The purpose of this study is to empirically examine the effect of healthy menu quality perceived by institutional foodservice customers on their willingness to pay more, and to verify whether healthy eating habits have a moderating effect on this relationship. As social interest in health has increased and the demand for improved dietary quality has grown, the importance of operating health-oriented menus has also expanded in institutional foodservice. However, healthy menus may involve additional costs and operational burdens due to the need for quality control of ingredients, improvement of cooking processes, and application of nutritional standards. Therefore, for healthy menus to be operated sustainably, it is necessary to examine how customers perceive healthy menu quality and whether such quality perception leads to willingness to pay more. This study conducted a survey targeting customers who had used, selected, or consumed healthy menus in institutional foodservice within the past six months. A total of 381 questionnaires were distributed, and 339 valid responses were used for empirical analysis after excluding 42 unreliable responses. The collected data were analyzed using the SPSS statistical package. Frequency analysis was conducted to identify the general characteristics of the respondents, and descriptive statistical analysis was performed to examine the characteristics of the major variables. In addition, exploratory factor analysis and reliability analysis using Cronbach’s α were conducted to verify the validity and reliability of the measurement tools. Regression analysis and hierarchical regression analysis were conducted to test the hypotheses. The results of the analysis are as follows. First, healthy menu quality, healthy eating habits, and willingness to pay more were each extracted as a single factor, and the factor loadings of all measurement items met the required criteria. The Cronbach’s α values were .890 for healthy menu quality, .914 for healthy eating habits, and .795 for willingness to pay more, confirming that the reliability of the measurement tools was secured. Second, the analysis of the effect of healthy menu quality on willingness to pay more showed that healthy menu quality had a significant positive effect on willingness to pay more. This means that the higher institutional foodservice customers perceive the quality of healthy menus, the stronger their intention to pay additional costs for such menus. Therefore, Hypothesis 1 was supported. Third, the moderating effect of healthy eating habits in the relationship between healthy menu quality and willingness to pay more was examined. The results showed that the interaction term between healthy menu quality and healthy eating habits had a significant positive effect on willingness to pay more. This indicates that customers with higher levels of healthy eating habits are more likely to translate positive perceptions of healthy menu quality into willingness to pay more. Therefore, Hypothesis 2 was also supported. These findings suggest that, when operating healthy menus in institutional foodservice, simply emphasizing healthfulness is not sufficient. It is important to improve the menu quality that customers actually perceive and experience. In addition, by confirming that the effect of healthy menu quality on willingness to pay more may vary depending on the level of healthy eating habits, this study suggests the need for menu development, information provision, and price communication strategies that consider customers’ dietary characteristics. This study has theoretical and practical significance in that it empirically verified the relationship between healthy menu quality and willingness to pay more in the field of institutional foodservice and confirmed the moderating effect of healthy eating habits.
