        화학성분으로 본 각국 시판녹차의 품질

        Forty-one green tea samples including Korean, Japanese, Chinese, and Vietnamese green tea were collected from the market. The tea samples were analyzed for total nitrogen(T-N), total free amino acid(FAA), tannin, caffeine, chlorophyll, vitamin C, individual free amino acid and sensory teste. The content of T-N in Japanese green tea(4.41~6.05%) was higher than that of other green tea including Korean green tea(3.15~5.37%). The content of FAA in Japanese green tea was the highest as 1,652~3,791mg/100g, and that of Vietnamese green tea was the lowest as 1,671mg/100g. The content of tannin in Korean green tea(11.30~15.01%) was lower than that of Chinese(15.45~17.33%) and Vietnamese (20.61%). The content of caffeine in Korean green tea was the lowest as 3.28~2.68%, and that of Vietnamese was the highest as 3.31%. The content of chlorophyll in Japanese green tea mading stemmed tea was higher than that of Korean, Chinese, and Vietnamese mading pan-fire blanched tea. The content of vitamin C in Korean green tea(201.8~402.3mg/100g) was the higher than that of Japanes(195.3~378.5mg/100a), Chinese(193.3~341.5mg/100g), and Vietnamese(276.6mg/100g). Eleven kinds of individual amino acid was isolated from forty-one green tea which the content of aspartic acid, glutamic acid, theanine, and arginine occupied over 80-90%. In scoring test, Korean pan-fire blanched tea as 58.7~78.9 point received higher point compared to Japanese(55.3~76.2 point), Chinese(50.1~72.0 point), and Vietnamese(70.5 point). Results of this study suggest that Korean pan-fire blanched tea show excellent in terms of abundance of T-N and FAA, and less contents of tannin, and good sensory teste.

        완효성 비료 비종에 따른 두물차의 수량 및 품질

        Examinated results for bring light on the kinds of slow-release fertilizers are summarized as follows. The soils experiment yield were higher in contents of O.M and Av. P₂O5 than general upland soils, with valve of pH 4.4. Among slow-release fertilizers, the yields of the 2nd harvested tea leaves in the Ta treatment were 3~6% higher than other treatment, but were not different significantly compared with trational manuring. The contents of total nitrogen, total amino acid, chlorophyll and vit. C were higher in the T₂treatment than in the other slow-release fertilizers and the traditional manuring, while contents of tannin and caffeine appeared a contrary tendency. The contents of theanine and glutamic acid as a good taste component of green tea were higher in the T₂treatment than in the other treatments and the traditional manuring. In scoring test, the slow-release fertilizers treatment was not different the traditional manuring significantly. Among 5 kinds of slow-release fertilizers, the yield and quality of T₂treatment were more excellent than in any other slow-release fertilizers.

        차잎 저장 후 혐기처리가 녹차의 기능성분 및 품질에 미치는 영향

        Korea green tea leaves which were harvested the 1st time on May were treated with anaerobic condition to measure change of Y-aminobutyric acid(GABA) and othe constituents after green leaves storage. The contents of chemical components did not show any different between in the gas treatment stored at 5˚C for 10 hours and in control. Whereas chemical components were somewhat lower in the gas treatment stored at 5˚C for 20 hours than in control. The content of GABA with N₂gas treatment stored at 5˚C for 1, 10, 20 hours were higher 6~7 times with values of 200~223mg/100g than in conrtol(35mg/100g). The sensory test was lower in gas treatment stored at 5˚C for 1, 10 and 20 hours(76.7~78.4 point) than in control(80.4 point). The contents of chemical components did not show and different between in the gas treatment stored at room temperature for 1 hour and in control. However, the contents of chemical components were somewhat lower in the gas treatment stored at room temperature for 10 hours than in control. The content of GABA with N₂gas treatment were higher 4.5~6 times with values of 164-215mg/100g than in control(35mg/100g). The quality of green tea slightly decreased with the passing of the stored periad. Consequertly, Made tea within 20 time at 5˚C storage and fast time at room temperature storage after plucking was considered to be the best green tea in terms of functional nature as well as taste nature.

        國內産 茶葉의 生育特性과 化學成分에 관한 硏究

        This study was carried out to investigate growth characteristics, and the contents of mineral element, Tannin, Caffeine and Vitamin C of leaves of 16 wild and cultivated varieties in southernt part of Korea. Results of this investigation are summarized as follows. The most of the wild tea plants were in bamboo thicket or in forest, and the leaf types of tea plants were elliptical or oblong. The leaf sizes of tea plants were 8.2± 1.8× 3.8± 0.8cm, lateral vein number 5.7, crenated number 60.7, and the leaf colors of tea plants were thin green or dark green. The content of total-nitrogen in the culture varieties was 1% lower, but those of P, K, Ca, Mg were higher than wild varieties, The content of Tannin at Naju-Shi was the highest as 15.05%, and that of Hampyong-gun was the lowest as 11.25%. The average content was 14%. The content of caffeine in the wild varieties was a few higher and that of the average was 2.4%. The content of Vitamin C at Kangjin-gun was the highest as 245.8mg% and that of Yangsan-gun was the lowest as 152.9mg%.
