    본 연구는 식물성 오일의 조성이 나트륨 저감 에멀젼의 물리화학적 및 관능적 특성에 미치는 영향을 조사하였다. 들기름, 참기름, 카놀라유, 올리브유의 네 가지 오일을 사용하여 수중유형 에멀젼(O/W)과 고내상 이중 에멀젼(HIPDE)을 각각 제조하였다. 수중유형 에멀젼은 염화나트륨 또는 염화칼륨을 첨가하였으며, 이중 에멀젼은 염화칼륨을 내부 수상에, 염화나트륨을 외부 수상에 각각 포함시켰다. 수중유형 에멀젼의 경우, 다가불포화지방산이 풍부한 들기름과 참기름으로 제조된 시료는 단일불포화지방산이 풍부한 오일로 제조된 시료보다 작은 입자 크기, 낮은 점도, 그리고 큰 음의 제타 전위가 확인되었다. 고내상 이중 에멀젼에서도 유사한 경향이 확인되었으며, 오일의 종류에 따라 염화칼륨의 캡슐화 효율 및 방출 특성이 상이하게 나타났다. 카놀라유는 가장 높은 캡슐화 효율을 나타냈고, 참기름은 상대적으로 빠른 염화칼륨 방출을 보여 인지된 짠맛과 쓴맛 균형에 영향을 미쳤다. 헤드스페이스-고체상미세추출–기체크로마토그래피–질량분석법(HS-SPME–GC–MS) 분석에서는 피라진류(pyrazines)를 포함한 다양한 휘발성 화합물이 검출되었으며, 이는 짠맛 증진에 관여하는 향미 상호작용과 일치하였다. 모의 소화 실험 결과, 들기름과 같이 다가불포화지방산 함량이 높은 오일을 포함한 이중 에멀젼은 소화 모방 조건에서 구조적 안정성을 유지하였다. 이러한 결과는 다가불포화지방산이 풍부한 식물성 오일이 나트륨 저감 에멀젼의 기능적 및 관능적 품질을 향상시킬 수 있음을 시사하며, 저나트륨 식품 개발을 위한 기초 자료로 활용될 수 있을 것으로 판단된다.

    In this study, the effects of plant-based oil composition on the physicochemical properties, sensory perception, and digestive stability of sodium-reduced emulsions were investigated. Four edible oils (perilla, sesame, canola, and olive) were evaluated in both oil-in-water (O/W) and high internal phase double emulsion (HIPDE) systems. O/W emulsions contained either NaCl or KCl, whereas HIPDEs encapsulated KCl in the internal aqueous phase (W₁) and NaCl in the external phase (W₂). In O/W emulsions, oils rich in polyunsaturated fatty acids (PUFAs), such as perilla and sesame, produced smaller droplets, lower viscosity, and more negative ζ-potentials than those rich in monounsaturated fatty acids (MUFAs). The effects were more pronounced in HIPDEs, where the oil type influenced the KCl encapsulation efficiency (EE) and release behavior. Canola oil showed the highest EE, whereas sesame oil exhibited faster KCl release, which corresponded with changes in perceived saltiness and bitterness. Headspace solid-phase microextraction–gas chromatography–mass spectrometry (HS-SPME–GC–MS) identified volatile compounds, including pyrazines, consistent with cross-modal odor–taste interactions related to saltiness enhancement. In vitro digestion revealed that HIPDEs containing PUFA-rich oils, particularly perilla oil, showed improved structural stability and controlled droplet disintegration under simulated gastrointestinal conditions. These findings highlight the functional and sensory advantages of PUFA-rich plant oils in sodium-reduced emulsions and inform the development of low-sodium foods with improved palatability and structural stability.
