흰콩 가루를 첨가한 마카롱의 품질 특성 및 항산화성

본 연구는 아몬드 가루를 주재료로 하는 마카롱에 기능성 소재인 흰콩 가루를 0, 25, 50, 75, 100% 비율로 대체첨가하여 흰콩 마카롱을 제조하였다. 마카롱 내부의 수분 함량은 흰콩 100% 첨가군에서 가장 높아 흰콩을 첨가할수록 촉촉한 것으로 사료되며, 부피는 흰콩 100% 첨가군에서 가장 작았던 반면, 무게는 가장 많았다. 퍼짐성은 흰콩 50% 첨가군에서 가장 커 외관상 좋은 것으로 생각된다. 당도 및 환원당은 흰콩 100% 첨가군에서 가장 높았는데 흰콩에 올리고당 함량이 높아 대체 감미료로서 기능할 수 있고, 혈당 강화에도 도움을 줄 것으로 생각된다. pH 및 산도는 흰콩 50% 첨가군에서 중성을 띠어 기포 안정성이 가장 클것으로 생각된다. 색도 중 L값은 환원당이 풍부한 흰콩으로 인해 갈색화가 발생하여 점차 어두워지며 볶은 콩가루의 높은 a값으로 인해 a값은 점차 증가하고, b값도 증가하는 경향이다. 기계적 조직감 중 경도는 수분함량과 반비례하여 흰콩을 첨가할수록 작아져 부드러울 것으로 생각된다. 검성과 씹힘성 또한 흰콩을 첨가할수록 작아진다. 항산화 물질인 플라보노이드와 총 페놀성 화합물 함량은 흰콩 100% 첨가군에서 가장 높았으며, 항산화 활성의 측정에 사용되는 DPPH 라디칼 소거능 및 SOD 유사활성 또한 흰콩 100% 첨가군에서 가장 높았다. 전반적인 수용도는 흰콩 50% 첨가군에서 가장 높았는데, 색의 진하기, 고소한 향과 맛, 조직감 항목이 중간 점수를 가짐에 따른 모든 항목들의 적절한 조화로 인한 결과라고 생각한다. In this study, we produced macarons by adding white bean powder at various proportions (0, 25, 50, 75, and 100%). The macarons in the 100% additive group had the highest moisture content, smallest volume, highest weight, and highest sugar and reducing sugar content. The macarons in the 50% additive group had the highest spread factor.Furthermore, their pH and acidity demonstrated the greatest air bubble stability. In the Hunter color system, by adding white bean powder, the L value gradually decreased, whereas the a and b values gradually increased. The hardness, gumminess, and chewiness decreased with the addition of white beans. Flavonoids and total phenolic compounds, 1,1-diphenyl-2-picrylhydrazyl (DPPH) radical scavenging activity, and superoxide dismutase (SOD)-like activity were the highest at 100%. Additionally, their overall acceptability was the highest at 50%. These results suggested that the use of white bean powder to produce macarons have numerous advantages.

구강건강에 이용되는 보완대체의학 치료: 무작위대조임상연구를 통한 문헌적 고찰

Objective : This review aims at analyzing Complementary and Alternative Medicine (CAM) therapies, using for oral health to know current use of CAM in dental area by analyzing randomized controlled clinical trials (RCTs). Method : We searched the following 6 electronic databases until 1 July 2014. : Pubmed, Medline, Embase, Allied and Complementary Medicine Database(AMED), Cumulative Index to Nursing and Allied Health Literature(CINAHL), the Cochrane Library. We included parallel RCTs and cross-over RCTs that assessed the efficacy of CAM regardless of blinding and language. Results : A total of 154 RCT articles were included. There were 2-arm parallel study design(69.5%), 3-arm parallel study design(20.8%), 4-arm parallel study design(4.5%) and Cross-over design(5.2%). Complementary and alternative medicine RCTs in oral health tend to increase in the early-2000s and in the mid-2010s. In addition, 154 citations were classified according to diseases and interventions that categorized Natural Products studies(68.2%), Mind and Body Practices studies(31.8%). We classified in detail that vitamin and mineral therapies(29.9%), dietary supplements(24.7%), acupuncture(23.3%), Herbal medicine(13.6%), homeopathy (2.6%), energy therapies(2.6%), Massage(1.9%), biofeedback(0.6%), traditional medicine(0.6%). Conclusion : Increasing publications and diverse interventions regarding CAM for oral health is observed by analyzing RCTs from the literature review. Further studies are needed to be performed as systematic reviews to verify their effectiveness and the research to inquire into side effect.

