        아스파라거스 순의 굵기가 저장 중 품질에 미치는 영향

        본 실험은 MA저장과 관행저장(유공필름 포장)조건에서 아스파라거스의 굵기가 저장 중 품질에 미치는 영향을 알아보고자 실시하였다. 아스파라거스는 10 mm, 15 mm 로 선별하여 40일 동안 4℃에 저장되었다. 생체중은 굵기에 상관없이 MA저장에서는 약 0.3% 이하의 감소율을 보였으나, 관행저장에서는 3-4%까지 감소하였다. 포장내 이산화탄소 농도는 모든 MA저장에서 5-15%를 보였으며, 산소 농도는 5% 이상유지 하였다. 에틸렌 농도는 1일차에 급격히 증가 하였다가 이내 감소하는 경향을 나타 내었는데, 포장 내 가스 농도 변화는 아스파라거스의 굵기에 상관없이 유사한 경향을 보였다. 저장중 외관상 품질은 MA저장이 관행저장보다 우수하였으며, 관행저장에서 10 mm가 가장 낮았다. 저장최종일에 조사한 이취는 굵기에 상관없이 관행저장에서 MA저장보다 높았는데, 관행 저장에서 저장 후반기에 곰팡이 발생과 부패가 많았기 때문이라 판단된다. 경도는 MA저장이 관행저장보다 높았으며, 굵기별로 15 mm가 10 mm 보다 더 높았다. 당도는 관행 15 mm에서 가장 높았다. Hue angle 값은 10 mm와 MA저장에서 높았다. 이상의 결과로 관행 저장 및 MA저장의 경우 모두 15 mm가 적합하다고 판단된다. 따라서 아스파라거스의 MA저장은 황화억제 및 품질 유지에 관한 유통기간 연장효과가 있는 것으로 판단된다. This study was carried out the investigate the effect of different stem diameter on qualities of asparagus in MA storage and conventional storage (packed with perforated film). Asparagus were sorted by stem diameter, such as 10 mm and 15 mm and then stored at 4℃ for 40 days. Fresh weight loss rate was 3-4% in conventional storage and under 0.3% in MA storage regardless of stem diameter. Carbon dioxide contents within a package maintained 5-12%. Oxygen contents were more than 5%. Ethylene contents were quickly increased after one day of storage and then dropped down to the final storage day. Gas compositions within a package did not shown any significant differences between asparagus stem diameter. Visual quality in MA storage had higher value than conventional storage and 10 mm stem diameter of conventional storage was shown the lowest value. Off-flavor had shown the better result in MA storage regardless of stem diameter, because fungi and decay occurred during the late period of storage. Firmness was higher in MA storage than conventional storage and 15 mm stem diameter showed higher than 10 mm in MA storage. Soluble solid contents were highest the 15 mm conventional storage. Hue angle value was higher the 10 mm MA storage than others and MA storage had higher value then conventional storage. The results were indicated that the 15 mm stem diameter of asparagus was suitable for conventional storage, although the stem diameter of asparagus did not have a significant effect on storability in MA storage.

      • UV-C 조사와 MAP 처리가 저장 중 아스파라거스의 품질에 미치는 영향

        This study investigated the effect of UV-C irradiation and modified atmosphere packaging (MAP) treatment on quality of asparagus spears (Asparagus officinalis) during storage. Asparagus spears were irradiated with 15 or 20 kJ/㎡ of UV-C irradiation. Untreated spears served as control. Treated and untreated spears were packaged using oxygen transmission rate (OTR) films (10,000 cc/㎡ ·day · atm) for the MAP and with perforated film for conventional storage. Experimental and control spears were stored for 30 days at 4°C and 85% relative humidity. The weight loss rate was less than 0.4% in all MAP-treated samples, whereas it was more than 4.5% in the conventional storage stored samples. Carbon dioxide content stayed at 5.0-10.0%, and oxygen content remained higher than 10.0% in all MAP samples. All treatments satisfied the recommended range of controlled atmosphere (CA) and modified atmosphere (MA) conditions of asparagus spears. Ethylene content stayed consistently at 2.0-4.0 μL/L during storage. The atmospheric composition (i.e. carbon dioxide, oxygen, and ethylene contents) in all MAP samples was not significantly different according to UV-C irradiation treatment. The off-odor of samples irradiated with 15 kJ/㎡ UV-C was lower regardless of the storage method. Soluble solid contents did not differ significantly with the MAP treatment. The soluble solid content was the highest in the samples irradiated with 15 kJ/㎡ UV-C and stored conventional storage. The hue angle value was the highest at 15 kJ/㎡ UV-C irradiation and MAP storage, indicating inhibition of the yellowing effect of the UV-C irradiation. Visual quality of samples subjected to 15 kJ/㎡ UV-C irradiation and MAP treatment was the best among all samples. These samples retained their marketability for up to 30 days. In conclusion, 15 kJ/㎡ UV-C irradiation combined with MAP treatment is appropriate to maintain visual quality and soluble solid contents and to inhibit the development of off-odor and yellowing of asparagus spears during storage.

