL and it inhibited bacterial biofilm formation by S. aureus with a MBEC value of <8 μg/mL, which was 64 and 128 times more potent than ofloxacin and vancomycin, respectively.

        In the shadow of gender : Wives of prisoners in Turkey

        Imprisonment of men can many negative economic, social and psychological effects on prisoners, their spouses and children. It is important to evaluate these and understand the gender-related experiences of wives of prisoners. So, we conducted three focus group discussions (FGDs) with 14 women in Turkey. We used an inductive content analysis approach and identified four relevant themes as follows: (1) women’s roles (as spouse, mother and social beings), (2) poverty, (3) stigma and exclusion, and (4) coping mechanisms. We noted that our respondents faced economic problems, difficulties in raising children, social exclusion, and emotional difficulties. In Turkey, gender norms and insufficient policies and services for such women exacerbate such issues. It is therefore important to develop gender-sensitive services that would empower and support them.

        Impact of lymph node ratio on survival in stage IIIC endometrioid endometrial cancer: a Turkish Gynecologic Oncology Group study

        OBJECTIVE: The purpose of this study was to investigate the prognostic value of lymph node ratio (LNR) in women with stage IIIC endometrioid endometrial cancer (EC). METHODS: A multicenter, retrospective department database review was performed to identify patients with stage IIIC pure endometrioid EC at 6 gynecologic oncology centers in Turkey. A total of 207 women were included. LNR, defined as the percentage of positive lymph nodes (LNs) to total nodes recovered, was stratified into 2 groups: LNR1 (≤0.15), and LNR2 (>0.15). Kaplan-Meier method was used to generate survival data. Factors predictive of outcome were analyzed using Cox proportional hazards models. RESULTS: One hundred and one (48.8%) were classified as stage IIIC1 and 106 (51.2%) as stage IIIC2. The median age at diagnosis was 58 (range, 30-82) and the median duration of follow-up was 40 months (range, 1-228 months). There were 167 (80.7%) women with LNR ≤0.15, and 40 (19.3%) women with LNR >0.15. The 5-year progression-free survival (PFS) rates for LNR ≤0.15 and LNR >0.15 were 76.1%, and 58.5%, respectively (p=0.045). An increased LNR was associated with a decrease in 5-year overall survival (OS) from 87.0% for LNR ≤0.15 to 62.3% for LNR >0.15 (p=0.005). LNR >0.15 was found to be an independent prognostic factor for both PFS (hazard ratio [HR]=2.05; 95% confidence interval [CI]=1.07-3.93; p=0.03) and OS (HR=3.35; 95% CI=1.57-7.19; p=0.002). CONCLUSION: LNR seems to be an independent prognostic factor for decreased PFS and OS in stage IIIC pure endometrioid EC.