본 논문에서는 풍력발전기 나셀 내부의 화재 조기감지 및 화재발생위치를 판단하는 방법을 제안한다. 화재감지 변수로는 온도와 공기 혼탁도 상승률을 이용하는데, 이것은 온도와 혼탁도의 절대 값과 상관이 없이 화재를 감지할 수 있기 때문에 비화재보를 최소화 할 수 있는 방법이다. 화재발생위치는 다수의 화재감지 센서들의 거리에 따른 화재감지 시간차를 이용하였다. 또한 다양한 실험을 통하여 개발된 방법의 성능을 테스트하였다. This paper presents a method for early fire detection and fire position determination inside the nacelle of wind turbine generator system. The rising temperature and obscuration rates inside the nacelle were used as parameters for fire detection, which can minimize the possibility of a fire detection malfunction because these rising rates do not depend on the absolute values of temperature and obscuration. The fire position was determined using the time difference among various sensor positions for fire detection. The performance of the method was tasted using sets of experiments in a nacelle simulator.

VR(Virtual Reality)기술과 증강현실(AR)을 적용한 미술전시 마케팅 프로세스 연구

현재 정보통신기술의 융합을 통한 4차 산업혁명을 주도하는 기술 중 ‘VR’과 ‘AR’이 세계 이목을 받고 있다. 가상현실과 증강현실은 현재 지속적 발전과 다양한 분야로의 확산 및 적용되고 있는데, 기존의 미술전시 마케팅에두 기술이 적용되는 개혁이 필요하다. 왜냐하면 현대인들은 두 기술을 미술전시 공간에 접목시켜 공간에 제약받지 않고 미술공간을 체험하거나 정보를 얻을 수 있는 시대에 살고 있기 때문이다. 본 논문에서는 VR과 AR이라는 새로운 기술이 마케팅에 적용된 성공한 사례들을 분석하고, 이러한 첨단기술들이 21세기에 미술전시 마케팅으로도 활용될 수 있는 방법을 모색하고자 하였으며, 기존 미술관에 새로운 기술을 적용시키는 것이 많은 시행착오가 필요하므로 이에 대한 솔루션을 제공하였다. 끝으로 본 연구가 예술과 공학의 융합 및 발전에 기여할 수있기를 기대한다. The time and space of the art exhibition existed for a small number of experts and holders, but since the 20th century the educational responsibility for the public has been emphasized and turned into an aesthetic and educational space for the public. Because, in the 21st century, interactive communication has become commonplace through the Internet and SNS. According to the above trends, the attitude and method of viewing the artworks in the time and space of the art exhibition changes and the space for viewing the artworks changes. Currently, 'VR' and 'AR' among the technologies that lead the fourth industrial revolution through the convergence of information and communication technologies are receiving global attention. Virtual reality and augmented reality are currently being developed and applied to various fields, and reforms are needed to apply the two technologies to existing art exhibition marketing. This is because modern people are living in an age where they can experience art space or get information without constraining space by combining the two technologies into the exhibition space. In this paper, we analyze the successful cases of VR and AR applied to marketing, and tried to find ways to utilize these advanced technologies as marketing for art exhibition in the 21st century. We needed a lot of trial and error to provide a solution. Finally, we look forward to seeing this study contribute to the fusion and development of art and engineering.