        몇 가지 저장온도에서 시금치 MAP에 적합한 OTR 필름 구명

        ‘모두랑’ 시금치의 MA 저장성 향상을 위해 저장 온도 별로 적합한 레이저 가공 OTR 필름 종류를 구명하고자 본 연구를 수행하였다. 저장중 생체중 감소율은 모든 저장온도의 OTR 필름 포장 처리구에서 저장 최종일까지약 2.0% 이하를 나타냈다. 포장내 대기조성은 세 온도 모두 최적 CA 조건인 5-10%(CO2)보다 낮은 3% 이하의 농도를 나타냈고, 낮은 에틸렌 발생량으로 인해 세 온도 모든 처리구가 1.5 μL/L 이하의 수준을 보였다. 저장 최종일 의 2℃ 10,000 cc 필름이 경도와 엽록소 함량, 비타민 C함량이 높았고, 8℃ 20,000 cc 필름, 그리고 20℃ 80,000 cc 필름이 엽록소, 비타민 C 함량이 양호하였다. 이상의 결과로 포장내 대기조성과 과실의 내외적 품질을 비교한 결과 ‘모두랑’ 시금치의 MA 저장시 2℃는 10,000 cc 필름, 8℃는 20,000 cc 필름, 그리고 20℃에서는 80,000 cc 필름이 적합하다고 판단된다. These studies were conducted to identify the effects of laser ablation OTR(oxygen transmission rate) film on storability at 2℃, 8℃, and 20℃ storage of ``Modoorang`` spinach. Fresh weight loss rate of spinach was less than 2.0% in all OTR films at three different storage temperatures and periods, such as 2℃; 35 days, 8℃; 21 days, and 20℃; 7 days except for the perforated film. All OTR films had lower carbon dioxide concentration than the optimum MA storage condition. Also ethylene concentration was less than 1.5 μL/L in all OTR films at every temperatures during storage. The 10,000 cc film had shown higher result in firmness, chlorophyll and vitamin C content than any other films at 2℃, and the 20,000 cc at 8℃ and 80,000 cc at 20℃ film had higher results of chlorophyll and vitamin C content. Following these results, it comes to conclusion the suitable type of OTR film such as 10,000 cc at 2℃, 20,000 cc at 8℃, and 80,000 cc at 20℃ for MA storage in ``Modoorang`` spinach.

