본 연구는 보이차의 역사적 형성 과정과 차마고도와의 연계성, 고육대(古六大)차산의 생태, 지리, 문화적 특성을 통합적으로 분석함으로써, 보이차가 차 문화 속에서 지니는 위상과 상징성을 재해석하는 데 목적을 둔다. 연구는 문헌 고증, 현지 조사, 관능 평가를 삼 축으로 구성하였으며, 보이차의 정의 및 가공 공예, 역사적 전개 과정, 차마고도와의 문화, 교역적 연계성, 고육대차산의 품질 특성과 지역 정체성을 종합적으로 고찰하였다. 특히 생태 환경 조사와 표준화된 감관 평가(ISO 3103, GB/T 23776)를 병행하여 각 산지의 향미 차이를 원료 적, 환경적 요인과 연결 지어 분석하였다. 그 결과, 고육대 차산은 고차수의 분포, 기후, 토양 조건, 전통적 제다와 생활 문화의 결합을 통해 서로 다른 향미 구조와 지역적 특성을 형성하는 것으로 나타났다. 본 연구는 보이차를 단순한 음용 차가 아니라 역사, 생태, 문화가 유기적으로 연결된 문화유산으로 규정하며, 한국 차 문화 연구에서 상대적으로 미비했던 보이차 및 고육대차산 연구의 학술적 공백을 보완하고, 향후 세계 차음용 시장의 변화, 그리고 차 문화적 관심과 한국 차 산업 발전 교류 전략에 기초 자료로 활용될 수 있는 의의를 제공한다

This study aims to reinterpret the status and symbolic significance of Pu’er tea within the broader history of tea culture by conducting an integrated analysis of its historical formation and the ecological, geographical, and cultural characteristics of the Ancient Six Tea Mountains. The research is structured around three methodological pillars—textual analysis, field investigation, and sensory evaluation—and examines the definition and processing system of Pu’er tea, its historical development, its cultural and commercial connections to the Tea–Horse Road, and the quality attributes and regional identities of the Ancient Six Mountains. In particular, ecological surveys combined with standardized sensory evaluations (ISO 3103, GB/T 23776) were employed to analyze how differences in raw materials and environmental factors contribute to the distinct flavor profiles of each mountain. The findings illustrate that variations in the distribution of old-growth tea trees, climatic and soil conditions, and traditional tea-making practices, as well as local lifeways, collectively shape unique flavor structures and regional narratives. This study argues that Pu’er tea is not merely a beverage but a complex cultural heritage shaped by history, ecology, and culture. It also fills a research gap in Korean scholarship and provides foundational insight for future strategies related to the Korean tea industry and tea-culture exchange.