폐경기 여성에 대한 필라테스의 효과: 문헌 고찰

본 연구는 폐경기와 필라테스에 관련된 연구들을 정리하여 필라테스가 폐경기 여성의 신체적, 정신적 변화에 미치는 영향에 대하여 조사하였다. 선정기준에 해당하는 논문은 데이터베이스 학술연구정보서비스와 Pubmed를 통해 총 89편을 수집하고 선정기준에 해당하지 않는 72편을 제외하고 총 17편의 논문을 선정하였다. 수집된 논문은 신체적 변화를 신체구성요소, 폐경기 증상, 내분비계, 근육뼈대계, 균형, 심리적 변화로 분류하여 필라테스의 효과를 조사하였다. 그 결과 체중과 체질량 지수, 지방량의 감소를 나타내었고, 폐경기 증상의 완화, 또한 폐경기와 관련 있는 호르몬 수치의 긍정적 변화 및 근력의 증가와 이로 인한 균형감각의 증가를 나타내었다. 또한 필라테스로 인한 신체적 변화로 인한 심리적 요소에서 긍정적인 양상을 볼 수 있었다. 이러한 결과를 통하여 필라테스가 폐경기 여성의 신체적, 심리적 변화에 긍정적 효과가 있음이 확인되었고, 향후 폐경기 여성뿐만 아니라 다양한 질환과 필라테스의 상관관계에 대한 연구가 필요할 것으로 사료된다 This study was conducted to evaluate the effectiveness of pilates exercise in women with menopause through a review of articles that is about pilates exercise used to enhance physical function and mental function in women with menopause. We searched randomized controlled trials using electronic databases and have found total eighty-nine articles. Seventy-two of the articles were excluded due to irrelevant of the topic and final seventeen researches that is corresponded to selected criteria has been chosen. Collected data has been studied on body composition, menopausal symptoms, endocrine system, musculoskeletal system, balance and mental alteration. As a result, pilates exercise affects body mass index, decreased amount of fat, released menopausal symptoms as well as increased of balance sensation due to developed of muscles strengths and changes of hormone levels. Moreover, positive aspects of mental health due to physical changes as pilates have been found. Pilates exercise for women with menopause has been shown to be highly effective when it comes to physical and mental alteration. However, further research is required to develop relationship between other diseases and pilates as well as women with menopause.

다국어 공통 음소 체계를 이용한 금기어 매칭 시스템

단어의 유사도 측정 알고리즘은 DB 인덱싱, 필터링, 소스코드 분석 소프트웨어, 음성 인식 등 다양한 분야에서 활용되고 있다. 하지만 기존의 단어의 유사도만 비교하는 시스템에는 발음이 비슷한 유사단어나 오타가 있는 유사단어들은 측정을 못하는 단점이 있다. 언어의 유사도 측정에서는 알파벳만으로 볼게 아니라 언어 발음의 발화적 특성 또한 고려되어야 한다. 본 논문에서는 글로벌 시장에서의 다국적 기업들의 제품이나 문화 수출 등의 도움이 되는 각 나라의 금기어와의 발화적 특성까지 고려한 단어 유사도를 측정 할 수 있는 시스템을 제안한다. 11개국의 4개 언어 총 21487개의 금기어 단어를 금기어 데이터로 사용하였다. 제안하는 방법의 성능을 평가하기 위하여 타 알고리즘과의 성능비교와 여러 나라의 다양한 언어의 사용자들로부터 사용자 평가를 수행하였고 제안하는 방법이 발음 유사도를 측정하지 않는 알고리즘보다 우수한 성능을 보임을 확인하였다.

청소년의 자아정체감, 또래관계의 질, 팬덤활동이 삶의 만족도에 미치는 영향

The purpose of this study was to examine the impact of ego-identity, the quality of peer relationship and of fandom activities, on life satisfaction in an effort to seek ways of boosting the life satisfaction of youth. The subjects in this study were 259 students who were in their third year in five different middle schools located in the city of K. The major findings of the study were as follows. First, ego-identity exerted a positive influence on life satisfaction. It signified that having a better self-understanding and taking more initiative in one s own life could serve to raise life satisfaction in adolescence. Second, the quality of peer relationship had a positive impact on life satisfaction. It denoted that positive peer relationship was one of integral factors for the life satisfaction of the adolescents. Third, fandom activities didn t exercise any significant influence on life satisfaction. The findings of the study are expected to lay the foundation for follow-up studies related to youth life satisfaction and for the development of programs and counseling geared toward boosting youth life satisfaction.

