        부산ㆍ경남지역의 향토 별미김치 종류와 특징

        This study was conducted to summarize the known kinds and characteristics of traditional special kimchies in Pusan and Kyungnam province. The taste of kimchi varies from region to region within Korea. In the southern part of the country, where the weather is much warmer, more salt is added along with salted anchovy (Myulchi Jeot), and the kimchi is less juicy and richer in flavor. More than 180 different varieties of kimchi are reported in Korea, but there are 30~40 different kinds of kimchi in Pusan and Kyungnam province depending on the main ingredients are known. Puchu kimchi (leek kimchi), Uung kimchi (burdock kimchi), Kongnip kimchi (soybean leaf kimchi), Jeonbok kimchi (abalone kimchi), Pa kimchi (green onion kimchi), and Kkennip kimchi (perilla leaf kimchi) are the typical traditional special kimchi in Pusan and Kyungnam province. Todays, dietary culture has been gradually changed, and diminished the local characteristics. Also, these tendency appears in the taste of the traditional special kimchi. However, it still remains the distinction in the taste, ingredients and the methods of preparation of kimchies in Pusan and Kyungnam province. In this paper, the dispersed informations on the kinds, characteristics, and the preparation method of the special kimchies known in literatures and inherited persons in Pusan and Kyungnam province were tried to put together.

        Antimutagenic Compounds Identified from Perilla Leaf

        들깻잎의 메탄올 추출물이 S. typhimurium TA98과 100에서 aflatoxin B₁(AFB₁)의 돌연변이 유발성을 억제시키는 효과가 있었다. 메탄올 추출물을 silica gel column을 사용하여 더욱 분획하여 항돌연변이 효과를 시험하였으며, 그중 효과가 가장 컸던 fraction중의 화합물을 분리, 동정한 결과 2-ethoxy acetate, 1,2,3,4-tetramethyl-cis-cyclobutene, 두 개의 methyl 11,14,17-eicosatrienoate 이성체, 12-acetyl-9-octadecanoic acid, 그리고 phytol이 있음이 잠정적으로 밝혀졌다. Phytol과 methyl 11,14,17-eicosatrienoate의 표준품을 사용하여 AFB₁ 및 Trp-P-2에 대한 항돌연변이 효과를 시험한 결과 그 효과가 컸음이 밝혀졌다. The methanol extract of perilla leaves contained compounds to reduce the mutagenicity of aflatoxin B₁ (AFB₁) in Salmonella typhimurium TA98 and 100. They were separated by solvent extractions and identified by GC and GC-MS as 2-ethoxy acetate, 1,2,3,4-tetramethyl-cis-cyclobutene, two isomers of methyl 11,14,17-eicosatrienoate, 12-acetyl-9-octadecanoic acid, and phytol. The antimutagenicities of phytol and methyl 11,14,17-eicosatrienoate were dependent on the mutagens tested. Phytol reduced the mutagenicity of Trp-p-2 but not of AFB₁ and methyl 11,14,17-eicosatrienoate reduced the activities both of the mutagens.

        들깻잎 추출물의 항돌연변이 및 항산화 효과

        들깻잎의 메탄올 추출물은 Salmonella typhimurium TA98과 TA100 균주에서 AFB₁, Trp-P-2 및 B(a)p의 돌연변이유발을 억제시키는 효과가 있었으며 이들을 용매로 더 분획했을 때 수층에서는 효과가 없었지만 헥산 획분과 부탄올 획분에서 항돌연변이 효과가 있었다. Lipid peroxidation은 들깻잎의 메탄올 추출물을 첨가하였을 때 억제되었으며 특히 부탄올 획분 첨가시 크게 억제됨을 관찰할 수 있었다. 돌연변이 유발억제 및 항산화 효과가 관찰된 부탄올 획분에서 2-propyl furan, ethanodioate, dibutyl ester, benzaldehyde, 2-methyl-2- ethyl-3-hydroxy-propanoic acid, octahydro-3a-meth-yl-2H-inden-2-one 등이 잠정적으로 동정되었다. The methanol extracts of perilla leaves reduced the mutagenicities mediated by of aflatoxin B₁(AFB₁), 3-amino-1-methyl-5H-pyrido (4,3-b) indole (Trp-P-2) and Benzo(a)pyrene (B(a)p) in Salmonella typhimurium TA98 and TA100. The methanol extracts were more fractionated, and the fractions of hexane and butanol revealed the antimutagenic activities against AFB₁ and B(a)P. The production of malondialdehyde (MDA) was decreased when the methanol extracts of perilla leaves were added to the system. The significantly higher antioxidative activity was observed in the butanol fraction. 2-Propyl furan, ethanedioic acid, dibutyl ester, benzaldehyde, 2-methyl-2-ethyl-3-hydroxy-propanoic acid and octahydro-3a-methyl-2H-inden-2-one were identified tentatively as major compounds from the butanol fraction.

