        해초비빔밥을 단기간 일상식으로 상용했을 때 배변습관 개선에 미치는 영향

        The purpose of this study was to evaluate the effects of routine haecho bibimbab (boiled rice with assorted seaweed mixtures) consumption on the bowel habits in humans. Forty free-living adults (female 38, male 2) participated in this study (mean age 41.2 ± 7.5). After a baseline survey on general characteristics, life style and dietary habits, the participants were asked to consume haecho bibimbab during two-week period for lunch. Habitual bowel movements were checked out every day by a questionnaire and nutrient intake was estimated by a 24-hour recalls before and after the study. After 2 weeks of clinical trial, the bowel habits had improved. Haecho bibimbab increased the number of bowel movements, changed hard stools into softer ones. It also lessen the sense of incomplete evacuation, and abdominal pain during defecation, increased water intake (p < 0.001) and improved gastrointestinal problem. The participants believed that haecho bibimbab was effective in improving their constipation symptoms and bowel habits (p < 0.01). Routine haecho bibimbab consumption tended to increase especially vitamin A, E and folate intake (p < 0.01). The present findings suggest that routine seaweed-based lunch meal (haecho bibimbab) consumption may improve bowel habits without side effects.

        유해환경에 노출되기 쉬운 공장근로자의 건강관련 행동과 돼지고기 급여에 의한 영양소섭취 상태의 변화

        This study was conducted to evaluate the health status, life style, dietary habits and nutritional status of 44 industry workers that were routinely exposed to unclean environments while consuming 3 major pork dishes 2 times a week for 6 weeks. The health status, life style and dietary habits of the workers were investigated by a survey questionnaire, and the nutritional status was evaluated using the 24-hour recall method. Overall, the subjects reported that their health status was fairly good throughout the year, but that they felt dizziness and fatigue often. In general, the subjects did not exercise regularly and drank alcohol very often. The average daily energy intake increased from 1,708.3 kcal to 1,859.5 kcal without a change in the BMI or WHR when the respondents were fed pork dishes. However, the mineral intake did not differ significantly in response to the consumption of pork, although the Zn intake tended to increase. Moreover, the vitamin B1, niacin, and E intakes increased after consuming pork(p<0.05), while the cholesterol intake decreased from 425.2 mg to 356.7 mg after eating pork(p<0.05). Additionally, both the fat intake and the PUFA intake increased after the consumption of pork with the intake of oleic, linoleic and linolenic acids increasing significantly(p<0.001). Finally, the intake of essential amino acids also increased significantly in response to the consumption of pork(p<0.01). Based on the results, regular consumption of pork dishes improved the nutritional status of industry workers without any adverse effect in terms of the intake of relative fat and cholesterol.

        미숙사과를 이용한 사과마스크팩의 정기적인 사용이 중년여성의 피부상태 개선에 대한 임상효과 평가

        The effects of unripe apple mask pack made from unripe apple extracts on the skin status of middle-aged women for 4 weeks were investigated. The subjects were divided into three groups: placebo mask pack as the control (PM, n = 8), apple mask pack (AM, n = 16), and apple mask pack + apple intake (AAM, n = 12). The study included a survey questionnaire, and evaluations of nutrients intakes and of skin status. Skin status was measured by Aramo-TS. After 4 weeks, facial moisture, elasticity, evenness, and wrinkle level were improved in AM and AAM. The facial moisture level (AM: +3.13 ± 2.73, AAM: +2.25 ± 2.93) and elasticity level (AM: +5.81 ± 8.27, AAM: +5.50 ± 6.13) of AM (p < 0.001) and AAM (p < 0.05) were increased. The facial evenness level (AM: -5.25 ± 8.13, AAM: - 9.17 ± 4.26) and wrinkle level (AM: -10.88 ± 11.74, AAM: -17.83 ± 12.22) were significantly decreased. AAM was more effective in improving skin elasticity, evenness, and wrinkle. The skin status of PM was not changed. While the macronutrient intakes of all the subjects were not different before and after the study, the daily intakes of some vitamins (vitamins B6, C, and E and folic acid) during the study were significantly increased in AAM. These findings suggested that regular use of apple mask pack was effective in improving overall skin status. Furthermore, the consumption of apples with mask pack application was much better in improving skin status.

