Water is one of the most abundant natural resources and an effective trigger for structural change in soft materials. Many water-responsive materials undergo deformation through hydration and dehydration without motors or external power, yet limited controllability restricts their direct use in engineered systems. This thesis investigates how deswelling and swelling drive mechanical motion and liquid transport, specifically through studies of Viola seed pods and poly(vinyl alcohol) (PVA) sponges. Viola seed pods, dehydration induces hygroscopic contraction that drives zippering of sailboat-like valves, enabling sequential seed release rather than a single explosive event. Two-dimensional analysis shows that the semicircular bilayer geometry operates near optimal stiffness ratios, allowing large contraction-driven closing motion. In three dimensions, numerical modeling reveals that the sailboat-like geometry near the distal tip, characterized by a convex basal arc, promotes sequential pinching that reliably transmits force to the outermost seeds during drying. Inspired by this mechanism, bioinspired actuators were fabricated to reproduce strong, time-programmed pinching motions. Demonstrations in wound closure and autonomous tissue resection illustrate the potential of moisture-triggered, circuit-free soft actuation. In contrast, hydration-driven behavior is examined through liquid imbibition in PVA sponges. Narrow pore throats initially impede liquid entry through a capillary-valve effect, pinning the advancing meniscus. While the meniscus remains pinned, liquid diffusion induces local swelling that enlarges the throats and enables further advance. Repetition of this pinning-and-release process produces anomalous transitions from initially linear rise to slower, diffusive imbibition, deviating from classical Darcy-type behavior. Experiments and modeling demonstrate how swelling-induced changes in pore geometry govern liquid transport. Together, these results show that dehydration and hydration provide distinct routes for controlling mechanical motion and fluid transport in water-responsive materials. Drying enables force generation through controlled contraction, while swelling regulates liquid advance through structural reconfiguration. These insights offer design principles for water-responsive soft actuators and porous materials in applications such as biomedical devices, absorbent systems, and fluid-handling technologies.
