        저체중 또는 과체중 청소년에서 캠프 프로그램을 이용한 영양 교육효과에 관한 연구

        This study was performed to evaluate the effectiveness of a nutrition education program developed for nutritionally imbalanced adolescents. A summer nutrition camp was held for 23 overweight and 16 underweight subjects. Its effectiveness with regard to was evaluated at the end of the camp and 6 months later. Nutrition knowledge, nutritional attitude, food behavior, nutrient intake, exercise habit and ideal body figures desired by the subjects. The results showed significantly higher nutrition knowledge scores at the end of the camp as compared to those obtained prior to the camp program, and these scores were maintained for at least six months. Nutrition attitude scores also improved after the education program, and these improved scores also lasted for 6 months. However, the food behavior scores measured 6 months after the education program were not significantly different from those obtained prior to the camp. Also, the exercise habit, the ideal body figures and the body figures desired by the subjects remained unchanged. When nutrient intakes of subjects were assessed before the program and 6 months later, the mean daily vitamin C intake was significantly increased after the education program. Also, the intake of iron from plant food sources increased in the overweight subjects, while less iron from animal source were consumed by the underweight subjects. Both groups tended to consume more vegetables and fruits 6 months after the education program which may have contribute to the higher vitamin C and plant-based iron intakes. These results indicate that a 4-day nutrition education camp program sustained changes in nutrition knowledge and nutrition attitude for 6 months. The increased intake of vegetables and fruits was also achieved through this education program. However, changes in dietary behavior in adolescents may require repeated education.

        본 연구는 분말상 원료(전분, 대두분)의 저장유통시 품질변화를 건전성과 안전성 측면에서 검토하여 식품의 기준 ·규격 설정f.」 합지적으로 반영하고자 하였다. 전분과 패두분의 이물을 검사하고, 2종 대두분(중국산, 미국산)을 ?0일간 IS'c와 30t에 저장하면서 성상, 수분, 산가, 과산화물가, 지방산 조성,아플라톡신 BB의 생성여부를 분석하였다. 중국산 대두분 30'』 저장군에서 50일 이후 곰팡이가 발생한 것 이외에 모든 시료에서 양호한 성상을 나타내었고, 전분과 대두닥 모든 시료에서 이물은 검출되지 않았다. 산가는 중국산과 미국산 시료간에 편차를 보여 증국산 30"C, 50일 저장시료에서 약 10배끙도 증가하였고, 과산화물가는 저장 90일후 15'E 저장군은 약 2.3배, 30'c 저장군은 3배정도 증가하였다. 대두분의 주요 지방산은 linoleic acidf18. 2), oleic acid(18 : 1), palmitic acid(16 : 0)이었으며, 3개월 저장에 따른 지방산 함량의 변화는 미미하였다. 아플라톡신 B₁은 모든 시료에서 검출되지 않았다. The objective of this study was to investigate auality changes of type raw materials(starch, soy flour) during various storage conditions. Starchflour(source of China, U.S.A) were slfred under two temperature(15'C, 30'c) forSensory evaluation, (o.reign material test, moisture content, acid value, peroxide ualue,composition, aflatorin Bi were analyzed. China soy flour(stor·ed 30'f) was contaminated by fungj on 50 days. Except for soy flour contardnated by fungi, sensory characteristics were not changed and foreign mater;als were notdetected. Acid value of China soy flour(stored at 30'C, 90 days) was about 10 times higherlevel before storage and acid value was more influenced by source(China, USA). Peroxide valuewas in proportion with the storage period slightly. The major fatty acid of soy flour waslinoleic acid(18 . 2), an(3 the change of fatty acid composition was not observed. Aflatoxlrl Blwas not detected.

        송화분이 Chloroform 투여 흰쥐의 혈청 및 간장에 미치는 영향

        This study was attempted to investigate the effect of pine pollen on the chloroform toxicity in rat serum and liver. The subjects were administrated with the graded concentration of two different levels of chloroform(1%. 5%) and an additional amount of pollen(19%, 5%) to some groups, The results were as follows : The activity of aspartate aminotransferase(AST), alanine aminotransferase(ALT) and lactate dehydrogenase(LDH) in serum, liver, and kidney increased in proportion to the chloroform concentration, but decreased in the pine pollen-treated groups. The amount of total cholesterol in serum of the chloroform administration groups was higher than that of the control group, and it decreased gradually with pine pollen administration.