        율무청국장이 고지방식이를 급여한 흰쥐의 체중변화 및 지질대사에 미치는 영향

        율무청국장이 고지방식이를 섭취한 흰쥐의 체중 및 체지방, 혈청과 간, 분변의 지질농도 및 혈당농도 등에 미치는 영향을 조사하고자 SD계 수컷 흰쥐를 대상으로 고지방식이(D12492, 45 kcal fat)에 청국장 및 율무청국장(율무 함량 20%) 분말을 각각 10%, 20%씩 중량비로 첨가하여 5주간 급여한 결과는 다음과 같다. 체중증가량은 군별 유의성이 없었으나 식이효율은 고지방식이 대조군에 비해 율무청국장 분말 20% 첨가군에서 유의적으로 낮았으며(p<0.05), 지방조직의 무게는 실험군 간에 유사한 수준을 나타내었다. 배변량 및 간 조직의 총콜레스테롤과 중성지방 함량은 군별 유사한 경향을 나타내었으며, 분변의 총콜레스테롤 함량은 군별 유의적 차이가 없었으나 중성지방 함량은 대조군에 비해 실험식이 첨가 수준에 따라 유사하거나 증가하는 경향을 보였다. 혈청 총콜레스테롤, HDL-콜레스테롤 및 LDL-콜레스테롤 농도는 군별 유의적인 차이가 없었으나 동맥경화지수와 심혈관위험지수는 청국장 분말 10%, 20% 및 율무청국장 분말 20% 첨가군에서 대조군보다 유의적으로 낮았으며(p<0.05), 중성지방 농도는 대조군에 비해 청국장 및 율무청국장 분말 20% 첨가군에서 유의적으로 감소하였다(p<0.05). 한편, 혈당 농도는 실험군 간에 유의적인 차이가 없는 것으로 드러났다. 이상에서 율무청국장 식이는 식이효율의 감소, 중성지방의 배설량 증가, 그리고 혈청 중성지방 농도의 감소 및 동맥경화지수와 심혈관위험지수의 감소 등의 효과를 확인할 수 있었다. This study was performed to investigate the effects of Cheonggukjang added with Job's tears (CAJT) on antiobesity and lipid profiles on diet-induced obese rats. Male Sprague-Dawley rats were fed high-fat diet only (A, control), and high-fat diet with Cheonggukjang powder 10% (B), CAJT powder 10% (C), Cheonggukjang powder 20% (D), CAJT powder 20% (E) for 5 weeks. Body weight gains were similar in the experimental groups, but FER was significantly lower in the group E than group A (p<0.05), and adipose tissue weights in groups with Cheonggukjang and CAJT powder were similar to those in the group A. The lengths of small intestine were significantly longer in the groups B, C, D, and E than the group A (p<0.05). Hepatic concentrations of total cholesterol (TC) and triglyceride (TG) were similar to each other. Fecal weights were not significantly different among the groups. Fecal TC concentrations were similar in the experimental groups, but fecal TG concentrations were greatly increased in the groups B, D, and E (p<0.05). The serum TC, HDL-C and LDL-C levels varied slightly among the groups, but serum TG levels were decreased in the group D and E than in the group A (p<0.05). The AI and CRF were marginally decreased in the groups B, D, and E than in the group A (p<0.05). However, blood glucose levels were not significantly different among the groups. From the findings, it had shown that Job's tears Cheonggukjang could improve lipid profiles.

