Chitinases are glycosyl hydrolases which cleave the β- 1,4 linkage of chitin into oligo or monomers of N-acetylglucosamine. These bacterial enzymes have been used for a wide range of applications in the food and pharmaceutical industries. In this study, we isolated two potential chitinolytic strains, BAO-01 and BAO-02, from salt-fermented shrimp, which were shown to belong to the genus Salinivibrio through genetic characterization using 16S rRNA. These isolates were gram-positive, rod-shaped, and non-spore forming. BAO-01 showed greater growth and chitinase activity than BAO-02 after the incubation at 37 oC for 4 days. Both strains grew on a wide range of carbon and nitrogen sources, pH values, temperatures, and salt levels. However, they showed minor biochemical differences. In addition, their antimicrobial activities against foodborne pathogens and antibiotic susceptibilities were evaluated. These Salinivibrio spp. did not show bioamine production, hemolytic activity, and mucin degradation. Therefore, the in vitro screening results suggested that these bacteria could be widely used as new candidates for chitin hydrolyzation and seafood fermentation.

This study focused on the preparation and characterization of anti-wrinkle peptides from the salted and fermented shrimp (Acetes japonicus) inoculated with Salinivibrio cibaria BAO-01 (SFSC). The results showed the proximate composition of SFSC to be 9.23% water, 75.32% protein, 0.23% fat, and 13.3 mg/g ash. Interestingly, the S. cibaria fermentation significantly increased the amount of methionine, leucine, and arginine. The in vitro antioxidant activity was assayed by the diphenylpicrylhydrazyl method and its IC50 value was found to be 43.02±2.84 μg/mL. It was observed to inhibit the activity of elastase, tyrosinase, collagenase, and hyaluronidase. The IC50 values of SFSC were 182.75±12.38 μg/mL for anti-elastase activity, 186.78±7.95 μg/mL for anti-tyrosinase activity, 444.4±34.81 μg/mL for anti-collagenase activity, and 1447.95±28.92 μg/mL for anti-hyaluronidase activity. These results suggest that salted and fermented shrimp has strong potential for the development of nutricosmetic products.

The study aims to evaluate the impact of corporate social responsibility on customers’ repurchase intention in Vietnam’s fast-moving consumer goods (FMCG) industry. This study employs primary data surveyed from 417 Vietnamese consumers, and the sample is selected based on the willingness to participate in providing information. The results show corporate social responsibility’s positive impact on repurchase intention in the FMCG industry in the Vietnam market. There are three components of corporate social responsibility, including ethical responsibility, legal responsibility, and economic responsibility have a positive impact on repurchase intention. The economic responsibility component has the greatest effect on repurchase intention. There is not enough statistical basis for the philanthropic responsibility component of corporate social responsibility to recognize its impact on repurchase intention. The findings of this study suggest that companies dealing in the FMCG industry in Vietnam need to invest more in further developing their corporate social responsibility, it not only helps to improve their customer loyalty to businesses but also contributes to promoting the country’s economic and social development in a better and more sustainable direction.

Lactobacillus strains have been considered good candidates as biological control agents for prevention or treatment of plant and animal infections. One L. plantarum strain FB003 and three strains (FB011, FB081, and FB110) which closed to L. sakei were isolated from fermented and salted shrimp and their abilities in inhibiting growth of Vibrio parahaemolyticus were characterized. These strains were selected as potential probiotics based on their oro-gastro-intestinal resistance, gut colonization, adhesion to Caco-2 cells, antimicrobial activities, antibiotic resistance, and safety aspects. Results of this study revealed that these isolates possessed high aggregation activities against pathogens in host intestines. Strain FB011 strain showed higher coaggregation and immunomodulatory activity in the gastro-intestinal tract than L. plantarum. These difference effects of Lactobacillus strains provide valuable information about using them to prevent Vibrio infections in the aquaculture industry.
Coffee Husk By-Product as Novel Ingredients for Cascara Kombucha Production

Kombucha, a fermented beverage, is gaining popularity due to its numerous beneficial health effects. Various substrates such as herbs, fruits, flowers, and vegetables, have been used for kombucha fermentation in order to enhance the flavor, aroma, and nutritional composition. This study aims to investigate the potential suitability of cascara as a novel ingredient for kombucha production. Our findings suggested that cascara is a suitable substrate for kombucha production. Fermentation elevated the total phenolic and flavonoid content in cascara, which enhanced the antioxidant, antibacterial, and prebiotic characteristics of the product. Furthermore, the accumulation of acetic acid-induced the pH lowering reached 2.7 after 14 days of fermentation, which achieved the microbiological safety of the product. Moreover, 14 days of fermentation resulted in a balanced amalgamation of acidity, sweetness, and fragrance according to sensory evaluation. Our findings not only highlight the potential of cascara kombucha as a novel substrate for kombucha production but also contribute to repurposing coffee by-products, promoting environmentally friendly and sustainable agricultural development.

<P>Two double branched organic dyes (T1I and T2I) were synthesized, characterized, and employed as photosensitizers in p-type dye-sensitized solar cells (p-DSSC); we have compared with corresponding single branched dye (TC1) and reference dye P1. The absorbance of the dyes in solution was red shifted and the oxidation potential gradually decreased with increasing the donating ability. It was found that modification from single branched (TC1) to double branched (T1I and T2I) system resulted in increased photocurrent density leading to the higher photovoltaic performances. The charge transporting ability is increased with the introduction of double branching, as evidenced from electrochemical impedance analysis.</P>

<P><B>Abstract</B></P> <P>A series of novel single and double branched carbazole-based red-absorbing cationic dyes without (CSI and CDI) and with (CST and CDT) a thiophene spacer have been synthesized for p-type dye-sensitized solar cells (<I>p</I>-DSSCs). The introduction of the red-absorbing cationic acceptor/thiophene spacer led to the broadening and bathochromic shift of the absorption maxima from an onset of 600 nm for CSI to 800 nm for CDT as well as improved molar absorptivity. The introduction of the double branching/thiophene spacer lowered the lowest unoccupied molecular orbital (LUMO) levels of CDI, CST, and CDT, making their potentials more positive than that of CSI. Among these, the double branched CDI exhibited the highest conversion efficiency of 0.112%. Furthermore, all of the dyes examined outperformed the standard C343 dye (0.062%), measured under similar fabrication conditions. Despite the decreased photovoltaic performance as a result of the introduction of the thiophene spacer, overall, the double branched dyes exhibited better interfacial charge transfer that led to higher J<SUB>SC</SUB> and V<SUB>OC</SUB> values compared to those of singly branched dyes. Electrochemical impedance spectroscopy analysis showed that double branched dyes have much lower charge transfer resistance and increased hole lifetime than single branched dyes. Density functional theory (DFT) and time-dependent DFT calculations were performed to theoretically characterize the optical and electrochemical properties of the synthesized dyes.</P> <P><B>Highlights</B></P> <P> <UL> <LI> Red absorbing indolium-based single and di-branched (DB) dyes were synthesized. </LI> <LI> The result shows that DB dyes exhibited higher efficiency than single branched dyes. </LI> <LI> EIS calculations indicate that DB dyes exhibit good charge transfer properties. </LI> <LI> Also showed increased hole-lifetime than single branched dyes. </LI> </UL> </P> <P><B>Graphical abstract</B></P> <P>Doule branched dyes showed better interfacial charge transfer and hole lifetime over single branched dyes leading to enhanced photovoltaic performance.</P> <P>[DISPLAY OMISSION]</P>
