본 연구는 디지털 환경과 피지컬 환경이 중첩되는 멀티스페이스 환경에서 감각과 인식이 어떻게 설계의 대상이 될 수 있는지를 푸드디자인을 매개로 탐구한다. 디지털 기술의 확장으로 물리적 환경 위에 디지털 요소가 중첩되는 환경이 보편화되고 있음에도 음식과 식사 행위는 여전히 물리적 섭취를 전제로 한다는 점에서 푸드디자인은 피지털 환경에서의 변화를 명확히 드러낼 수 있는 중요한 연구 영역이다.
본 연구는 맛의 지각에 있어서 미각이 독립적인 감각이 아니라 시각, 촉각, 후각, 청각과 긴밀히 연결되어 있으며 오감 이외에도 중력과 균형감각과 같은 비가시적 감각 요소들이 감각과 인식의 확장의 대상이 될 수 있다는 전제로부터 출발한다. 이를 위해 감각 간 크로스모달 대응 이론과 디지털 기반 푸드디자인 사례 분석을 통해 음식 경험이 섭취 이전 단계, 음식의 형태와 구조, 식사 행위와 환경에 이르기까지 단계적으로 조직될 수 있음을 고찰하였다. 이러한 분석은 감각이 단순한 자극의 결과가 아니라 시간적 흐름과 공간적 조건, 그리고 행위의 구조 속에서 형성된다는 관점을 제시한다.
작품 연구에서는 이러한 이론적 논의를 바탕으로 세 단계의 피지털 푸드 오브젝트를 전개하였다. 첫 번째 작품 Phygital Tactile Candy는 디지털 조형을 사탕에 증강하여 시각적 단서가 미각 예측에 미치는 영향을 실험하였다. 두 번째 작품 Fungi’s Formative는 자연 조형에서 유도된 테이블웨어를 통해 물리적 조형이 감각 유도 장치이자 디지털 증강의 트리거로 작동할 수 있음을 탐구하였다. 마지막으로 Axis Shift: Phygital Cup과 Axis Control Table은 중력축과 가상축의 전환을 핵심 개념으로 하여, 테이블과 링을 회전시키는 사용자의 물리적 행위가 실시간으로 디지털 조형 생성으로 이어지는 피지털 환경을 구현하였다.
마지막 2개의 작품에서는 축의 방향과 이동이 조형 생성의 직접적인 조건이 되는 인터페이스 환경을 직접 설계함으로써 완성된 형태가 아닌 생성 과정 자체를 경험의 대상으로 전환하였다. 이를 통해 피지컬과 디지털은 병렬적으로 존재하는 요소가 아니라, 감각과 인식이 조직되는 과정에서 상호 의존적으로 작동하는 시스템으로 제시된다.
본 연구는 푸드디자인이라는 구체적 맥락을 출발점으로 삼아, 멀티스페이스 환경에서 감각과 인식이 조형 생성의 매개가 될 수 있음을 작품 전개를 통해 제시한다는 점에서 의의를 갖는다. 이는 향후 푸드디자인을 넘어, 공간 디자인, 인터랙션 디자인, 피지털 오브젝트 디자인 전반에서 감각과 행위를 설계 대상으로 확장하는 하나의 디자인 방법론으로 활용될 수 있을 것이다.

This study explores how sensation and perception can become subjects of design within a multispace environment where digital and physical realms overlap, using food design as a mediating field. Despite the growing ubiquity of environments in which digital elements are layered onto physical space through the expansion of digital technologies, food and the act of eating continue to rely on physical ingestion. For this reason, food design provides a particularly effective domain for articulating shifts in sensation and perception within phygital environments.
This research is grounded in the understanding that taste is not an isolated sense, but one that is closely interconnected with vision, touch, smell, and hearing, as well as with non-visible sensory factors such as gravity and balance. Based on theories of crossmodal correspondence and an analysis of digital-based food design cases, the study examines how food experiences can be systematically organized across multiple stages from pre-ingestive anticipation, through the form and structure of food, to the act of eating and the surrounding environment. These analyses suggest that sensory experience is not merely the result of isolated stimuli, but is constructed through temporal processes, spatial conditions, and the structure of bodily actions.
Building on this theoretical framework, the practice-based component of the research develops three stages of phygital food objects. The first work, Phygital Tactile Candy, investigates how visual cues influence taste expectation by augmenting digital forms onto candy. The second work, Fungi’s Formative, explores how tableware derived from natural forms can function simultaneously as a sensory induction device and as a trigger for digital augmentation. The final works, Axis Shift: Phygital Cup and Axis Control Table, focus on the transformation between gravity-based axes and virtual axes, implementing a phygital environment in which the user’s physical actions-rotating a table and ring-directly and continuously generate digital forms in real time.
In the final two works, an interface environment is designed in which the direction and movement of axes become direct conditions for form generation, shifting the focus from a finished object to the generative process itself as the core of the experience. Through this approach, the physical and the digital are presented not as parallel layers, but as interdependent systems that jointly organize sensation and perception.
By taking food design as a concrete point of departure, this study demonstrates how sensation and perception can operate as mediating agents of form generation within multispace environments. The research contributes a design methodology that may be extended beyond food design to fields such as spatial design, interaction design, and phygital object design, offering a framework for treating sensation and bodily action as primary elements of design.