        일부 초등학생의 아토피피부염 유무에 따른 식습관, 식품섭취양상 및 영양소섭취상태 비교

        본 연구는 아토피피부염을 가지고 있는 아동과 정상 아동의 식습관, 식품섭취양상 및 영양소섭취상태 비교를 위해 서울 소재 1개교와 울산의 2개 초등학교에 재학 중인 5, 6학년 388명을 대상으로 설문지를 이용하여 실시되었다. 조사는 2008년 7월 7일부터 7월 18일까지 총 2주간 실시하였으며, 조사대상자 중 아토피피부염군은 16.7%(65명), 정상 아동군은 83.3%(323명)로 나타났다. 아토피피부염 아동군은 남학생 29명, 여학생 36명으로 남아보다는 여아에게서 더 호발 되었으며 대부분 7~13세에 아토피피부염이 유발된 것으로 나타났다. 아토피피부염 아동군 중 병원치료를 받고 있는 경우는 20.0%였고 아토피피부염 유발에 영향을 주는 식품인 튀김, 패스트푸드, 우유 등의 섭취를 제한하고 있었다. 식습관의 경우, 아토피피부염 아동군이 정상 아동군에 비해 식습관이 불규칙적인 것으로 나타났으며(p<0.05), 아토피피부염의 유발과 연관 있는 식품 중 우유, 돼지고기, 게, 메밀, 닭고기, 고등어, 복숭아, 토마토의 섭취량이 정상 아동군에 비해 아토피피부염 아동군에서 높게 나타났다. 또한, 아토피피부염 아동군이 열량(p<0.001), 총 단백질(p<0.05), 식물성 단백질(p<0.001), 당질(p<0.001), 식이섬유소(p<0.01), 칼륨(p<0.05), 아연(p<0.001), 비타민 B1(p<0.001), 나이아신(p<0.01), 비타민 C(p<0.05) 및 엽산(p<0.01) 등의 섭취량이 정상 아동군에 비해 유의적으로 적었다. 본 연구결과 아토피피부염 아동은 정상아동에 비해 식습관이 불규칙적이고, 아토피피부염 유발식품의 섭취량은 많았으며, 대부분의 영양소 섭취량이 정상아동에 비해 적었다. 이러한 결과는 식품과 연관성이 높은 소아 아토피피부염에 부정적인 영향을 줄 수 있을 것으로 보이며, 아토피피부염 아동에 대해 적절한 식품의 선택과 균형 잡힌 식생활 및 식습관 교정의 필요성이 매우 절실한 것으로 판단된다. 따라서 아토피 피부염을 악화시키는 원인식품의 섭취를 제한하는 것과 더불어 올바른 영양교육 및 지도가 이루어져야할 것으로 생각된다. The aim of this study was to examine and compare the eating habits, dietary intake patterns and nutrient intake status of children with and without atopic dermatitis by questionnaire during July, 2008. A total 388 subjects of 5th and 6th grade elementary school children (AG: atopic group, n=65, NG: non-atopic group, n=323) in Seoul and Ulsan areas participated in this study. The questionnaire included general characteristics, dietary habits, and atopy-related food frequency. One-day 24 hour recall was collected to estimate nutrient intakes of the subjects. The data were analyzed by Chi-square test for food frequency analysis and by t-test for nutrient intakes. Atopy-related foods included milk, buckwheat, beef, pork, chicken, crab, egg, mackerel, peach, and tomato. From the findings, AG had a more irregular eating habit than NG (p<0.05). In case of food frequency, AG tended to consume more atopy-related foods than NG (p>0.05). The nutrient intakes of AG were significantly lower than those of NG (p<0.05), but only intake of animal iron in AG was higher than NG (p<0.05). NG consumed more protein than AG (p<0.05). Although milk was a noted hypersensitive allergic food, frequency and the amount of milk intake were not significantly different between two groups. In conclusion, atopic children had eaten more atopy-related foods and less nutrient intakes. Therefore, it is necessary to educate on good nutrition and guide atopic children and their parents.

        국민건강영양조사 제4기 2차년도 (2008)를 이용한 어패류 섭취빈도에 따른 한국 성인의 혈중 중금속 농도 조사

        To determine blood heavy metal concentrations by seafood consumption in Korean adults, blood cadmium, mercury, and lead concentrations in a representative sample of 1, 709 Koreans participated in the Fourth Korea National Health and Nutrition Examination Survey (KHANES IV-2) in 2008 were analyzed by age and seafood consumption frequency. The mean blood cadmium, mercury, and lead concentrations were 1.14 ± 0.73 μg/L, 5.50 ± 3.83 μg/L, and 2.56 ± 1.22 μg/dL, respectively. The subjects aged ≥ 50 years had significantly higher blood cadmium concentrations than the subjects aged 20~39 years. Blood mercury concentrations of the 50's were significantly higher than those of the 20's and 30's (p < 0.05). Approximately, 43% of males and 22% of females had blood mercury concentrations > 5.8 μg/L which is a blood mercury level equivalent to the current Reference Dose. Only 2 subjects had lead concentrations > 10 μg/dL, the standard lead level by the Centers for Disease Control and Prevention, USA. The subjects consuming pollack, mackerel, anchovy, corvina, shellfish, and salted seafood at least once a week had significantly higher mercury concentrations than the subjects consuming those seafoods less than once a month. However, there were no clear relationships between blood cadmium and lead concentrations and seafood consumption frequencies. (Korean J Nutr 2011; 44(6): 518~526)

