        경상도 별미김치의 표준화 연구

        This study was conducted to standardize ingredient ratio and preparation method of major traditional special kimchies in Kyungsang province, Korea. There were about 35 varieties of special kimchi in Kyungsang province. Six varieties of them such as burdock kimchi, wild leek kimchi, green thread onion kimchi, perilla leaf kimchi, Godulbaegi(Korean wild lettuce) kimchi, and red pepper leaf kimchi were selected, because they tasted good and the physiological functions of their main ingredients were excellent. The ingredient ratios of the selected special kimchi were standardized through surveying hereditary preparation of some families in Kyungsang province and using the literatures including cooking books. The standardized ingredient ratio of the burdock kimchi was 15.1 pickled anchovy juice, 6.8 red pepper powder, 5.7 garlic, 2.2 ginger, 18.0 rice flour paste, 13.5 green thread onion, and 1.2 sesame seed in proportion to 100 of burdock. The standardized preparation step of the selected special kimchies was similar except some preprocessing methods of main ingredients. The diagonally cut-up burdock was usually parboiled or soaked in salted water, then it was mixed with the other ingredients. Wild leek and green thread onion were usually pickled with salt or pickled anchovy juice. Sometimes the green thread onion pickled was dried in the sun. General preprocessing of perilla leaf, Korean wild lettuce, and red pepper leaf was soaking them in salted water for about 5-10 days. Sometimes red pepper leaf was heated with steam and dried in the sun, then it was mixed with the other ingredients.

        The study focuses on an acid-base reaction to explain the concept of a limiting reagent(limiting reactant) in stoichiometry. When vinegar(acetic acid) and baking soda(sodium bicarbonate) react, carbon dioxide is produced and observed in the inflated balloons. This visualization can initiate the interest and curiosity of students about this experiment. The role of a limiting reagent can be discovered as keeping track of the relative amount of each balloon inflated by measuring the length or weight of the paper balloons printed out after taking pictures of them. Carbon dioxide is produced proportionally to the moles of sodium bicarbonate when its amount is less than that of acetic acid. Here, sodium bicarbonate is the limiting reagent. On the contrary, when the amount of acetic acid is small, it is the limiting reagent and controls the amount of CO2. Accordingly, carbon dioxide is produced proportionally to acetic acid. Then students can Fig. out the pH properties of the solutions by the color changes caused by titrating acid solutions with a natural pH indicator.

        최근 유행가요 가사에 나타난 복식의 상징성에 관한 연구 : 1995년~2001년 발표곡을 중심으로 on Lyrics by Produced 1995~2001s

        Song is a significant message with organic combination of relics and melody. As such, songs could be an important way to deliver messages in the relics and melodies. Among the several kinds of songs 'popular song' is the most common and has the strongest effect on the public. On this purpose, total 700 songs published from 1995 to 2001 popular songs have been researched after extracting 100 songs chronologically in regards of broadcasting times, popularity rankings and records of yearly awards during its production year. These selected popular songs have been collected and studied before sampling the expression of the costume included in the relics. Clothes, hair styling, make-up, shoes & purses, accessaries and body figure, etc. are covered In this study. As the recent symbolism embedded in the relics of popular songs is closely related with our generation background, public preference & dislike and the change of modem costume, it shows the symbolism of costumes evidently again.

      • 동거형태에 따른 젊은 남자성인의 식행동과 건강관련 행동의 차이

        A survey was performed to 250 male young men who were living alone and shared living with friends in Chungnam province. Their average age was 22.6 years old, height was 171.8 cm, weight was 65.6 kg and BMI was 22.2 Comparing the prevalence of drinking, smoking and exercise, there were significantly different between living alone subjects and shared-living ones. The main value toward eating/meals was for hungry soultion. And we found many significant differences by living with or without companion. When young men living without companions, they shouved to be more in regular mealtimes, no-skipped meals, breakfast eating, adequate food amounts, eating-outs, etc. and to be less in pleasant mealtimes, various foods, snacking and especially late snacks. The good food intake pattern were highly scored in the alone-living group than the shared-living group, whereas the bad food intake pattern were also highly scoued in the alone-living group than the other. The latter might be due to the more food exposures because of companions. These findings could conclude that dietary behaviors of the young living alone were evaluated as good enough.