        몇 가지 국화과 어린잎채소의 MAP에 적합한 OTR 필름 종류 구명

        본 연구는 몇 가지 국화과 어린잎채소를 대상으로 OTR 필름을 이용한 MAP에 적합한 필름을 구명하기 위해 진행되었다. 로메인, 롤로로사, 그리고 엔디브의 어린 잎채소를 수확하여 8℃에서 저장하며 생체중 감소의 변화와 이산화탄소, 산소, 에틸렌 가스 농도 변화를 측정하고 저장 종료 후 엽록소 함량, 경도, 그리고 패널테스트를 통해 외관과 이취를 조사하였다. 세 작물 모두 생체중 감소는 OTR 필름 포장 처리구는 0.1% 이하로 매우 적었다. 포장 내 이산화탄소와 산소 농도는 엔디브, 에틸렌 가스농도는 롤로로사를 제외하고 투과도에 따른 일정한 경향을 보였다. 엔디브의 경우 10,000 cc 처리구가 다른 처리구에 비해 저장 종료일에 이산화탄소 농도가 8배, 롤로 로사는 20,000 cc 처리구가 저장 1일째 3배 가량 높았다. 저장 종료일의 로메인과 롤로로사는 각각 40,000 cc와 20,000 cc가 경도가 높고 외관상 품질이 우수하였고, 그리고 엔디브의 경우 10,000 cc가 엽록소 함량과 경도가 높고 외관상 품질이 우수하며 이취가 적었다. 이상의 결과로 로메인은 40,000 cc 필름, 롤로로사는 20,000 cc, 필름 그리고 엔디브는 10,000 cc 필름이 MA 저장에 적합하다고 판단되었다. These studies were conducted to identify the effects of laser ablation OTR (oxygen transmission rate) film on storability of several Compositae baby leaf (romaine, lollo rosa, and endive). Fresh weight loss rate of spinach was less than 0.1% in all OTR films at three different Compositae baby leaf vegetables except for the perforated film. All OTR films had lower carbon dioxide concentration than the optimum MA storage condition. Ethylene concentration was less than 8.0 μL/L in all OTR films at every treatments during storage. The 40,000 cc film was suitable for romaine with less ethylene concentration, and also shown higher results in hardness and visual quality than any other films. The 20,000 cc film had higher results of hardness and visual quality in lollo rosa. The 20,000 cc film was suitable for endive with less ethylene concentration and high score in visual quality and low off-flavor. Following these results, it comes to conclusion the suitable type of OTR film such as 40,000 cc, 20,000 cc, and 80,000 cc for MA storage in romaine, lollo rosa, and endive baby leaf vegetable.

        레이져 가공 OTR 필름 종류가 저장온도에 따른 몇 가지 엽채류의 MA 저장에 미치는 영향

        These studies were conducted to find the effects of laser ablation OTR film types on MA package in perilla leaf, rape, pak choi and chicory sort of leaf vegetable. They were treated at two different temperature conditions and storage for 7 days, except the rape 25℃ treatment, which was stored for 5 days with four types of laser ablation film such as 3,000 cc, 5,000 cc, 7,000 cc and 10,000 cc/m2·day·atm films for perilla leaf and pak choi, 10,000 cc, 20,000 cc, 30,000 cc and 40,000 cc for rape, as 5,000 cc, 7,000 cc, 10,000 cc and 20,000 cc for chicory. In the all treatments, fresh weight loss rate was lower than 0.8% in 12℃, 1.6% in 25℃ except for the 10,000 cc film of perilla leaf. In the carbon dioxide contents, perilla leaf was maintained at the lowest in 12℃ and 25℃ for 10,000 cc, rape was maintained 3-4% in 30,000 cc and 40,000 cc at 12℃, and more than 6% in all film when finish stored at 25℃, pak choi was maintained about 5% except for the 3,000 cc film in 12℃, and chicory was showed average 3% that slightly higher at 12℃ in the 20,000 cc and increase more than 12% at 25℃ in all treat films. Ethylene content tended to be low with higher gas transmission film, but rape treated with the 10,000 cc and pak choi treated with the 3,000 cc film showed low content than average. It was considered that high carbon dioxide and low oxygen content inhibited ethylene occurrence. Rape was highly damaged by yellowing, but perilla leaf cleared. The 5,000 cc film at 12℃, 7,000 cc film at 25℃ for perilla leaf and the 10,000 cc film at 12, 25℃ for rape and 3,000 cc film at 12, 25℃ for pak choi and the 20,000 cc film at 12℃, 5,000 cc film at 25℃ for chicory had the best visual quality through panel test. In the off-flavor, the 7,000 cc film at 12, 25℃ for perilla leaf and 20,000 cc film at 12, 25℃ for rape and 7,000 cc film at 12℃, the 3,000 cc film at 25℃ for pak choi and 5,000 cc film at 12, 25℃ for chicory showed the best results. The conclusion was 5,000 cc and 10,000 cc films were the best film for MA storage at 12℃ and 25℃ in perilla leaf because it showed the best quality of visual quality and off-flavor. In the case of rape, 12℃ treatment was better than 25℃, and the 10,000 cc film showed the best results in carbon dioxide contents and off-flavor. In pak choi, the 3,000 cc film treatment was better than other films at off-flavor, carbon dioxide and visual quality for 12℃ MA storage, and the 10,000 cc film treatment was better than other films at off-flavor and visual quality. The 20,000 cc firm was the most reasonable treatment in both storage temperatures for chicory.
