(Sequential Mediation)

The growing societal interest in wellness, emotional recovery, and
holistic health has brought increasing attention to healing foods, a
category that extends beyond simple nutritional supplementation. Unlike
conventional functional or health foods that primarily emphasize
biochemical efficacy or nutrient composition, healing foods incorporate
psychological comfort, emotional stability, and restorative well-being
derived from consumption experiences. Recognizing this conceptual
distinction, the present study aims to empirically investigate the
behavioral mechanisms underlying consumers’ intentions to purchase
healing foods and to identify how perceived quality and perceived
benefits influence consumer attitudes, trust, and ultimately purchase
intention.
Grounded in the Theory of Planned Behavior (TPB; Ajzen, 1991), this
study establishes an integrated framework that incorporates cognitive
factors (perceived quality and perceived benefit), affective factors
(attitude), and relational factors (trust). While prior studies have
examined attitude or trust as isolated mediators, limited attention has
been given to their sequential and interdependent roles. To address this
gap, this research introduces and validates a sequential mediation model—where attitude influences trust, which subsequently shapes purchase
intention—offering a more comprehensive understanding of consumer
decision-making in the context of healing foods.
To empirically test the research framework, data were collected from
680 consumers residing across 17 metropolitan regions in South Korea.
A structured questionnaire was administered to measure six major
constructs: perceived quality, perceived benefit, attitude, trust, purchase
intention, and demographic control variables. Statistical analyses were
conducted using jamovi (version 2.4.14), employing exploratory factor
analysis (EFA), reliability testing, correlation analysis, and multiple
regression analysis. Additionally, structural equation modeling (SEM) was
used to evaluate the causal relationships between variables, and the
MedMod module with 5,000 bootstrap samples was applied to test
mediation, moderation, and sequential mediation effects.
The main findings of the study are as follows. First, both perceived
quality and perceived benefits demonstrated significant positive effects on
purchase intention. This finding underscores that consumers prioritize
trustworthy ingredients, scientific validation, and functional value when
selecting healing foods. Second, attitude and trust each exhibited partial
mediation in the relationship between perceived usefulness and purchase
intention. Moreover, the sequential mediation pathway—perceived
quality/benefit → attitude → trust → purchase intention—was statistically
significant, confirming that consumers’ cognitive evaluations trigger
favorable attitudes, which then foster stronger trust and lead to higher
purchase intention. This nuanced layered structure provides empirical
evidence for a refined psychological mechanism governing healing food
consumption.
Third, the moderation analysis revealed a diminishing moderation effect in
the perceived benefit model. Specifically, when consumer trust is already
high, additional benefit-related information exerts weaker influence on
purchase intention. Conversely, among consumers with low trust or
neutral attitudes, functional or benefit-driven information substantially
enhances their intention to purchase healing foods. These findings
highlight the necessity of segmenting consumers based on psychological
readiness and trust levels when designing marketing strategies.
The academic contributions of this study are threefold. First, it
conceptualizes and operationalizes healing foods within an empirical
framework, addressing the lack of systematic academic research on this
emerging product category. Second, by validating the sequential mediation
role of attitude and trust, the study advances TPB-based consumer
behavior research and deepens theoretical understanding of how
cognitive, emotional, and relational factors interact. Third, this research
develops an integrated consumption model for healing foods, broadening
the theoretical foundation for future studies in wellness consumption,
emotional food experiences, and holistic nutrition.
Managerial implications are also significant. Healing food companies must
reinforce product quality, ingredient transparency, and scientific
validation, as these factors directly strengthen consumers’ purchase
intention. Additionally, enhancing consumer attitudes through emotional
branding, storytelling, and positive consumption experiences is essential
for fostering loyalty and long-term customer relationships. To build
trust, firms should focus on transparent communication, credible
certifications, responsible sourcing, and ethical management practices.
Marketing messages should be tailored according to consumers’
psychological profiles—emotional, experiential messages for high-trust
consumers; functional, benefit-oriented messages for low-trust
consumers.
The study also presents several policy implications. Given the strong
effect of trust on purchase intention, the introduction of a public
certification system for healing foods, strengthened quality and safety
standards, and improved labeling regulations are recommended. Public
institutions could incorporate healing foods into wellness programs for
elderly and vulnerable populations or develop community-based nutrition
and recovery initiatives. Furthermore, the findings contribute to the
foundation for establishing a regulatory framework that differentiates
healing foods from conventional health foods, reflecting their broader
psychological and emotional value.
Despite its contributions, the study has limitations. The cross-sectional
research design restricts causal interpretation, suggesting the need for
longitudinal follow-up studies. The sample focused on consumers with
prior purchase experience, which may limit generalizability. Future
research should include non-consumers and potential consumer groups.
Additionally, although attitude and trust were central variables, other
psychosocial constructs—such as subjective norms, perceived risk,
anticipated emotions, and social influence—may further enrich the
theoretical model. Comparative studies across healing food categories,
such as microalgae-based products, fermented foods, or traditional herbal
foods, would also provide deeper insights into category-specific
consumption mechanisms.
In sum, this study offers an empirical foundation for understanding the
cognitive, emotional, and relational determinants of healing food
consumption, proposes a validated sequential mediation model, and
provides meaningful academic, managerial, and policy implications for the
development of the healing food industry.