        텍스트로서의 소설에 나타난 상징의 의미분석 방법론과 그 적용

        A 'TEXT' is a basic unit of culture. It is also the whole of culture organization which is generalizing a culture. Literary texts which are reflection of the culture could be understood as a historical discourse. This thesis which is based on the 'Semiotic theory', 'Victor Turner's Performance theory', and Sung Man Lee's 'Information Model', classified the type of meaning to explain how to communicate the meaning of things which were described in novels, for examples, background, dress, dialogue, era, etc. An interpreter (reader) should understand the culture described in novels to clarify the ambiguous significance. An interpretative theory of symbolic meaning described in text was presented in this thesis, and it was applied to analysis Myung Hee Choi's novel, 'Honbul'.

        여대생의 의복착용동기와 패션경향

        The purposes of this study were to classify of clothing-wearing motives, to analyze tendency of fashion in campus, and to propose fashion merchandising plans and marketing strategies of companies for female college students. Research had been done during 1 week each on April and October in 1998 and 1999. Sixty-two students in spring semester and 54 students in fall semester were surveyed and analyzed. Their grades and majors were not considered in this study. Fashion Diary had been written by students and then their statements were analyzed by the means of the qualitative data analysis. Following conclusions were obtained from this study. 1. Clothing-wearing motives were classified with 'group depending on daily work', 'group depending on image', 'group depending on body supplement', 'group depending on weather', 'group of fashion following', 'group depending on courtesy', 'group depending on mood', and 'group of unconcerning'. 2. The fashion tendency of the students were layered look and they preferred casual styles, such as round t-shirts, jean pants, and cardigans. The color of white, black, and gray were prevalent for top wear, and the color of blue, black, beige for bottom wear in both seasons. For shoes, color of black, brown, white were popular. For bags, black, blue, and khaki color were prevailed. 3. The proposals obtained from this study are as follows: 1) Production of clothing enforced functional and practical base is wanted for 'group depending on daily work'. 2) Designs considering body parts such as hip, arm hole, shoulder, and thigh are needed. 3) Utilization of new materials such as waterproof with ventilation, opaque(means 'not see-through'), antipollution finishing process are required. 4) Simple designs of clothing which could be performed by herself with vrious accessories. Thermochromic materials are wanted for 'group of fashion following.' 5) Diversity of semi-suit is required for 'group depending on courtesy.'

        부산지역 초등학교 급식시설,설비의 소독실태 및 영향요인 : 영양사, 조리종사원 및 급식소 특성에 따른 Based on the Characteristics of Dietitian, Employee and Foodservice

        The purpose of this study was to investigate disinfection state and effective factors of foodservice facilities and utilities of elementary schools in Busan area. Foodservice facilities and utilities investigated in this study were ceiling, wall, floor, trench, greasetrap, hood, pest and dumb waiter. The questionnaire which was administered to 196 dietitians was used as a survey method. The results were as follows. The washing method of foodservice facilities and utilities was mainly used by detergent washing-natural dry. The disinfection method of foodservice facilities and utilities was mainly sanitized by sodium hypochlorite. Dumb waiter and hood were sanitized by 70% ethyl alcohol and iodine. In washing and disinfection frequencies of foodservice facilities and utilities ceiling was twiceiyear, wall, hood and pest control facilities were once/week, floor, trench, greasetrap and dumb waiter were everyday, respectively. Floor, trench, greasetrap and dumb waiter were disinfected properly, whereas ceiling, wall, hood and pest were not disinfected properly. The washing method was related to dietitian's marital status and education. The disinfection state was related to dietitian's age and career, having of sanitation check list. The disinfection method was also affected dietitian' s marital status, number of employee, duration of foodservice, number of total serving and having of sanitation check list. Therefore based on the results of this study, it should be given to the microbiological study on disinfection of facilities and utilities such as ceiling, wall, floor, trench, greasetrap, hood, pest and dumb waiter and the dietitian and employee's sanitation training also should be conducted continuously.

      • 성역할 태도가 의복 구매 행동에 미치는 영향 : 서울시내 여자 대학생을 중심으로

        The purpose of this study is, 1) to investigate the effects of modern/traditional sex role attitudes of female college students on clothing purchasing behavior, 2) to study the relationships between clothing purchasing behavior by sex role attitudes. A questionnaire consisting of a clothing behavior measure, a sex role attitudes measure and a demographic information section was distributed. The clothing purchasing behavior measure included six variables, which were silhouette, neckline, collar, sleeve, pattern and color. The questionnaires were administerd to 338 female collage students in Seoul area who met the criteria for the study. The statistical methods used for the analysis of data included CROSSTAB, Multiple Regressions, Factor Analysis and Frequency. The results of the study were as follows: 1) There were significant differences in clothing purchasing behavior between the traditional and modern sex role attitudes groups. 2) There were significant correlations in collar, sleeve, pattern and color as clothing purchasing between the sex role attitudes and demographic information.
