School lunch program provides both health and education service. School lunch program targets on properly educating students which requires both safety and sanitation, and regulations and methods should be ready in order to prevent foodborne disease. But there are many weak points which current School Lunch Act can be used as a mean to prevent many sanitary problems. In order to settle school lunch program safely, programs must alleviate direct management in law and reduce responsibility of parents’ of the cost. In other side, preventing re-occurrence of similar foodborne disease is needed by detecting and improving all problems every step after the accident take place.

Convenience is key benefits in today's market place. Fresh Convenience Foods enable the consumer to save time and effort in food activities, related to shopping, meal preparation and cooking, consumption and postmeal activities. The objective of this study is to analyze the labeling system associated with Fresh Convenience Foods in Korea. Since there is some inconsistency on regulations in the Acts, this study recommends that Acts needs to be merged into the integrated act to keep consistencies. Also, the related Acts should be clearly identified through harmonization of Fresh Convenience Food classification criteria and the labeling system in food items should be expanded at products based to increase the relevancy between raw products and processed foods.

Domestic studies for identification of causality between children exposure to toxic chemicals, such as arsenic (As) and resulted hazardous effects were not implemented. This study was conducted to probabilistically estimate dietary As intake and health risk assessment for young children and all age-specific populations from the consumption of As-contaminated rice of Korea. Arsenic intakes for young children (1 to 6 years old) from As-contaminated rice were higher than other age-specific groups, based on a dose-per-body weight basis. Based on the current EPA cancer slope factor for As, estimated cancer risks (to the skin cancer) associated with dietary intake of As-contaminated rice for 1 to 2 years old group and 3 to years old group are 1.76 per 10,000 and 3.16 per 10,000, respectively, at the 50th percentile. Based on possible reference levels (0.005 mg/kg/day) for children, mean and 95th percentile value of HQ from rice for young children are very below 1.0, which is a regulatory limit of non-carcinogenic risks for human.

우리나라 유아들이 비소에 노출된 경우의 인체위해성에 대한 상관관계 연구가 미비한 실정이다. 본 연구는 우리나라 광신인근 지역에서 생산된 백미의 섭취를 통한 비소의 노출을 유아기(1-6세)와 타 연령군으로 나누어 평가하고 해당 연령군의 인체위해성 평가를 확률적 접근법을 이용해 실시하였다. 우리나라 광산인근 지역에서 생산된 백미 섭취를 통한 D아기의 비소 노출량은 체중을 기준으로 했을 때 타 연령군에 비해 높게 나타났다. 피부암에 대한 초과발암위해의 경우 1-2세 군과 3-6세 군의 50% percentile값이 각각 만명 당 1.76명과 3.16명으로 나타났다. 어린이와 같은 아만성기간 동안의 비소 노출에 대한 비발암 기준 참고치(0.005 mg/lg/day)를 적용한 결과 비발암위해도의 평균값 뿐 아니라 고섭취군을 나타내는 95% percentile 값 또한 규제수치인 1.0 이하로 나타났다. Total As concentrations from 300 polished rice samples cultivated near the mining areas in Korea were analyzed to estimate a probabilistic assessment of human health risk from As-contaminated rice. The mean of total As concentrations in rice was 0.09 mg/kg and lognormal distribution model was set for total As concentrations. Human health risk for As in rice was estimated using gender-specific rice consumption data and average daily dose (ADD). While cancer risk (CR) and hazard quotient (HQ) were calculated using oral cancer slope factor (OCSF) and Reference dose (RfD) suggested by the U.S. EPA. Mean of CR posed by total As was 2.16 (for male) and 1.83 (for female) per 10,000. The HQ for general population from rice cultivated near the mining areas in Korea was below 1 as the 50th percentile of general population. However, less than 10% of general population consuming rice cultivated near the mining areas would exceed 1.0. This result is similar with those from each gender-specific group.

만성으로 비소에 노출될 경우 암을 비롯하여 인체에 심각한 악영향이 나타날 수 있다. 본 연구에서는 우리나라의 광신인근에서 재배된 벼의 백미시료 300점에 함유된 총 비소를 분석하고, 이 백미 시료만을 섭취했을 경우의 인체위험도를 확률적 접근법을 이용하여 평가하였다. 300점의 백미에 함유된 총 비소의 함량은 0.09 mg/kg으로 lognormal 분포형태를 나타내었다. 우리나라 전체인구와 성별로 나눠 이 백미시료만을 섭취했을 경우 1일 총비소 노출량을 평가하였으며, EPA의 발암력과 기준참고치를 그거로 발암위해와 비발암위해를 정량화하였다. 광산인근 백미 섭취를 통한 발암위해의 평균은 만명기준 남성 2.16명, 여성 1.83에서 1.0 이하로 나타났다. 광산인근 백미만을 섭취하는 경우 전체 인근의 10% 미만이 비발암위해를 보이는 것으로 나타났다. 그러나, 이는 우리나라 광산인근에서 재배된 300점 백미시료에 대한 자료를 근거로 도출된 결과로서 우리나라 모든 광신인근 지역의 백미를 대표할 수 없는 한계가 존재한다.
