본 연구에서는 식품 원산지 판별을 위한 원소분석 데이터 기반 기계학습 모델링 연구를 수행하였다. 첫 번째 연구에서는 한국산과 중국산 김치를 효과적으로 판별하기 위해 k 최근접 이웃(k-nearest neighbors, k-NN) 알고리즘 기반의 분류 모델을 적용하였다. 이를 위해 한국 시장에서 국내산 53개, 중국산 72개 총 125개의 김치 시료를 수집하였다. 유도결합 플라즈마 광방출 분광법(InductiveIy Coupled Plasma-Optical Emission Spectroscopy, ICP-OES)을 활용하여 15종의 원소(Ca, K, Mg, Na, P, Al, Ba, Cu, Fe, Mn, Sr, Zn, B, Si)의 농도를 분석하였으며 그 결과 Ca, K, Mg, Na, P, S는 1,000 – 50,000 mg/kg, 나머지 원소들은 1 – 50 mg/kg 범위의 농도에서 검출되었다. 1차원 k-NN 모델의 분류 정확도를 기준으로 분석한 결과, K, Mg, Zn의 농도 차이가 커서 이를 직접 결합하여 변수로 적용할 경우 높은 분류 정확도를 얻을 수 없었다. 이에 z-점수 표준화를 적용하여 각 원소의 농도 범위를 균형 있게 조정하였고, 그 결과 K과 Zn을 이용한 2차원 모델이 k = 1에서 98%의 최고 분류 정확도를 달성하였다. 이 연구를 통해, 간편하고 빠르게 미량 원소를 분석할 수 있어 다양한 분야에서 활용되는 정밀한 분석 기법인 ICP-OES와 k-NN과 같은 단순한 머신러닝 알고리즘을 결합하여 한국산과 중국산 김치 시료를 효과적으로 분류할 수 있음을 확인하였다. 또한, 이러한 접근 방식은 향후 다양한 식품의 원산지 판별 및 품질 관리에도 폭넓게 활용될 가능성을 보여준다. 두 번째 연구에서는 레이저 유도 플라즈마 분광법(Laser-Induced Breakdown Spectroscopy, LIBS)과 k-NN 모델링을 결합하여, 한국 시장에서 판매되는 12종의 볶은 커피 제품에 대한 분류 가능성을 평가하였다. 커피 산업에서 원두의 품종, 원산지, 품질 등을 분류하는 것은 정품 인증과 일관성 유지를 위해 필수적이다. 기존의 분광학적, 크로마토그래피 기반 분석법은 유용한 정보를 제공하지만, 복잡한 전처리 과정이 필요하거나 가열 과정에서 변하기 쉬운 분자 정보를 기반으로 한다는 한계가 있다. 반면, LIBS는 빠르고 시료를 거의 파괴하지 않는 원소분석 기술로, 식품 인증 분야에서 유망한 방법으로 주목받고 있다. 실험을 위해 시중에서 판매되는 다양한 커피 제품 12개를 수집하여 분말 형태로 가공한 후, 0.3 g씩 측정하여 펠렛 형태로 제작하였다. 이후, 상용 LIBS 장비를 이용하여 스펙트럼을 측정하였다. LIBS 스펙트럼에는 Li, Na, K, Rb, Mg, Ca, C, H, O 등의 원소 방출선과 CN, C2 분자의 방출선도 관찰되었다. 특히 클래스 내 변동에 대한 클래스 간 변동의 비율(Inter-to-Intraclass Variation Ratio, IIVR)이라는 새로운 통계 개념을 적용하여 분석한 결과, Li, Na, Rb의 방출 강도가 커피 제품을 분류하는데 중요한 변수임을 확인하였다. k-NN 알고리즘을 활용한 모델링에서는 k = 1일 때 분류 정확도가 96.0%, z-점수 표준화를 적용시킨 모델은 k = 3일 때, 98.5%로 분류 정확도가 향상되었다. 특히 Li, Na, Rb가 원두의 로스팅 과정에서도 안정적으로 유지되었다는 것을 통해 제품의 진위성 분류에도 유효한 지표임을 확인할 수 있었다. 결론적으로, LIBS와 k-NN과 같은 간단한 머신러닝 알고리즘의 결합은 알칼리 금속 원소에 대한 높은 민감도를 바탕으로 커피 제품의 빠르고 정확한 분류 및 진위성 검증에 매우 실용적이고 효율적인 도구로 활용될 수 있음을 보여준다.

In this study, machine learning modeling based on elemental analysis data was performed for food origin discrimination. The first part of the study applies k-nearest neighbors (k-NN) modeling to classify kimchi produced in South Korea and China. A total of 125 cabbage kimchi samples were collected from South Korean markets, including 53 domestically produced and 72 imported from China. The concentrations of 15 elements (Ca, K, Mg, Na, P, S, Al, Ba, Cu, Fe, Mn, Sr, Zn, B, and Si) were determined using inductively coupled plasma optical emission spectroscopy( ICP-OES). Among them. Ca, K, Mg, Na, P, and S were present at concentrations of 1,000 – 50,000 mg/kg, while the others ranged from 1 to 50 mg/kg. Based on the classification accuracy of one-dimensional k-NN models, K, Mg, and Zn were selected as optimal elements for multi-dimensional modeling. However, due to large differences in their concentration scales. directly combining these elements did not yield a synergistic improvement in classification performance. Converting the raw concentrations to z-scores balanced the discriminatory power of the variables. Among the multi-dimensional z-score-based k-NN models, the two-dimensional model using the z-scores of K and Zn achieved the highest classification accuracy of 98% at k = 1. These results suggest that accurate classification of kimchi origin depends not only on careful variable selection and combination but also on appropriate data preprocessing. Verifying food origin is essential for protecting public health, maintaining consumer trust, and preventing food fraud. Integrating sensitive analytical techniques such as ICP-OES with robust normalization methods like z-score transformation, in conjunction with k-NN modeling, offers a practical and effective approach for high-accuracy food origin authentication. The second study evaluated the feasibility of combining LIBS with the k-nearest neighbors (k-NN) algorithm to classify 12 roasted coffee bean products available in South Korean markets. The classification of coffee beans by species, origin and quality is essential in the coffee industry to ensure authenticity and consistency. While existing methods like spectroscopic and chromatographic techniques offer valuable insights, some require complex sample preparation. while other, such as near-infrared(NIR) and visible/near-infrared(VIS/NIR), rely on molecular information that is labile during coffee roasting. Laser-induced breakdown spectroscopy(LIBS), a fast and minimally invasive elemental analysis technique, shows promise for food authentication. LIBS spectra revealed emission peaks for elements such as Li, Na, K, Rb, Mg, Ca, C, H, and O, along with molecular emission bands of CN and C2. Using the newly developed statistical concept of the ‘inter-to-intraclass variation ratio’ the emission intensities of Li, Na, and Rb were identified as key discriminatory variables for the classification model. The k-NN model achieved a classification accuracy of 96.0% with k = 1, which improved to 98.5% with standard deviation-based scaling and k = 3. It should be emphasized that the model based on the Li, Na, and Rb composition is not expected to be labile during the coffee bean roasting process. These findings underscore the potential of LIBS, combined with a simple machine-learning algorithm, as a practical and efficient tool for authenticating coffee products, leveraging its high sensitivity to alkali metal elements for rapid and accurate classification.
