        Characterization of Edible Film Fabricated with Channel Catfish Ictalurus punctatus Gelatin by Cross-Linking with Transglutaminase

        The objectives of this research were to improve the film-forming properties of Channel Catfish Ictalurus punctatus skin gelatin (CSG) by cross-linking with transglutaminase (TG), determine and optimize the TG reaction time, and characterize the mechanical and barrier properties of CSG edible film. Cross-linking of CSG was performed by TG for 0, 10, 20, 30, and 40 min at 50°C, and the reaction was confirmed by sodium dodecyl sulfate-polyacrylamide gel electrophoresis (SDS-PAGE). The color and mechanical and barrier properties of edible films fabricated with CSG cross-linked with TG were characterized. Gelatin yields from the extraction ranged from 18.2% to 23.3%. SDS-PAGE exhibited dark bands at 120 and 250 kDa, indicating successful TG-mediated cross-linking. The color of CSG film was not affected by TG cross-linking. The tensile strength of CSG films cross-linked with TG decreased from 42.59 to 21.73 MPa and the percent elongation increased from 42.92% to 76.96% as reaction times increased from 0 to 40 min. There was no significant difference in water vapor permeability of CSG films.

        Chitosan에 의한 광합성세균 처리 두부고업폐수의 균체 응집효과

        광합성세균에 의한 식품산업폐수처리시 발생되는 sludge의 효율적인 회수와 균체의 용도개발을 목적으로 생체에 안전하고 다양한 기능성을 보유한 천연 고분자물질을 대상으로 두부공업 폐수처리조내에서의 균체 응집효과를 검토하였다. 음이온성 고분자전해질인 sodium alginate, carrageenan, xanthangum, gum arabic, CMC, agar 등은 응집효과가 미미하였지만 양이온성 고분자 물질인 chitosan은 높은 응집효과를 보였으며 carrageenan과 복합처리에 의해 침전속도가 증가하였고 침전된 입자의 크기가 증대됨을 알 수 있었다. Chitosan에 의한 균체의 최대응집조건은 chitosan 농도 40mg/l, 탈아세틸화도 75% 이상, pH7, 실온, 정치시간 40분 및 저속교반 등이었으며 이 조건에서 chitosan은 균체응집효과 뿐만 아니라 처리된 폐수에서 MLSS 87%, COD 42%를 제거시키는 부가적인 기능을 나타내었다. As a mean to recover photosynthetic bacterial(PSB) cells and its practical uses in food industrial wastewater treatment, various biodegradable polyelectrolytes were first investigated for flocculation of suspended colloids in the PSB treatment process of soybean curd wastewater. Anionic polyelectrolytes such as sodium alginate and carrageenan were not effective but a cationic polyelectrolyte chitosan isolated from Portunus trituberclatus showed very effective flocculation activity. The concentration of chitosan, pH and temperature of wastewater for maximal flocculation were 40 mg/l, pH 7 and room temperature, respectively. Test using deacetylated chitosan to various degree showed higher flocculating activities in samples deacetylated over 75% and time for maximum flocculation was 40 min by stirring slowly under the above optimal conditions. Chitosan was not only effective to flocculate cells but also removed COD and MLSS of the wastewater. COD of 42% and MLSS of 87% were removed by addition of chitosan to the soybean curd wastewater treated with PSB.

        새물응집제로서 폐영지박 Chitosan-glucan 복합물의 이용성

        식품산업폐수처리시 부생되는 sludge의 효율적인 회수와 회수된 균체의 용도개발을 위한 천연 고분자 응집제의 개발을 목적으로 폐영지박으로부터 chitosan-glucan 복합물의 최적추출조건과 응집제로서의 특성을 검토하였다. Chitosan의 새로운 급원으로서 폐영지박으로부터 chitosan 복합물을 분리, IR 분석을 행한 결과 chitosan-glucan 복합물임을 확인하였다. 50% NaOH, 120℃에서 5시간 동안 추출된 복합물의 glucosamine 추출수율은 83.5%이었으며 chitosan-glucan 복합물의 응집효과를 검토하기 위해 상온에서 4시간 동안 2% acetic acid로 용출시킨 복합물은 400mg/l 농도에서 공업용 chitosan보다 1.3배 우수한 응집효율을 나타내었다. 응집제로서 chitosan-glucan 복합물의 특성을 검토한 결과 두부공업폐수에서 MLSS 83%와, COD 60%, 제당폐수에서 탁도 50%와 MLSS 21%, 주정폐수에서 탁도 90%와 MLSS 89%의 제거율을 나타내었다. 균체에 대한 응집효과는 광합성세균외 Bacillus subtilis에 대해 89%, Streptococcus lactis에 대해서는 81%, E. coli는 2일 정치후 90%의 양호한 응집효과를 나타내었다. 이 결과들은 공업용 chitosan과 비교할 때 응집능이 같거나 보다 우수한 효과를 보임으로써 폐영지박으로부터 생분해성 응집제의 개발 가능성과 높은 실용성을 제시해 주었다. Also the solubilized complex removed 83% of MLSS and 60% of COD in the soybean curd wastewater treated by photosynthetic bacteria, 50% of turbidity and 21% of MLSS in sugar industry wastewater, and 90% of turbidity and 89% of MLSS in alcohol fermentation wastewater. Bacterial cell flocculation activities of the solubilized chitosan-glucan complex were 89% in Bacillus subtilis broth, 81% in Streptococcus lactis broth, and more than 90% in Escherichia coli broth after standing for 2 days. The results reveal that chitosan-glucan complex from Ganoderma lucidum wastes can substitute for commercial chitosan as non-toxic and biodegradable flocculant.

      • Determination of Manufacturing Process Similarity of Imported Food Products Using Word2Vec Algorithm

        Word2Vec algorithm is one of the most widely used models of word embeddings, searching for word-to-word associations and representing word data in vector numbers. The goal of this study was to investigate the efficacy of Word2Vec algorithm as a rapid and accurate method for determining “the same imported product from the same company” for imported food items in South Korea. The accuracy of Word2Vec algorithm was determined by correlating the cosine similarity to the manually determined manufacturing process, and the accuracy changes from the Word2Vec algorithm were also investigated by using the weights selected from critical control points (CCPs) of the process. The Word2Vec algorithm determined the manufacturing processes as “same process” with the accuracy of greater than 70%, when the cut-off value cosine similarity is set as 0.85. When the cosine similarity is less than 0.85, the user weight was applied. The accuracy was dependent upon the CCPs; when the CCPs are shared (or same) in the processes, the similarity increased, however when the CCPs were missed or not shared (or different), the similarity decreased.

      • High-Performance Organic Thin-Film Transistors with Ordered π-Conjugated Copolmyer Films Based on BTBT.

        Organic thin-film transistors (OTFTs) have suffered from insufficient mobility for commercial viability despite their intrinsic advantages such as light weight, flexibility and simple fabrication. Here, we report high performance OTFTs fabricated by simple solution processing of π -conjugated semiconducting copolymers based on [1]benzothieno [3,2-b]benzothiophene (BTBT) and perylene/naphthalene diimide (PDI/NDI) derivatives. The OTFTs showed n-channel dominant behaviors with superior mobility compared to that made of other copolymers based on PDI/NDI. The morphology and molecular packing of the copolymer thin films analyzed through atomic force microscopy (AFM) and grazing incidence X-ray diffraction (GIXD) together explained the high performance of OTFTs. Furthermore, the OTFTs exhibited phototransistor behaviors under visible light, showing potential of PDI / NDI copolymer-based OTFTs in photosensor application.