마른 김 첨가 마지팬 초콜릿의 이화학적 품질특성 및 항산화 활성

본 연구는 영양성분과 생리활성이 우수한 김과 마지팬을 이용하여 마지팬 30 g을 기준으로 김 분말 1 g, 3 g, 5 g을 대체 첨가한 김 마지팬 초콜릿을 제조하여 품질 특성과 항산화성을 알아보았다. 김 첨가량이 증가함에 따라 수분 함량은 2.58~1.19%로 유의적으로 감소하였고, 당도 및 환원당도 5.2~4.7°Brix와 2.80~2.13%로 유의적으로 감소하였다. pH는 6.24~6.41로 유의적으로 증가한 반면 산도는 pH와 반대 경향을 띠며 0.57~0.32%로 유의적으로 감소하였다. 색도는 L값은 69.60~41.67로 유의적으로 감소하였고, a값은 0.93~1.57로 유의적으로 증가하였으며, b값은 20.20~8.70으로 점차 감소하였다. 기계적 조직감은 경도, 응집성, 검성, 씹힘성, 회복력을 측정하였는데 경도, 검성, 씹힘성은 김 첨가량의 증가에 따라 유의적으로 증가하여 수분 함량과 반비례 경향을 보였으며, 탄력성, 응집성, 회복력은 경도와 반비례 경향을 보였다. 피코시아닌 및 클로로필은 김의 보조 및 주색소로써 김 첨가량의 증가에 따라 유의적으로 증가하였다. 항산화력을 가지는 플라보노이드와 총 페놀 함량은 김을 첨가할수록 유의적으로 증가하여 김 5 g 첨가군에서 항산화 효과가 가장 클 것으로 사료되고, 항산화능의 척도를 알아보기 위한 실험인 DPPH 및 hydroxyl 라디칼 소거능의 IC50 값은 김 5 g 첨가군에서 가장 낮게 나타남으로써 항산화 활성이 가장 큰 것을 알 수 있다. 관능평가는 김 3 g 첨가군이 전반적인 수용도가 가장 높게 나타났다. 마지팬은 베이커리 분야에서 활용범위가 넓은 만큼 영양소와 생리활성이 우수한 김을 첨가하여 제조한 김 마지팬 초콜릿을 통해 기능과 관능적 요소를 만족해주는 식품으로서의 활용이 기대된다. The purpose of this study was to evaluate the physicochemical properties and antioxidant activities of marzipan with added laver (Porphyra tenera) powder, which is rich in physiological activities and nutrients. Thirty g of marzipan was replaced by various amounts of laver powder (0, 1 3, or 5 g). The moisture contents (%) of the marzipan samples decreased when more laver powder was added. The sugar content (°Brix), and reducing sugar content (%) decreased with the higher amount of added laver powder. The pH increased with the increased amount of laver powder, whereas the acidity (%) decreased. On the hunter color system, as the level of laver powder increased, the L (lightness), and the b (yellowness) hunter color values decreased, whereas the a (redness) values increased. Textural properties according to texture analysis showed that the hardness, gumminess, and chewiness decreased, whereas springiness, cohesiveness, and resilience showed contrast tendency to hardness. The pigments, which are C-phycocyanin, allophycocyanin, chlorophyll a, and chlorophyll b, increased with the increased amount of laver powder. Flavonoid, and the total phenols increased with the increasing content of laver powder. The antioxidant activities, including 1,1-diphenyl- 2-picrylhydrazyl and hydroxyl radical scavenging activities, increased with the increased addition of laver powder. On the sensory test, the score of overall acceptability was the highest for the 3 g additive group of laver. This study showed that thanks to laver’s nutrients, laver marzipan displayed good qualities in terms of both its physicochemical and antioxidant activities.

3D/BIM 기반 화재대응시스템 개발을 위한 시각화 정보 전달 체계 구축 방안

During a fire, it is of utmost importance to provide reliable building information and secure a fire response system for proper and safe evacuation of building occupants. Every building offers different and changing fire/building information. So for buildings, it is highly recommended to upgrade to an integrated 3D/BIM linked fire response system. The purpose of this upgrade to the 3D/BIM model is not solely because of the solid design, but more so for its usability and visuals to quickly extract needed building information in an emergency. In suggesting this method, the aim is to better secure a quick response from fire personnel and provide essential building information for evacuation and rescue to save lives.