        튀김 기름의 저장 기간에 따른 향신료 및 허브류 첨가에 의한 항산화 효과 `

        The effect of heated oil on human nutrition has recently become of great interest to nutritionists and food chemists, However, the detrimental effect of heated oil has been hardly studied extensively and many problems have still remained unsolved. This study was carried out to investigate the storage stability of the heated oils at room temperature (25±5℃), with the variation in storage conditions (addition of spices and herbs) for 7 weeks period. The rancidity of the oils according to storage time and condition was measured and compared with TBA, ferric thiocyanate, and DPPH method. For fresh oil, when stored for 7 weeks at room temperature, there was no significant change in the degree of oxidation. But for the heated oil with frying materials, the degree of oxidation significantly increased at 5 weeks(p<0.05), When stored with spices and herbs, the degree of oxidation significantly decreased with storage period(p<0,05), Antioxidative activity of herbs, especially sage group was higher than that of any other group.

        The purpose of this study was to investigate the patterns of the health related variables, and physical characteristics and physical fitness of the elderly people in order to provide a exercise program. The data about the health related variables were collected through the personal interview, and the data about physical charateristics and physical fitness (height, weight, % body fat, blood pressure, pulse rate, grip stength, trunk flexion, side step test, 2 min, harvard step test) of 373 elderly people living Seoul and kyungkee area were collected. The conclusions of this study can be summarized as follow; 1. The test results about smoking, drinking, sleeping and self-evaluation of health revealed that the elderly people have self-confidence about their health. 2. Not many elderly people participate the proper exercise program even though they recognize the need of exercise. 3. The results showed that the elderly people do not pay much attention to the intensity of the exercise. 4. Muscle strength training for leg and the lower back and cardio-vascular endurance training was recommended to reduce the risk of varius problems caused by aging. 5. A exercise program was suggested for the elderly people.

      • p-형 Si(100) 기판 위에 성장시킨 Bi_(3.25)La_(0.75)Ti₃O_(12) (BLT) 박막의 전기적 특성

        Bi₃zsLa(0.75)Ti₃0_(12) (BLT) thin film have been grown on p-type Si(l00) substrates by a sol-gel spin coating process. The structure and surface morphology of the film were analyzed by X-ray diffraction (XRD) and scanning electron microscopy (SEMI. Furthermore, the electrical properties were examined by capacitance-voltage ( C-V) characteristics by using a LF Impedance Analyzer(HP 4192A). XRD measurement show layered perovskite structure with a single phase in BLT thin film annealed at 700C for 30 min in oxygen. The measured grain size of BLT on Si is about 0.04 - 0.1 pn. From the cross-sectional SEM image, BLT film thickness is measured to be 0.4 pm. The C-V characteristic hysteresis curves show that the NIFS (metal-fexroelectric-semiconductor) structure has memory effect. The memory window decreases, with increasing frequency at MFS structure. And it is found that the memory window increases as the applied voltage to the ferroelectric capacitor is increased. These phenomena may be due to polarization reversals of the BLT ferroelectric film and because of the charge injection from Si substrate into the ferroelectric thin film. The results obtained indicate that the present BLT films are suitable for making ferroelectric field effect transistor(FeFET) memory.

        Caffeine이 지구성 운동 수행능력에 미치는 영향과 억제성 아미노산에 의하여 활성화되는 이온통로의 조절작용

        To investigate the effect and mechanism of caffeine on endurance exercise, two experiments were performed. First, to test caffeine effect on aerobic exercise, 200-300g Sprague-Dawley rats were used and three groups, control group, low caffeine injection group and high caffeine injection group, were divided. Blood smpling by heart puncture were done at rest, after 30 min treadmill exercise, and after maximal exercise. Blood glucose, free fatty acid concentration were detected and following results were obtained. Glucose concentration showed significant difference between groups(p=0.0305) and also significant changes were exhibited between time(p=0.0004). Free fatty acid concentration had no difference between groups. but had significance between times(p=0.00065). Exercise endurance performance time showed significant difference(p=0.02350 in high caffeine injection group compared to control group. In this experiments, endurance exercise capacity was increased by caffeine injection. Therefore, second experiment was performed to investigate the effect of caffeine on ion current induced inhibitory amino acid neurotransmitter. GABA and glycine. Single periaqueductal gray neuron was acutely dissociated and nystatin perforated patch clamp was performed under voltage clamping condition. Caffeine evoked outward current in PAG neuron dose dependent manner. 1mM of caffeine application had no response. but 3mM caffeine evoked about 32.5±8.539pA outward ion current and 10mM caffeine evoked about 215.46±19.4pA outward current. 10^-2mM GABA activated Cl ̄current and recorded by inward current. Caffeine inhibited GABA activated Cl ̄ current concentration dependent manner. 10^-2mM of caffeine had no effect on 1-^-2mM of GABA response. but 10^-1mM caffeine inhibited GABA activated Cl ̄ current about 5.74±2.13%, 1mM caffeine inhibited about 17.25±2.70%, 10mM caffeine inhibited GABA response about 45.31±7.71%. 10^-1mM of glycine activated Cl ̄ current and also recorded by inward current. Caffeine inhibited glycine activated Cl ̄ current concentration dependent manner. 10^-2mM caffeine decreased glycine activated Cl ̄ current about 4.61±1.650%, 10^-1mM caffeine decreased about 6.49±2.24%, 1mM caffeine decreased about 26.82±4.27%, and 10mM caffeine decreased glycine response about 94.47±1.39%. These results suggest that caffeine inhibite inhibitory amino acid, GABA and glycine, this response causes excitation of CNS and this seems to be the basic mechanism of increasing effect to aerobic exercise performance by caffeine.

