최근 외식산업은 비대면 소비문화의 정착과 정보통신기술의 발달로 인해 기술기반 셀프서비스(TBSS)의 도입이 급격히 확대되고 있으며, 그중에서도 테이블 오더 시스템은 연간 1,000억 원 규모의 시장을 형성하며 빠르게 성장하고 있다. 그러나 이러한 시장의 급성장에도 불구하고 기존 연구들은 매장 입구의 키오스크나 개인 기기 기반의 스마트 오더에만 집중해 왔을 뿐, 테이블 오더에 관한 학술적 논의는 충분히 이루어지지 않았다.
테이블 오더는 다른 주문 관련 TBSS와는 다르게 고객 좌석 내에서 주문의 공간적·시간적 연속성을 보장하고 동반자와 화면을 공유하는 차별적 특성을 지니는데, 이러한 고유한 주문 환경은 이용자에게 높은 편의성을 제공하는 것과 동시에 역설적으로 매장의 서비스 노동을 부담한다는 심리적 저항감을 유도하게 된다. 이처럼 혜택과 부담이 충돌하는 모순적 상황 속에서 기술의 긍정적 수용만을 가정하는 기존의 기술준비수용모델(TRAM)은 이론적 한계를 드러낸다. 전통적 TRAM은 기술이 유용하고 편리하면 저항 없이 수용할 것이라는 공급자 중심의 낙관적 편향에 치우쳐 있어, 소비자가 이용 과정에서 체감하는 심리적 비용을 제대로 포착하지 못하기 때문이다.
이에 본 연구에서는 기존 수용 이론이 간과해 온 심리적 저항 메커니즘을 규명하고자 디지털 그림자 노동 지각을 조절변수로 통합한 확장된 TRAM 모델을 제안하였다. 구체적으로는 소비자의 내재적 특성인 기술준비도가 지각된 용이성과 지각된 유용성을 거쳐 지속이용의도에 이르는 구조적 인과관계를 설정하고, 지각된 기술수용신념과 지속이용의도 간의 관계에서 디지털 그림자 노동 지각의 부(-)의 조절효과를 검증하였다.
이를 위해 최근 3개월 이내에 국내 외식업체에서 테이블 오더를 이용한 경험이 있는 소비자를 대상으로 설문 조사를 실시하였으며, 수집된 표본은 SPSS 23.0과 SmartPLS 4.0 프로그램을 활용하여 분석을 진행하였다.
분석 결과는 다음과 같다. 첫째, 기술준비도의 긍정적 요인인 낙관성은 지각된 유용성과 지각된 용이성에 모두 유의한 정(+)의 영향을 미치는 것으로 나타났으며, 혁신성은 지각된 용이성과 지속이용의도에 유의한 정(+)의 영향을 미치는 것으로 확인되었다. 반면 부정적 요인인 불편함은 지각된 용이성과 지속이용의도에 유의한 부(-)의 영향을 미치는 것으로 나타났다. 그러나 불안감은 지각된 용이성, 지각된 유용성, 지속이용의도 모두에 유의한 영향을 미치지 않는 것으로 확인되었다. 둘째, 지각된 용이성은 지각된 유용성과 지속이용의도에 유의한 정(+)의 영향을 미쳤으며, 지각된 유용성 역시 지속이용의도에 유의한 정(+)의 영향을 미치는 것으로 나타나 기존 기술수용모델(TAM)에서 제시된 핵심적 인과관계가 본 연구에서도 일관되게 적용될 수 있음을 확인하였다. 셋째, 조절효과 분석 결과 디지털 그림자 노동 지각은 지각된 유용성이 지속이용의도에 미치는 긍정적인 영향을 약화시키는 유의미한 부(-)의 조절 작용을 수행하는 것으로 나타났으나, 지각된 용이성과의 조절효과는 유의하지 않았다.
본 연구는 외식업 테이블 오더 환경에서 기술준비수용모델의 적용 가능성을 확인하였을 뿐만 아니라, 기존 연구에서 충분히 다루어지지 않았던 디지털 그림자 노동 개념을 도입하여 비대면 서비스 환경에서 소비자가 투입해야 하는 디지털 노동 비용의 상호작용을 규명함으로써 새로운 이론적 프레임워크를 제시했다는 점에서 학문적 의의를 가진다.

The foodservice industry has recently experienced rapid adoption of technology-based self-service (TBSS) systems, driven by the normalization of non-face-to-face consumption culture and advancements in information and communication technologies. Among them, the table ordering systemㅡreferred to in this study as a table-side self-ordering systemㅡhas emerged as a rapidly growing market, reaching an estimated annual scale of approximately KRW 100 billion. Despite this rapid market expansion, prior research has primarily focused on kiosk systems at store entrances or mobile app-based smart ordering systems, while academic discussions on the table ordering system remain relatively limited.
The table ordering system differs from other ordering-related TBSS in that it ensures spatial and temporal continuity of the ordering process at the customer’s table and allows order sharing among companions via a shared screen. While these distinctive features enhance customer convenience, they may simultaneously induce psychological resistance by shifting perceived service labor responsibilities onto customers. In this context, existing Technology Readiness and Acceptance Model (TRAM), which predominantly assume positive technology acceptance, exhibit theoretical limitations. TRAM tends to reflect a supplier-centered optimistic bias, assuming that technologies perceived as useful and easy to use will be readily accepted, thereby failing to adequately capture the psychological costs experienced by users during the service process.
Accordingly, this study proposes an extended Technology Readiness and Acceptance Model (TRAM) by incorporating digital shadow work perception as a moderating variable to identify the psychological resistance mechanism overlooked by existing technology acceptance theories. Specifically, the proposed model establishes a structural causal relationship in which consumers' technology readiness, as an inherent individual characteristic, influences continuous usage intention through perceived ease of use and perceived usefulness. Furthermore, this study examines the negative moderating effect of digital shadow work perception on the relationship between technology acceptance beliefs and continuous use intention.
For empirical analysis, a survey was conducted among consumers who had used a table ordering system in domestic foodservice establishments within the past three months. The collected data were analyzed using SPSS 23.0 and SmartPLS 4.0.
The results are as follows. First, among the components of technology readiness, optimism had significant positive effects on both perceived ease of use and perceived usefulness, while innovativeness significantly influenced perceived ease of use and continuous use intention. In contrast, discomfort had significant negative effects on both perceived ease of use and continuous use intention. However, insecurity did not have significant effects on perceived ease of use, perceived usefulness, or continuous use intention. Second, perceived ease of use had significant positive effects on perceived usefulness and continuous use intention, and perceived usefulness also significantly influenced continuous use intention, confirming the robustness of the core causal relationships proposed in the Technology Acceptance Model (TAM). Third, the moderating effect analysis revealed that digital shadow work perception significantly weakened the positive effect of perceived usefulness on continuous use intention. However, its moderating effect on the relationship between perceived ease of use and continuous use intention was not statistically significant.
This study not only confirms the applicability of the TRAM framework in the context of foodservice table ordering systems but also extends existing literature by introducing the concept of digital shadow work. By identifying the interaction between consumer-perceived digital labor costs and technology acceptance in non-face-to-face service environments, this study contributes a novel theoretical framework to the field.