        홍국고구마가 고지방식이를 급여한 흰쥐의 배변량 및 지질대사에 미치는 영향

        홍국고구마가 고지방식이를 섭취한 흰쥐의 배변량 및 지질대사 개선에 미치는 영향을 조사하고자 SD계 수컷 흰쥐를 대상으로 실험 1기(6주)에 고지방식이를 급여하고, 실험 2기(4주)에 3종의 고구마분말(일반, 홍국, 자색)을 5% 첨가한 식이를 급여했을 때, 배변량은 홍국고구마군(RYSP)이 고지방대조군(CON)에 비해 유의하게 증가하였고(p<0.05), 장 통과시간 역시 RYSP군이 가장 짧았다. 분변 중 총콜레스테롤(TC) 함량은 일반고구마군(WFSP)과 홍국고구마군(RYSP)이 유의하게 높았고(p<0.05), 그중에서도 RYSP군이 더 높은 함량을 나타내었으며, 중성지방(TG) 농도는 RYSP군이 WFSP군과 PFSP(자색고구마)군에 비해 각각 9%, 26% 더 높았으나 유의성은 없었다. 반면 1일 총 지질배설량은 TC와 TG 모두 RYSP군이 CON군과 PFSP군에 비해 유의적으로 높았다(p<0.05). 혈청 중 TC 농도는 RYSP군이 CON군에 비해 유의적 차이 없이 20% 감소하였고, LDL-C 농도는 RYSP, PFSP군이 CON군보다 통계적으로 유의하게 낮았으며(p<0.05), TG 농도는 RYSP군이 실험군중 가장 낮았고 이는 WFSP군과 유의적인 차이가 있었다(p<0.05). 이상의 결과에서 홍국고구마 식이는 배변량을 증가시키고, 분변 중 지질 배설량을 다소 증가시키며, 혈청 지질 농도의 감소효과를 확인할 수 있었다. This study was performed to investigate the effects of a diet with a red yeast sweet potato supplement on fecal amount and lipid metabolism in male Sprague-Dawley rats fed a high-fat diet for 10 weeks. Rats were fed a high-fat diet (15% fat) with additional lard (7%) and cholesterol (1%) based on AIN-93G basal diet (7% fat) for 6 weeks during the first phase. In the second phase, which lasted 4 weeks, the rats divided into four experimental groups which were composed of a high-fat diet group as a control (CON), a high-fat diet with 5% white-fleshed sweet potato supplement group (WFSP), a high-fat diet with 5% red yeast sweet potato supplement group (RYSP), and a high-fat diet with 5% purple-fleshed sweet potato supplement group (PFSP). The fecal amount of group RYSP increased significantly during the second phase compared to the other groups (p<0.05). The fecal total cholesterol (TC) and triglyceride (TG) content of group RYSP were also highest among all experimental groups. The serum TC and TG were shown to have the lowest levels in the group RYSP, and LDL-cholesterol levels were significantly decreased in groups RYSP and PFSP than in group CON (p<0.05). These results indicate that supplementation with red yeast sweet potato seemed to be effective in increasing feces and fecal lipid excretion, and also in decreasing serum lipid levels in rats fed a high-fat diet.

