The Effect of Delivery Food on Customer Emotional Response and Repurchase Intention

        CHA, Seong-Soo,SHIN, Mee-Hye Korea FoodHealth Convergence Association 2021 식품보건융합연구 (KJFHC) Vol.7 No.2

The purpose of this study is to examine the impact of the service quality of delivery food on customers' emotional response and repurchase intention during the COVID19 pandemic. The proposed research model examined the effect on the service quality, customer sentiment response, and repurchase intention of delivery food. A questionnaire was distributed and measured for 300 consumers who had experience using food delivery services in the last 30 days. The questionnaires from previous researches were revised to fit the purpose of the present study. The survey results were analyzed to verify the reliability and validity of the measured variables. To verify the hypotheses a Structural Equation Modelling (SEM) was used for the study. The results showed that taste, price fairness, and package design positively affected emotional response; moreover, repurchase intention was enhanced by emotional response. This research analyzed the relationships between service qualities of delivery food, emotional response, and repurchase intention when customers consume delivery food during COVID19 in Korea. This study extends the delivery food literature by combining customers' emotional behavior with SEM model. The result suggested competitive strategic plans and development directions of food delivery companies in the rapidly increasing food delivery industry, providing implications for further research.

This study aims to empirically analyze the differences between groups of customers who prefer delivery food, which is rapidly growing amid the COVID-19 pandemic, and those who prefer the traditional practice of visiting offline restaurants. Based on the eating out lifestyle, participants were divided into three groups: participants who prefer food delivery, those who prefer to visit restaurants, and those who favor both. The comparison of differences between the groups was analyzed. A total of 215 questionnaires were distributed, and reliability and validity were verified with a sample of 201 copies, excluding 14 unreliable respondents. Then, a multivariate analysis of variance was used to compare the groups. The results showed that regarding offline restaurants, the group of customers who prefer to visit restaurants valued their atmosphere, while the customers who prefer delivery food valued the reputation of the restaurant. Regarding delivery-specialized restaurants, the group of customers who prefer delivery placed greater value on coupon events and payment convenience than other groups. The results revealed that the difference between the customers who prefer to visit restaurants and those who prefer delivery food was identified through empirical analysis, which provides strategic implications for catering companies and restaurant industries during COVID-19 in Korea.

Changes in Nutrition of Adult's Favorite Foods of High calorie, Low-nutritive Foods

LEE, Jaemin Korea FoodHealth Convergence Association 2020 식품보건융합연구 (KJFHC) Vol.6 No.3

This study analyzed in nutrient contents changes of adult's favorite foods between March 2019 and July 2020 after policy implementation nutrient-poor foods based on special act on safety control of adult's dietary life in Korea. Among adult's favorite foods manufactured or sold in 2020 as well as 2019, calories and key nutrients in breads, ice creams and pizzas were improved in comparison to those in the other food groups. However, most of the changes in calories or key nutrient contents exist. The newly introduced candies, breads showed slightly greater improvements in calories and key nutrient contents than in 2019. On the other hand, some negative changes were found in newly introduced chocolates in comparison to previous ones. Overall, policy implementation on foods seemed to induce changes in nutrient contents of adult's favorite foods. In particular, nutrition education is reported to have a positive impact on adult's frequency and preference for processed foods, and more systematic and continuous nutrition education measures should be devised to help adult as consumers selectively purchase healthy foods. This research is meaningful in that it is the first study to analyze the quality changes of adult's favorite foods since the high-calorie and low-nutrient food management policy.

REVIEW: Footpad dermatitis (FPD) in chickens

AMER, Mohamed M. Korea FoodHealth Convergence Association 2020 식품보건융합연구 (KJFHC) Vol.6 No.4

Footpad dermatitis (FPD) can be considered as a threat for poultry production due to it causes losses due to condemnation in slaughterhouse. The prevalence and the severity of FPD in broiler breeders increase over time with development of poultry industry. The condition is produced by multifactorial including include drinker design and management, diet composition, house (temperature and humidity levels), litter (type, quality, and quantity) and gut health. Bacterial infections can be associated. FPD lesions can develop in less than a week. FPD is a variable size of inflammatory lesion of the footpad in commercial poultry characterized by necrotic lesions on the plantar surface of the footpad of poultry. These lesions can be exposed after removal of fecal mass and litter stuck on it. There are considerable and numerous interactions between the environment and the genetic traits. Prevention depends mainly on improvement of litter condition. Genetic selection against footpad dermatitis must be contributed to reduce pain and suffering for particular bird experiencing contact dermatitis as well as to avoid economic losses. The objective of this review is to collect different literature written about FPD to be available to students, researchers and veterinarian in poultry practical.

Primary study on metal amounts in Lophius piscatorius Linnaeus, 1758 obtained from fish markets in Sinop, Turkey

        Bat, Levent,Yardim, Oztekin,Oztekin, Aysah,Sahin, Fatih,Arici, Elif Korea FoodHealth Convergence Association 2020 식품보건융합연구 (KJFHC) Vol.6 No.1

The levels of five heavy metals (mercury, cadmium, lead, copper and zinc) were analyzed in edible tissues of Lophius piscatorius Linnaeus, 1758 marketed in Sinop coasts of the Black Sea by using inductively coupled plasma mass spectrometry. With the present study, heavy metal values of this fish in the Black Sea were examined for the first time. The mean concentrations in mg kg-1 wet wt. of Hg, Cd, Pb, Cu and Zn were 0.022, 0.009, 0.035, 6.3 and 16 mg kg-1 wet wt., respectively. The results of the present study indicate that the consumption of muscle from anglerfish can be considered safe in terms of permissible legal limits. It is clear that, Zn showed the high accumulation in muscle tissue followed by Cu, while non-essential metals Hg, Cd and Pb showed the low accumulation. This could be explained by the fact that Zn and Cu are essential elements in the bodies of living organisms and has an important role in different physiological processes. In the present study, heavy metal levels in angler fish were low. Likewise, the calculated HI values were lower than one. In conclusion, the results of the present study indicate that the consumption of muscle from anglerfish can be considered safe in terms of permissible legal limits and hazard index values.
