Online food delivery (OFD) has become an increasingly important channel of restaurant consumption, yet consumers often encounter a higher OFD price than the comparable dine-in price for the same restaurant meal. This dissertation examines how consumers evaluate the OFD–dine-in price difference and argues that consumer response to a higher OFD price depends not only on the price difference itself, but also on whether the basis for that difference is communicated in a way that is perceived as transparent and fair. To examine this issue, the dissertation develops a three-study research program linking price format, price explanation, perceived transparency, perceived fairness, and purchase intention. Study 1 establishes the baseline evaluative structure of the OFD–dine-in price difference. Study 2 tests whether a partitioned price format, compared with a combined price format, improves consumer evaluation while holding the total OFD price constant. Study 3 examines whether price explanation can activate a similar transparency-based pathway through a distinct communicative route when the combined price format remains unchanged. Study 1 shows that consumers noticed the OFD–dine-in price difference and evaluated it through fairness judgments, with perceived fairness showing the strongest positive association with purchase intention. Study 2 demonstrates that a partitioned price format increases perceived transparency relative to a combined price format. Greater perceived transparency, in turn, strengthens perceived fairness, and the indirect effect of price format on purchase intention through perceived transparency and perceived fairness is supported. Study 3 extends this evidence by showing that a price explanation supports the same transparency–fairness pathway under a constant-price format and may also directly support purchase intention by making the rationale for the higher OFD price easier to understand. The findings show that consumer response to a higher OFD price is shaped not simply by price level, but by the interpretive process through which consumers understand and evaluate the basis for the price difference. The dissertation contributes to hospitality and behavioral pricing research by identifying perceived transparency as an interpretive mechanism that strengthens fairness judgments in an OFD dual-pricing context. It shows that perceived transparency can be activated through two distinct communication routes: structural decomposition through price format and explanatory justification through price explanation. From a managerial perspective, the findings suggest that restaurants and OFD platforms should manage higher OFD-channel prices not only as pricing decisions, but also as price communication decisions.