        뽕잎 및 꾸지뽕잎 첨가식이가 Streptozotocin 유발 당뇨쥐의 혈당관련 바이오마커에 미치는 영향

        뽕잎 및 꾸지뽕잎이 당뇨쥐의 혈당관련 바이오마커(biomarkers)에 미치는 영향을 조사하고자 SD계 수컷 흰쥐에게 STZ 투여(47.5 ㎎/㎏ bw) 후 7일 뒤 혈당치가 350 ㎎/㎗ 내외되는 쥐를 선별하여 실험군당 8마리씩 배치하고, AIN-93G를 기본식이로 하여 뽕잎 10% 첨가군(A), 뽕잎 10%와 꾸지뽕잎 10%(B) 및 30%(C) 혼합 첨가군, 꾸지뽕잎 10% 첨가군(D), 당뇨대조군(E)으로 나누어 각 실험식이를 6주간 급여한 결과는 다음과 같다. 실험기간 동안 B군과 C군의 혈당치는 실험식이 급여 전 기준혈당치와 비슷한 수준을 유지하였고 실험 6주째의 경우 E군 및 A, D군에 비해 유의하게 낮았다(p<0.05). 기준혈당 대비 6주 후 혈당상승률은 B군과 C군이 각각 6.7, 7.6%로 E군(29.2%)에 비해 상대적으로 낮았으며, 6주간 혈당치의 곡선하면적(AUC)도 B, C군이 D, E군보다 유의하게 낮았다(p<0.05). 실험종료 후 공복혈당 역시 B, C군이 D, E군에 비해 통계적으로 유의하게 낮았고(p<0.05), C-peptide 함량은 C군이 다른 군에 비해 평균 50 p㏖/ℓ 가량 높았으나 유의적인 차이는 없었으며, 당화 혈색소(HbA1c) 함량은 A군과 B군이 E군보다 유의하게 낮았다(p<0.05). 혈청 총콜레스테롤(TC) 농도는 E군에 비해 실험시료 급여군이 평균 14% 감소하였고, HDL-콜레스테롤 농도는 시료 처리군이 E군보다 평균 27% 증가하였으나 실험군 간에 유의적인 차이는 없었으며, 중성지방(TG) 농도는 E군에 비해 A, B, D군에서 유의적으로 감소하였다(p<0.05). 간기능치 중 AST 및 ALT 활성은 E군보다 A, B, D군에서 통계적으로 유의하게 감소하였다(p<0.05). 이상의 결과에서 뽕잎 및 꾸지뽕잎 첨가식이 중 이들을 1:1로 혼합하여 STZ로 유도한 당뇨쥐에게 급여하였을 때 혈당상승을 억제하고 혈당관련 지표성분, 그리고 혈청 지질농도 및 간기능치 개선에도 다소간의 효과를 확인할 수 있었다. This study investigates the effects of diets with mulberry leaf and Cudrania tricuspidata leaf supplements on blood glucose-related biomarkers in streptozotocin-induced diabetic rats. Male diabetic Sprague-Dawley rats were divided into groups and fed several diets. Group A was fed a diet with a 10% supplement of mulberry leaves. Group B was fed a diet with a 10% supplement of mulberry leaves and an additional 10% supplement of Cudrania tricuspidata leaves. Group C was fed a diet with a 10% supplement of mulberry leaves and an additional 30% supplement of Cudrania tricuspidata leaves. Group D was fed a diet with a 10% supplement of Cudrania tricuspidataleaves. Group E was the DM control. All diets were based on AIN-93G diet and they all lasted 6 weeks. The blood glucose levels of groups B and C stayed similar to initial levels (reference blood glucose) for the experimental period, which was significantly lower than levels in groups A, D, and E at the 6th week (p<0.05). And the area under the blood glucose curve (AUC) was also significantly lower in groups B and C than in groups D and E (p<0.05). The fasting blood glucose level after the experiment was significantly lower in groups B and C (p<0.05), and the C-peptide content of group C was as high as 50 pmol/L on average. The HbA1c content was also significantly lower in groups A and B than in group E (p<0.05). The serum TG, AST, and ALT levels were significantly decreased in groups A, B, and D than in group E (p<0.05). From the findings, it is shown that a diet of 1:1 mulberry and Cudrania tricuspidataleaf supplements could improve blood glucose-related biomarkers.

      • 한국 노인복지관 경로식당의 급식환경 및 급식관리 실태 조사

        The purpose of this study was to investigate the current state of foodservice management practices and kitchen facilities of the cafeteria in elderly welfare center. Survey was conducted with the foodservice managers at 77 elderly welfare centers (response rate: 45%) out of 171. The results were as follows: 1. Operation duration was mostly 5~8 years and average users 200~400, 5~6 times of weekly working days, and 71~110 seats available during meal time. Two major problems encountered in current foodservice at elderly welfare centers were the registration of the institution and budget use. Most of the cafeterias in elderly welfare centers surveyed were registered public meal service but some(18.2%) operated without registration for several years. A way of fundraising to buy a new equipment over a million won, about half of the cafeterias in elderly welfare centers use their budget to buy new items from the food budgets instead of government`s support. 2. Foodservice status and kitchen environment part has complicated problems which derived from insufficiently-equipped facilities. Most of cafeterias have operated about 8 years but some remodeled to take new facilities and to improve sanitary conditions even within 1~4 operation year. Cafeteria`s kitchen ventilation systems are in poor condition to ventilate heat and extra gases. Sink tables are in danger of cross contamination using the same sink table both vegetable and fish or meat without chloride sterilization. 3. Foodservice sanitation management, facilities and structures are showed unsatisfactory performance level especially separating cooking area and preprocessing area. There are few toilet and hand wash systems appropriately equipped. Also poorly performed in cross contamination sections; separated use of kitchen items such as sink tables, chopping boards and knives. Most of all elderly restaurants do not sterilize vegetables even people eat raw.