        치과진료실에서 황색 포도구균의 감염유형 분석

        To investigate the cross contamination in the dental clinic, Staphylococcus aureus, the pathogen in acute pyogenic infection and one of the important microbes causing nosocomial infection, was isolated from the mouth and anterior nare of healthy personnel and patients and the air in the dental clinic. The patterns of antibiotic susceptibility of the isolated staphylococci were examined. mecA gene from the MRSA was detected by polymerase chain reaction (PCR). The isolation rate of S. aureus in the dental clinic was the highest in the mouth of dentists (29.4%) and the lowest in the air of the dental clinic (1.3%). In the study of PCR, MRSA and some methicillin susceptible staphylococci had mecA positive gene. These results suggest that staphylococci in the dental environment might be one of the important causes of nosocomial infection in the dental clinic.

        증편 구조에 미치는 쌀 단백질의 영향

        The aim of this study was to examine the effect of rice protein on the network structure of the Jeung-Pyun. The major component of Jeung-Pyun rice protein was extracted, the change of rice protein during the Jeung-Pyun fermentation was assessed,and the effect on the viscosity and volume of adding protease to Jeung-Pyun was investigated. In addition, the result of adding protein to rice starch on the viscosity and volume of Jeung-Pyun was that the rice protein mediated the volume and expansion ability. The results were as follows. In rice and dough of Jeung-Pyun, the SDS soluble protein content was higher than that of wheat flour and no change was detected in the amount of extracted protein with the fermentation time. However, in the FPLC pattern, low molecular weight peaks were decreased with the fermentation time, which indicates the increase in the ratio of high molecular weight substances. In contrast, the addition of protease substantially decreased,the viscosity and volume of Jeung-Pyun, whereas the viscosity and volume were increasedby adding protein to rice starch in order to reconstitute Jeung-Pyun. This suggested that rice protein in Jeung-Pyun had a mediating effect on both the volume and the formation of the texture.

        감염근관에서 Black-Pigmented Bacteria의 동정에 대한 연구

        Black-pigmented bacteria have been implicated in the endodontic infections. This group of microorganisms includes Porphyromonass endodontalis, Porphyromonas gingicalis, Prevotella intermedia, and Prevotella nigresceus. The organisms display a wide variety of virulence factors that may be pertinent to acute endodontic infections. The aim of this study was to identify P.endodontalis, P.gingivalis, P.intermedia, and P.nigrescens by using special potency disk test, filter paper spot test, 16S rRNA gene-directed PCR, and API 32A. Microbial samples were collected from root canals of 33 intact teeth with necrotic pulp and/or apical periodontitis. Conventional laboratory methods were used for identification of the strains of black pigmented bacteria. Eighteen of 33 samples were positive for the growth of black-pigmented bacteria. Five colonies were cultured from each pure cultured colonies from Brucella agar plate. Seventy seven colonies were positive for the growth of black-pigmented bacteria. Thirty three of 77(42.6%) were identifed as P.nigrescens, 10 of 77(12.9%) were P.gingivalis, 6 of 77(7.8%) were P.endodontalis, 10 of 77(12.9%) were P.intermedia. On the contraty the reference strains of P.nigrescens, experimental strains of P.nigrescens was sensitive to kanamycin in special potency disk test. 16S rRNA gene PCR and API test after rapid presumptative identification methods. such as special potency disk test and filter paper spot test, would be accurate detection methods for black-pigmented bacteria.
