This study aimed to investigate the impact of consumers'
information processing on nutritional evaluation, brand preference,
and purchase intention in the context of Home Meal Replacement
(HMR) consumption, and to empirically verify the moderating
effect of visual nudge labeling. Applying the Heuristic-Systematic
Model (HSM), the cognitive processing of HMR nutritional labeling
was analyzed. To achieve the research objectives, a survey was
conducted with 330 consumers aged 20 to 40 who had experience
purchasing and consuming HMR. The participants were divided
into a control group exposed to a general text-type label and an
experimental group exposed to a traffic-light nudge-type label. The
collected data were analyzed using frequency analysis, reliability
and exploratory factor analysis, t-test, correlation analysis, and
multiple, mediating, and moderated regression analyses. The results
of the study are as follows. First, heuristic and systematic
processing had a significant positive (+) effect on nutritional
evaluation, brand preference, and purchase intention. Second,
nutritional evaluation fully mediated the relationship between
heuristic processing and both brand preference and purchase
intention. Nutritional evaluation also fully mediated the relationship
between systematic processing and purchase intention. Nutritional
evaluation partially mediated the relationship between systematic
processing and brand preference. Third, the nudge strategy showed
a significant moderating effect that strengthened the positive
impact of heuristic processing on nutritional evaluation and brand
preference. However, no significant moderating effect of the nudge
was found on the systematic processing paths and the paths
directly leading to purchase intention. This study provides useful
academic and practical implications for establishing packaging
design strategies that emphasize nutritional and health attributes in
the HMR market, and for improving food nutrition labeling policies
by demonstrating that positive consumer attitudes are maximized
when intuitive information processing is combined with visual
nudges.
