This study was undertaken to assess eating habits of 230 rural elementary school students living in ChunNam province. Anthropometric data showed that their mean height of girl students was significantly higher than that of boy students. Irregular eating pattern of girl students was noted. There was a significant difference in concerning on weight control between girls and boys. Girls especially view themselves as too obese even though their weight was in normal range and they were more concerned on weight control due to appearance. Nutrition education at school was an important factor ruling out peaky eating habits in participants. More effective nutrition education might be suggested to form a good eating habit which result in maintenance of ideal weight and promote health for rural elementary school students.

신고배(Pyrus pyrifolia cv. Niitaka)의 휘발성 향기성분에 전자선 조사의 영향과 전자선 조사 후 저장기간에 따른 휘발성 향기성분의 변화를 확인하기 위하여 본 연구를 수행하였다. SDE 추출방법과 GC/MS 분석에 의하여 선량에 따른 신고배의 휘발성 향기성분을 분석하였다. 비조사 신고배와 전자선 0.25, 0.5, 1 그리고 3 kGy로 조사된 신고배에서 각각 46, 45, 44, 48 그리고 51종의 화합물을 동정하였다. 신고배의 주요 휘발성 향기성분으로는 C?화합물인 hexanal, n-hexanol, (E)-2-hexenal이 분리 동정되었다. 4℃에서 30일 저장 후 신고배의 휘발성 향기성분의 조성은 유사하였으며, 저장기간 동안 크게 변화가 없었다. 소비자 수용성에 기여하는 휘발성 향기성분에 대하여 전자선 조사는 휘발성 향기성분의 변화에 크게 영향을 미치지 않는 것으로 판단되었다. 관능평가 실시 결과, 1 kGy 이하의 저선량으로 전자선 조사된 배의 기호도가 대조군보다 오히려 약간 높은 것으로 나타났으며 유의적인 차이는 없었다. 위의 결과를 토대로 신고배의 전자선 조사기술을 적용하기 위해서는 다양한 실험방법을 통한 지속적인 연구가 필요할 것으로 사료된다. This study was performed to examine the effects of electron beam irradiation on volatile flavor components of Shingo pear (Pyrus pyrifolia cv. Niitaka) and on their changes according to storing period following irradiation. Volatile flavor components in pear were extracted using simultaneous steam distillation and extraction (SDE) apparatus and analyzed by GC/MS. 46 components were identified in control whereas 45, 44, 48 and 51 components were identified in irradiated samples by electron beam at 0.25, 0.5, 1, and 3 kGy, respectively. Hexanal, n-hexanol, and (E)-2-hexenal were identified as the major volatile flavor components of all samples. The characteristic volatile flavor components of irradiated pear by electron beam were similar to those of control, and their effects depending on irradiation source were not different. In addition, there was no noticeable change in volatile flavor components of pear with storage at 4℃ for 30 days or with irradiation. Sensory evaluation indicated that the consumer receptiveness tended to be higher at a low level of radiation dose under 1 kGy than control, albeit not significant. Therefore, electron beam irradiation at low level of radiation dose under 1 kGy could be considered as an effective method to exterminate vermin and thus to improve the shelf-stability of pear without deterioration.
HPLC-ICP-MS를 이용한 톳의 비소 화학종 분석 및 위해성 평가

본 연구는 비소 함량이 높은 해조류(10-60 ㎎/㎏) 중 무기비소 함량이 높은 톳을 대상으로 총 비소 함량 측정 및 비소종 분리, 분석을 실시하였으며, 그 결과를 바탕으로 PTWI와 비교하여 위해성 평가를 실시하였다. 전국 10곳의 지역에서 총 30종의 시료를 구입하여 ICP-MS로 총 비소 함량을 측정한 결과 건조시료를 기준으로 평균 45.65 ± 21.17 ㎎/㎏(생물기준; 3.63 ± 2.19 ㎎/㎏)의 함량을 보여 다른 나라의 여러 연구결과와 비교해 볼 때 상대적으로 낮게 확인되었다. HPLC-ICP-MS를 이용하여 분리, 분석된 톳의 주요 비소화학종은 상대적으로 독성이 강한 무기비소로 평균함량이 As(V) 40.36 ㎎/㎏, As(III) 0.37 ㎎/㎏으로 전체 비소함량의 88.6%를 차지하였다. 그러나 무기비소함량이 가장 높게 확인된 시료(생물기준; 9.19 ㎎/㎏)를 대상으로 톳의 위해성을 JECFA의 PTWI와 비교해 볼 때 6.1%로 낮은 수준이었다. 따라서 연 평균 0.1 g의 톳을 섭취하는 한국인에게서는 14.0 g/day(98.3 g/week) 이상의 톳을 지속적으로 먹지 않는 이상 톳의 섭취에 따른 위해 가능성은 미비하여 안전한 수준으로 판단된다. This study investigated arsenic speciation and risk assesment in 30 samples of hijiki purchased from local market in 10 Korean cities. The mean arsenic concentration of the hijiki samples was 45.65 ㎎/㎏ (dryness; moisture content of 91.1 ± 1.6%), and the major arsenic compound was arsenate [As(V)]. The concentrations of As(V) and As(III), as inorganic arsenic compounds, were detected to be 40.36 ㎎/㎏ and 0.37 ㎎/㎏, respectively, and made up 88.6% (40.46 ㎎/㎏) of the arsenic in the hijiki. Among the samples, the highest inorganic arsenic concentration was identified at 9.19 ㎎/㎏ (wet), and for an adult with a body weight of 60 kg was within an acceptable level as 0.7% (6.43 ㎍/60 ㎏/week) when compared with the provisional tolerable weekly intake (PTWI) (900 ㎍/60 ㎏/week), and would be considered safe with respect to health-hazardous effects.