        소금 종류를 달리하여 제조한 된장에서의 항암효과

        The study was carried out to evaluate the anticancer effects in Korean soybean paste (doenjang) added with sun-dried salt(S-D), roasted salt(R-D), bamboo salt roasted once (B1-D) or bamboo salt roasted nine times(B9-D), In MTT assay, S-D, R-D, B1-D and B9-D exhibited a significant inhibitory activity (64-87% and 68-92%) against the proliferation of AGS human gastric adenocarcinoma cells by adding 0.05% and 0.1% of methanol extract, Among Balb/c mice injected with sarcoma-180 cells, the bodies, livers, spleens, kidneys and heart weight of the mice administered with 4 kinds of doenjang extracts were heavier than the non-administered ones of the group, However, no difference was found between the control and doenjang administered groups, Four kinds of doenjang inhibited significantly the tumor growth, especially R-D and B1-D showing an inhibition of tumor cell growth up to 97% by the administration of 1.0 mg/kg methanol extracts of doenjang, The activity of natural killer(NK) cells was relatively high in mice administered with four kinds of doenjang, Particularly, mice administered with R-D methanol extract showed a stronger activity of 88.2%, The activity of glutathione S-transferase(GST) in mice administered with four kinds of doenjang was higher than that of the non-administered group, In particular, the GST activity was the strongest in the group with B1-D, As these results indicate the various kinds of salt have different effects on the anticancer activity of doenjang.

        아플라톡신 B₁과 4 - NQO에 대한 녹황색 채소류의 항돌연변이 효과

        아플라톡신 B₁과 4-NQO의 돌연변이 유발성에 미치는 녹황색 채소류의 메탄올 추출물과 쥬스들의 항돌연변이 효과를 검토하였다. Salmonella typhimurium TA98과 TA100을 이용한 Ames실험계를 사용하였는데 아플라톡신 B₁에 대해 채소류의 메탄올 추출물 중에는 들깻잎, 상치, 브로콜리, 쑥갓, 미나리, 들미나리, 붉은 고추, 고추잎, 비름, 시금치, 무 등이 큰 항돌연변이성을 나타내었다.(p<0.01). 이 경우 시험시료 중 약 50%정도가 저해 효과를 나타내었지만, direct mutagen인 4-NQO에서는 실험시료 27종중 25종류(93%)에서 항돌연변이성이 관찰되었다.(p<0.01, 0.05). 이중 60%이상 저해효과를 나타낸 시료는 양배추, 케일, 상치, 브로콜리, 갓, 풋고추, 피망, 시금치, 비름, 콩나물, 애호박이었다. 한편 쥬스로 부터 아플라톡신 B₁에 대한 항돌연변이 효과를 나타낸 채소류는 들깻잎, 들미나리, 시금치, 양배추로써 각각 용량 의존적으로(50~500㎕/plate)농도의 증가에 따라 그 저해도가 크게 증가하였다. 한편 오이와 당근은 농도를 높여도 큰 저해 효과는 관찰되지 않았다. The antimutagenic effects of green-yellow vegetables toward aflatoxin B₁ (AFB₁) and 4-nitroquinoline-1-oxide (4-NQO) using the Ames assay system with Salmonella typhimurium TA98 and TA100 were studied. Forty six to fifty percent of the methanol extracts of the vegetable samples inhibited the mutagenicity induced by AFB₁ in TA98 and TA100. Perilla leaf, lettuce, broccoli, crown daisy, water dropwort, small water dropwort, red pepper, red pepper leaves, amaranth, spinach and radish root were significantly reduced the mutagenicity of AFB₁ (p<0.01). Whereas 25 out of 27 samples (93%) exhibited antimutagenicity toward a direct mutagen of 4-NQO (p<0.01, 0.05). The samples which showed the strong antimutagenicity (>60%) were cabbage, kale, lettuce, broccoli, mustard leaf, green red pepper, green sweet pepper, spinach, amaranth, soybean sprout and immature pumpkin. The juices from the several samples also showed antimutagenic activity toward AFB₁. Cabbage, perilla leaf, small water dropwort and spinach reduced TA100 revertants dose dependently in the range of 50~500ml/plate, however, cucumber and carrot showed little effect.

        들깻잎에서 동정된 Phytol과 Eicosatrienoic Acid의 암세포 증식억제 효과

        들깻잎 추출물에서 분리 동정되어진 phytol과 methyl ETA는 인체의 암세포의 증식을 강하게 억제하는 효과가 있는 것으로 나타났다. Phytol을 10.0㎍/ml 첨가하였을 때 인체의 결장암 세포인 HT-29와 골육암 세포인 MG-63이 각각 사멸되거나 91%의 증식이 억제되었다. 또한 methyl ETA는 25.0㎍/ml 첨가시 HT-29 세포의 증식을 80% 억제하였고 MG-63 세포를 63% 억제하였다. 이러한 암세포 증식 억제는 AZ-521 위암세포의 형태 변화를 관찰함으로써도 알 수 있었다. Phytol과 methyl ETA의 첨가로 MG-63 골육암 세포의 DNA 합성이 감소되었는데 phytol을 10.0㎍/ml 첨가하였을 때 현저히 감소되었고(93%), 50.0㎍/ml의 methyl ETA 첨가로 합성이 거의 일어나지 않았다. 이상의 결과에 의해 들깻잎에서 분리된 phytol과 methyl ETA는 인체의 암세포 증식을 억제하며 암세포의 DNA 합성 과정을 억제할 수 있는 것으로 사료된다. We investigated the inhibitory effects of phytol and methyl 11,14,17-eicosatrienoic acid (methyl ETA, n-3, 20 : 3) separated from perilla leaves on the growth of human cancer cells. Phytol inhibited significantly the growth of HT-29 human colon cancer cells, MG-63 osteosarcoma cells and AZ-521 gastric cancer cells. Although the activity of methyl ETA was lower than that of phytol, it was also observed to have the inhibitory effect on three human cancer cell lines. Furthermore, the DNA synthesis of the MG-63 osteosarcoma cells was markedly decreased by the addition of the phytol and methyl ETA. These results suggest that phytol and methyl ETA identified from the perilla leaves may playa role on the growth inhibition of the human cancer cells.
