On the basis of analyzing objectives of cultivating talents in the vocational colleges and taking Tourism College of Zhejiang as a case of the cuisine major, the paper penetrates the limitations of the cooking-related knowledge and skills when adopting the practice on duty currently in most vocational colleges in China. In the meanwhile, the paper puts forward a solution of expanding practice on duty, and draws up the detailed and specific content of the practice. 文章在分析高职院校人才培养目标的基础上,以浙江旅游职业学院烹饪专业为例,通过深入分析目前我国高职院校部分专业采用顶岗实习而造成实习中所学内容的局限性,提出了根据人才培养目标制定详细、具体的实习内容以及以顶岗实习为基础的拓展实习模式。
