본 연구는 중국 백차(白茶)를 가공 공정의 단순한 차로 인식해 온 기존의 기술 중심에서 벗어나, 백차를 음다(飮茶) 미학, 산지의 생태환경, 성분 변화, 가공 방식, 그리고 산업 구조가 상호 연동하며 형성된 종합적 차 문화 체계로 재해석하고자 하였다. 이를 위해 백차의 성립과 전개를 제다 기술의 발전 순서가 아니라, 차를 마시는 방식과 그에 따라 형성된 감각 인식의 변화라는 관점에서 고찰하였다.
연구 결과, 백차는 특정 시점의 기술 혁신으로 갑자기 등장한 차가 아니라, 차 음용 문화의 변화 속에서 점진적으로 정립된 차류임이 확인되었다. 특히 명대 이후 포다(泡茶) 방식이 성행면서, 맑은 탕색과 향, 오래 남는 단맛처럼 시간이 지나며 느껴지는 섬세한 감각이 차를 평가하는 중요한 기준을 형성하였으며, 이는 백차의 최소 가공 방식과 구조적으로 부합하였다.
또한 산지 및 성분 분석을 통해 백차의 담백한 맛과 느낌은 자연환경과 완만한 산화 과정 속에서 형성된 의도된 절제의 산물임을 밝혔다. 나아가 본 연구는 현대 중국 백차 산업의 발전 양상을 분석하고, 이를 녹차 중심 구조에 머물러 있는 한국 차 산업 구조가 직면한 구조적 한계를 녹차 중심 산업 체계에서 찾고, 그에 대한 현실적이고 실행 가능한 대안으로서 백차 산업의 가능성을 검토하고자 한다. 또한 본 연구는 백차를 기술이나 산업의 결과로만 보지 않고, 감각과 시간, 문화가 함께 어우러진 차 문화의 실천으로 새롭게 이해하고자 하였다. 이를 통해 앞으로의 여러 분야가 함께하는 차 연구와 한국 차 문화, 차 산업 연구에 새로운 논의의 출발점을 제시하고자 한다.

This study seeks to move beyond the conventional technology-centered perspective that has regarded Chinese white tea (Baicha) merely as a tea characterized by a simple processing method. Instead, it reinterprets white tea as a comprehensive tea culture system formed through the interrelated dynamics of tea-drinking aesthetics, the ecological environments of production areas, changes in chemical components, processing practices, and industrial structures. To achieve this, the formation and development of white tea are examined not through a linear progression of processing techniques, but from the perspective of tea-drinking practices and the transformations in sensory perception that accompanied them.
The findings demonstrate that white tea did not emerge abruptly as the result of a specific technological innovation, but was gradually established within the evolving context of tea-drinking culture. In particular, as the infusion-based brewing method (paofa) became widespread after the Ming dynasty, subtle and time-dependent sensory qualities—such as clear liquor color, refined aroma, and a lingering sweetness—came to constitute important criteria for tea evaluation. These aesthetic standards were structurally consistent with the minimal-processing approach characteristic of white tea.
Furthermore, analyses of production areas and chemical components reveal that the light and restrained taste and mouthfeel of white tea are not the result of deficiency or underdevelopment, but rather the outcome of intentional restraint formed through natural environmental conditions and gradual oxidative processes. Beyond this, the study examines the development of the contemporary white tea industry in China and, through comparison with the green tea–centered structure of the Korean tea industry, proposes the white tea industry as a realistic alternative.
By redefining white tea not merely as a product of technology or industry, but as a cultural practice in which sensory experience, temporality, and culture are deeply intertwined, this study aims to provide a new point of departure for future interdisciplinary tea research, as well as for studies on Korean tea culture and the modern tea industry.
