This study presents a strategic approach to addressing two pressing socio-industrial challenges in South Korea: the declining consumption of domestic rice and the disposal of fruit processing by-products. Specifically, it investigates the quality characteristics and antioxidant activities of rice-based morning bread enriched with peel powders derived from citrus (Citrus unshiu), apple (Malus domestica), and grape (Vitis vinifera). Under controlled experimental conditions, peel powders from citrus, apple, and grape were incorporated into high-protein rice flour bread formulations at incremental concentrations (citrus: 0, 3, 6, 9%; apple: 0, 4, 8, 12%; grape: 0, 3, 6, 9%). Comprehensive analyses were conducted to evaluate changes in nutritional composition, antioxidant capacity, and sensory attributes. Measured parameters included proximate composition (protein, lipid, ash, carbohydrate), amino acid and fatty acid profiles, free sugars, organic acids, minerals, total polyphenols, total flavonoids, total carotenoids, and vitamins C and E, as well as detailed phenolic and flavonol profiles. Antioxidant activity was assessed using three standard assays—DPPH, ABTS, and FRAP. Furthermore, multivariate statistical analyses, including Pearson correlation, principal component analysis (PCA), and hierarchical cluster analysis (HCA), were employed to elucidate the relationships between compositional variables and antioxidant functionality. Citrus peel was characterized by high levels of pectin, flavonoids, carotenoids, dietary fiber, and minerals. Apple peel exhibited a rich composition of flavonols and phenolic acids such as quercetin, rutin, and chlorogenic acid, in addition to organic acids and free sugars. Grape peel was abundant in anthocyanins, resveratrol, protocatechuic acid, and gallic acid, and notable for its polyphenolic pigments, amino acids, and mineral content. The incorporation of peel powders resulted in moderate reductions in protein and fat contents; however, these effects were offset by the use of high-protein rice flour, maintaining overall bread quality. Enriched samples demonstrated increases in dietary fiber, unsaturated fatty acids, and essential minerals, along with an improved Na/K ratio. Antioxidant compound levels and activities were significantly enhanced, particularly at higher inclusion levels (citrus: 6–9%; apple: 8–12%; grape: 6–9%).Distinct antioxidant mechanisms were observed depending on peel type: apple peel exhibited strong radical scavenging activity via hydrogen atom transfer (HAT) mechanisms; citrus peel demonstrated effective electron transfer (SET)-based reducing capacity; and grape peel contributed polyphenol- and pigment-driven antioxidant effects. Multivariate analyses confirmed that these functional traits were structurally linked to each peel’s unique composition. Additionally, blending strategies revealed synergistic effects, further enhancing antioxidant functionality. Overall, this study provides empirical evidence supporting the circular utilization of fruit peels as value-added ingredients in functional rice-based bakery products. It highlights the potential for peel-enriched rice morning bread to serve as a nutritionally enhanced, antioxidant-rich, and sustainable food innovation. These findings offer practical insights for expanding applications in processed foods such as cakes, cookies, pasta, and beverages, while addressing four key challenges in the Korean food industry: declining rice consumption, by-product valorization, health-oriented product development, and sustainability. This integrated approach lays a foundation for future academic research and industrial application in functional food development
