D-allulose is a low-calorie monosaccharide that can undergo non-enzymatic browning reactions analogous to sucrose caramelization, suggesting potential as a sugar alternative in heat-treated foods. This study assessed how heat treatment modifies the sensory profile of a 10% (v/v) aqueous allulose solution model and whether instrumental measurements (colorimetry, electronic nose, electronic tongue) capture these changes and align with trained- panel ratings. Ten solutions were prepared at 60, 80, or 100 °C for 24, 48, or 72 h. Ten trained panelists conducted descriptive analysis and established a thirteen-attribute consensus lexicon; all attributes differed significantly across the ten samples (p < 0.001). Principal component analysis (PCA) and correlation loadings plots indicated that, as heat treatment increased, ten of thirteen attributes intensified, whereas sweet taste, clean mouthfeel, and dalgona-like odor remained stable or declined. Colorimetry tracked appearance darkening; the electronic nose (e-nose) reflected changes in volatile compounds patterns with heat treatment; and the electronic tongue (e-tongue) differentiated samples primarily along basic taste axes. Together, these results provide a mechanism‑consistent baseline for managing heat treatment in aqueous allulose solution model and support the complementary use of colorimetry, an e-nose, and an e-tongue for rapid, multi‑instrument screening of sensory change with heat treatment. Broader predictive application will benefit from confirmatory analyses (e.g., GC–MS in representative food matrices) and external validation to document generalization.
